You should check out the Scones Bake Along livestream that Anna did last week. There are plenty of suggestions for recipe substitutes, and you can fashion the flavour the scone based on whatever you have available!
You can add a pinch of salt, or a fee drops of lime/lemon juice. It’s just to prevent the egg whites from getting over whipped. Hope this helps, have a nice day

Hi penny. I'm not Anna but I think I can help you. I don't really think that you will be able to have this batter sit since the egg whites may deflate while waiting for the others to finish bake. Hope this helps.....
Same issue here. I have a feeling we can't due to using whipped egg whites. Only saying this because another baker I follow tells us to bake all of the batter immediately due to those egg whites. Hope Anna answers our question...
Hi Penny (and Jada & Y+Tammie, too). ANNA HERE! Yes, you are right - the second batch may deflate while you wait for the first batch the bake. What I would suggest is that you make the batter base (flour, sugar, cocoa yolks, oil, etc) and whip the white as per the recipe. Then, use a scale and weigh 2/3 of the base batter and 2/3 of the whites. Fold this together and then divide into 2 pans and bake. For the last pan, later, you can re-whip the whites (yes, you can re-whip whites!!) and then fold then into the remaining batter and bake. A bit complicated, but then your cake layers will be consistent (this is a lovely chiffon recipe)

Professional baker... Well... This isn't a black forest cake, it's a fail. No Kirsch schnapps and wrong cherries. You have to go for dark cherries. And why cream cheese? Call this cake an American cherry and chocolate cake inspiried by black forest cake.

That aspect is a significant part of German culture. You have to “get it”. You CANNOT deviate with a Black Forest cake. - German Baking Polizei
Watching this as a german makes me somewhat uncomfortable. Where did this chocolate ganache/cream/mousse thing come from? I've seen it so often when foreign chefs make it. But you never would see this here, especially not in the Schwarzwald. And a big no to cream cheese! The whipped cream must be very light. Almost like squirty cream. And we use sour cherries, the small ones in light sugar syrup. Sweet cherries in Schwarzwälder Kirschtorte would be far to sweet for our taste. Kirsch liquor is missing, too. But some don't like it here as well. But at least the biscuit sponge need to be brushed with the sour cherry syrup before assembling the cake. To cook the cherries with the syrup and starch to a jam like filling is very traditional though, even the use of some cinnamon. That was totally fine - as the rest of the process. But I guess that is just how things work when recipes travel around the world. We germans also probably do brownies wrong and especially choc chip cookies for the ones we make over here are more crunchy and not chewy in the middle 😅

I am from Switzerland were the "Schwarzwäldertorte" (Blackforestscake) comes from. Your recipe is great, but if you want to go original, use only whipped cream without chocolate, only use whipped cream as frosting and sprinkle the side with chocolate chips 😉
With a real back forest has this cake nothing in common. Cooking cherries in water sounds not really good. Important part of this German cake is Kirschwasser... But you can substitute it with rum.

I tried it and overall it was yum but the sponge turned out to be very dry. Maybe need to moisten the sponge next time with syrup.

You did not add the syrup to the sponge cake that’s why it is going to be a dry cake. Cake must be moist and juicy should melt in mouth.
