Hello, I truly enjoy watching your videos. I love the fact that you're very detailing with your directions except for the convection oven😊. If you don't have a convection oven do the temperature change for a regular gas oven? Oh, by the way your cake look scrumptious ❤❤.
So happy to hear you're enjoying the recipes and videos :D and if you don't have a convection oven then increase the temp by about 15C so for this recipe you would bake it at 175C :) hope that helps!

A quick question though: why doesn’t the top line of the sponge cake come off when trying to gently scrap it off? when trying, it seems to come off with big chunks of the sponge cake no matter how slowly it is done.
You're so welcome! :) And hmmm it's hard to say without being there but it may be because the sponge cake was slightly overcooked, or because the ratio of ingredients is slightly off. I would recommend using the gram measurements if you haven't already :) but also if you feel the texture of the sponge is good the way it is but the crust still hasn't formed or isn't separating from the rest of the sponge, then you can simply use a serrated knife to trim a little of the top off to allow the syrup to soak in better :)

I never posted an update; this black forest cake was unlike anything I have tried before. The texture of the sponge cake was unbelievable. It was so light, moist, and utterly delicious. Hi. Can I use glacé cherries as you used on top of the cake for the middle layers too? I know the glacé ones do not come in the syrup, but I was thinking to add some water and sugar, let it cook a little bit so that I can obtain the syrup to brush the cake layers with the same. If you use alcohol you will want kirschewasser not bourbon.
