Reporting on success! We've ground the pistachios in food processor, and then just added the rest of ingredients in there and ran it a few more seconds to mix it all up. So easy! The pistachios didn't get powdered completely, some small bits of pistachio remained, but the cookies still turned out beautifully. They totally taste and smell like Italy. Thank you for the lovely recipe!

Hey got a cool trick for those living in humid places where the dough gets too sticky. Pour your powder sugar in a coffee mug and instead of rolling just drop a small amount in there and gently bounce and swirl the cup. The cookies turn out perfectly circular and the only indents are your fingers when you place them on the baking tray.
So good, so moist! I just made it 2 hours ago. Followed exactly what you said. Got the raw de-shelled pistachio from Trader Joe’s. The size that they have is exact measurement you need to make this batch. Although a heads up I coat too much powder sugar on some of them so too sweet for my liking if you like less sweet don’t dump the sugar powder too much while coating it. The powder sugar in the recipe is perfect sweetness. Thank you so much for sharing this recipe. I’m sharing some of these cookies with my bf’s Italian Nonna and mom, I hope they will like these 😊❤️
These look better than the pistachio cookies we get in Italian bakeries in Albany & Boston. They seemed more like almond paste with pistachios mixed in and died green…they definitely have the Green dye look to them! I will definitely make these up & see of hubby likes them better! Totally! I love true pistachio flavor. In America, a lot of times we use pistachio essence or extract to flavor "pistachio" flavored things, but its just not the same. Actually grinding up the pistachios is the only way to get it right in my opinion. And then its SO good

Thank you so much for this. I work in a hospital and made these for the nurse's break room - they devoured them instantly. One nurse, she ate 8 of them! Those big gluttons!
Avocados!! 😅 Of the other suggestions, I liked this one the best because it made sense when it said that it would add a creamy texture. So I tried it, and it worked. Though it wasn’t as creamy as I wanted, but, still, it was as good as with the eggs. You wouldn’t even taste the avocados. So, one avocado replaces one egg, and of course, I used two and baked them for 17 minutes just to be sure they didn’t come out too soft. Go ahead and try it.
I have a question. Does the actual amount of whole pistachio 1 2/3 when blended equal the 1 2/3 Pistachio flour? Because I made them, and they were more moist than yours.
