- Italian pistachio cookies ✨
Chewy, fragrant and also gluten-free!
Ingredients:
1 egg white
110 g pistachio flour
1/2 tsp vanilla extract
80 g sugar
Lemon zest
Instructions:
1. Preheat your oven to 340°F (170°C)
2. Mix pistachio flour, sugar and lemon zest.
3. In a separate bowl, whisk up the egg whites with vanilla extract until foamy.
4. Gradually combine the mixtures with a spoon.
5. Form the cookies by making small balls of dough, about a tablespoon per cookie. Roll them in icing sugar and place them onto a baking sheet lined with parchment paper. Ensure they have some space between them.
6. Bake in the preheated oven. This usually takes around 12 minutes.
7. Allow the cookies to cool on the baking sheet for a few minutes before diving in!
