    Listen!!!!!I have never made a cake so light and airy!It literally felt like I was munching on a vanilla and strawberry flavoured cloud !Hats off to you Cakes by MK !!!This will now be my go to recipe for a sponge cake .

      I have horrible cake habits. I eat 4 or 5 whole cakes by myself a month...😮😮😮
      I can't help it....oh w Ice cream
      No I'm not a diabetic thank Goodness or I would of been Dead.
      I do have have Hyper para Thyroidism & Multiple Myloma
      I'm not Heavy you can tell I eat too much in my face if you knew me. But that's it the hyperthyroid turned me into a eating machine. The pain from the cancer is my excuse to treat myself.
      Anyway I never baked but I'm gonna by pans & stuff & try because cakes are sooo expensive & I get too little sponge - mounds of butter cream or nice sponge - fake butter cream.....fake meaning granulated sugar frosting....yuch. I don't like crunchy cream .
      So I have to convert your measurements to teaspoons, cups, etc etc I will return in a week or so I have to get the ingredients incl pans so & rest 2 days after I shop. I look forward to trying so I can stop buying cakes that don't hit the right Notes.........

    Girl, if knew where you were i’d go personally take you a gift because this video helped so much. As an amateur baker, believe me when i say i’ve been through many sponge/white cake recipes and this is the only one that has never failed me on any aspect, even without a professional mixer. Done it multiple times and it always turns out perfectly fluffy, light and no sinking on the top. I’ve tried it with several fillings and frostings as well, and my personal syrup, and it always slaps. 10/10

    I made this cake and it truly was the softest and spongesist cake.
    The only thing I would change is I would not put vanilla in the cream filling and put less sugar in the syrup, and that's to everyone's own preference, of course.
    I am making it again today but will be doing a apricot/pineapple filling.
    Go ahead everyone and give it a try, you won't be disappointed!!! ❤

      Preheat oven to 160 °C (320°F) with the fan on (see note 2 if you don't have a fan function) and line the bottom of two 8x3 inch baking tins with baking paper without greasing the bottom. Leave the sides of the cake tins ungreased and bare (do not line with baking paper).

    OMG these sponge cakes are truly amazing. Made it this weekend for my uncle's birthday. My only regret was that I made only 1. Substituted the simple syrup for the Tres Leches (3 milks) option and it was absolutely devine

    I made this cake last night and it turned out so good, and it was the first time for me to make a sponge or chiffon cake but i have experience when it comes to baking. I have tried many sponge cakes but so far this is the best one in my opinion

    I don’t even have a cake mixer at home but I gave it a try using a whisk. And it came out perfectly. If an amateur like me can make a cake perfectly like this there’s nothing that can go wrong in this recipe. Thanks ❤

    I guarantee that this will definitely work and make the BEST chiffon sponge cake. I make it the same way apart from the last step. I add my dry ingredients to the yolk batter first, mix and then add the stiff peaked egg whites.

      We don’t put baking paper nor shld we use non-stick pans because we need to invert the pan while cooling. If the cake is not clinging onto the sides of the pan, the whole thing would detach, tumble down and you will end up with a messy cake.

    I baked this yesterday. It came out really spongy, light, and moist. Thank you!
    Although, my egg whites did not become stiff peaks. It stayed foamy, so I hoped for the best and continued with the rest of the recipe, and I'm impressed by the end result.

      i think you just need to whip the egg whites for longer, then you should be getting stiff peaks :)

      It's actually not bad if you have soft peaks because they are easier to incorporate to the rest of the batter so you avoid knocking out too much air ​@@iridescentkila

    I have to say the lemon curd taste amazing. One time I ran out of cornstarch so I replaced it with custard powder instead and it turned out well. Thank you MK for sharing your recipe

    Girl!! I’ve made this cake and topped it with marzipan, it was amaaziing!! So moist and light 😍😍 I have also cut those two cakes in half so i had 4 cake layers that i put whipped cream on, LOOVED IT🩷

    After many attempts and failing miserably at making sponges I decided to try this recipe. Correct you will not be disappointed! The sponge was light airy and unfortunately very morish. Out of season for strawberries so I used Quince jelly topped with whip cream.

    Made this with my three year old son and it turned out so good! We actually over whipped the egg whites and the cake deflated after taking it out but it was still delicious and seem to have plumped up after adding the syrup and whip cream. I guess it's a somewhat forgivable recipe. Thank you so much for sharing! I'm obsessed with your recipes.

    I was an intern at a bakery once and gotta say..Never again lol. Any homemade cake is better than those bakery-made ones. Mass production kills flavour and passion in favour of cheaper/faster ingredients, industrial shortcuts.

      You're right. My mom calls me a better baker than any of those pastry chefs only because of the quality of ingredients I use and the fact that my cakes are freshly made.

