The neon sign, in my opinion, should have both “fuiyoh” and “haiya”, but only one of them can be turned on at a time. Maybe a three-step switch. Position 0 is off, position 1 is “fuiyoh,” and position 2 is “haiya.”

As a Thai person, cooking a paste first like Jamie and cooking a coconut milk first like what Uncle Roger said are both fine. Cooking a paste first gives a better smell for green curry. However, cooking coconut milk first will gives a better presentation of food. Green curry will looks nice and appetizing. (This way of cooking is often used by restaurants) So, I’d say cooking paste first is more home cook version where you want a better smell not the presentation and cooking coconut milk first is more restaurant version where you want a good presentation. I personally like to cook the paste first. 😁👍🏻
Aside from Red Thai curry the green is pretty good.In our family we do the red more.I love all the Thai recipes.My absolute favorite is the Palo (probably misspelled)pork and hundred year old eggs.What a treat.

Now I'm happy that I have been using fish sauce a lot after I "found" it about 15 years ago. It does not belong to the normal ingredients of my home country but I tested it once after I got interested in asian food. I also remembered that my mother who cooked just normal home meals as a single mom, always had soy sauce in her fridge and she used it a lot.

When Chef McDang taught me how to make Green Curry he did fry the curry paste briefly before adding the coconut milk. I am going to try adding the paste to the hot coconut milk next time to see what the difference is!

I think I know what happened. Greg said that his favourite dish was green curry and eats it all the time, so Jamie knew he wouldn't be able to half arse it like he normally would. Greg would absolutely tell him that it was the worst green curry he's ever tasted if he had served him that mushy soup he made last time.
I was weirdly proud of Greg for all the times he was incredulous about Jamie's questionable cooking techniques.

I heard that a lot of coconut milk can sold in EU/US add emulsifier for increased shelf stability It’s strong to the point that you can’t fry it to get the oil layer out. So shortcuts like frying paste in oil is somewhat forgivable. But the caveat is to fry it and not just stir fry.
As a Thai, thanks for your previous weejo, uncle Roger. It may have inspired Jamie to consult McDang the Thai professional chef how to properly cook our green curry. At least..our ancesters rest(better) in peace now.

The purpose of putting two spoons of coconut milk at the beginning is to separate the coconut milk and fry the curry paste with the fat from the milk to make it more aromatic(I’ve learned this from a Thai cooking course). But Jamie did it wrong by adding too much coconut milk after😂. Hope this helps someone :)
yeah he added way too much coconut cream also. If you're using lets say 2 cans, you can just use the cream and the milk from the 2 cans (you need to store them so that they separate), not 2 cans of coconut cream and 3 cans of coconut milk (insane). If you use less cream, the green curry emulsifies when the cream "spits" and it looks much greener
You are correct about the aromatic reason. However, You can put as much as coconut milk you want. Most of Thai home made only cook with 100% coconut milk.

As a Thai in my house we like to “fry” the paste first with the fat that separates from coconut milk so no oil added. Then we add more coconut milk and simmer until the rest of coconut fat separates and that gives the curry it’s vibrant color and it won’t stay white. Also most people don’t know that it’s curry, it’s not supposed to have much liquid in it. It’s not soup.
There are different types of curry that have varying amounts of liquid so to speak. When you make roti, the recipes call for a dry curry. In other dishes like bunny chow(South African dish), having a gravy adds to the enjoyment of eating the meal.

It varies from country and region, but originated in India. The usual spices are tumeric, coriander, cumin, ginger, and pepper +/- a few things. Apparently the hottest spice prior to the Portuguese and Spanish introducing 🌶️ chili's, was black pepper. The dish spread around the world with the British, as they colonized the world.

The problem with celebrity chefs is that they never use a single utensil more than once. They rake in so much cash that they're blind to the longevity that a lot of these tools are supposed to have when treated right. They get rid of their kitchen tools faster than their prostitutes.
