The only ingredient I skipped is the lemon juice in the jam as I don’t like anything sour. Most of them say that the sour balances the sugar but for me it’s just the opposite. Even without the lemon juice, the jam was too sour . But the sponge was amazing. I have finally found the forever recepie.

Hi there! :) Yes vanilla extract does contain a small amount of natural alcohol. For an alcohol free version, I would recommend an essence or artificial vanilla flavouring :) hope that helps!