      Fully agree with you, those cakes are just so commercialised and it taste of nothing but sugar. Baking at home or ordering a cake from a small home baker is always much better

    I used your cake batter poured over caramelized pineapple... Tgen baked it..Was super! I just substituted half butter to oil for a bit of butter flavour... I wish I could post a picture for you ...
    This one is next, for my husbands bday, I thought of making it ahead and freezing it so I can just defrost and assemble..

    I was sceptique, since I’ve tried others before and miserably failed 🥹 but this one… I finally managed!! 😍 super soft and so easy! I even made it without being too picky about the measurements (was in a hurry). Turned out absolutely perfect! This will be THE recipe to follow for many more cakes to come 😍😍😍😍!

    I have tried this! I used half of the recipe, and it came out spectacular. The sponge cake was very fluffy, not too sweet (major point), and for a beginner baker like me, the instruction was very easy to follow. Although since my area was hotter and more humid, I found out in a messy way that the whipped cream melted more easily, even with how quickly I tried to construct the final cake. 😂 I chucked it to my refrigerator for a couple of minutes to mitigate it, and it worked just fine.

      You could whip in a about 3 tablespoons of Philadelphia cream cheese with the cream, it helps stabilize the cream so it doesn't melt too fast .. Holds its shape better..

      I used glutine free flour, so mine probably was different to most, but I made the cake one day ahead, kept it in the fridge overnight, and decorated it the following morning. I took it out of the fridge about one hour before serving it. I don't know if regular flour works the same way

    I must say that I have years of baking experience az a Swiss mom and the technique and mostly the amount of sugar in this recipe is perfect.
    I can't eat American cake recipes. The amount of sugar is beyond imagination. Inedible for my tastebuds.

    This reminds me of those cotton sponge cakes. Yes, they're absolutely very light and fluffy. I've made several in the past 3 yrs, but there is something others need to be aware of. You did touch on it as you brushed the crumbs and top layer off. These can have a very eggy taste to them. Even after adding your filling and frosting it's still noticeable. What I do to get around that is to add more of your flavoring extract. If I'm flavoring it orange I'll still add the amount of vanilla called for in the recipe but I also add orange extract and a few tsps of orange zest. Just thought I'd throw that out there for those who haven't made a sponge like this before. Thanks for the recipe... 👍

      I wanna help you out for it, try Italian genoise sponge recipe rather than this cotton sponge recipe, genoise won't have eggy taste just with a few drops of vanilla even has better texture for me personally, if you don't know about that type of sponge, go check that out

      Hi Tammie! :) Totally get where you're coming from. I'm super sensitive to that 'eggy smell' sponges can often have, so I have designed this recipe so the cake doesn't have that eggy taste. The crust from time to time can have remnants of that eggy aftertaste if the cake has been overbaked, so I just take mine off all the time for extra security haha! :) But the cake layers themselves don't taste eggy at all I promise! One thing I experimented with (which you have mentioned also) is adding more flavouring, and bumping up the vanilla definitely helped which is why I use 2 teaspoons of vanilla (which may seem excessive to some haha but it really does make a huge difference!). Orange extract and zest sound amazing I'll have to try it sometime. Thanks for sharing your knowledge and experience Tammie :D

    I read recently that if you remove the white/organ (the jelly bit) from the egg your chiffon sponge won't have the eggy smell...I've yet to try it but I don't suppose it would hurt to give it a try 🤔

    I just put mine in the oven - hopefully it turns out as promised! I've been baking for 4 years and I still have not found a good sponge cake or vanilla cake recipe (bakery style). Rabbi, please let this recipe be the one!!
    Update: Just took them out of the oven and they look promising!! I'll come back with final verdict iA!

      If you were to refrigirtae the cakes for decorating the next day, at what point should you pack it??

      @@hyderabadimominuk6871 after it has cooled down. But these cakes are very fragile so make sure you keep the parchment paper at the bottom of the cake (so that it doesn't stick to the container) and don't stack them on top of each other! After cooling the actual cake for 20 -30 minutes (at the least) on a wired rack should be good. Honestly, it all depends on the temperature of the environment. Just make sure they are cool to the touch and you can't feel any heat.

    Hi!
    This is a kinda hurry situation,but can you pour the cake batter into one 8 inch pan? If it gets raw in the middle can you give me an advice how to bake it trough and what temperature the oven should have ( btw i dont have a fan oven)

    Oh wow the cake turned out exactly like yours and it’s just super perfect. I just made small adjustments such as I strained raspberry sauce to make it seedless and added 2 more tablespoons of sugar into whipping cream. You are very talented baker! 🎉

    This looks beautiful and reminds me of my moms old fashioned sponge cake with whipped cream and pineapple. The only difference is she drenched the sponge with sweetened milk instead of syrup. Thanks for the great recipe
