- Jack Scalfani makes incredible mac & cheese with a few special ingredients.
Here is the recipe:
INCREDIBLE MAC & CHEESE
12 ounces penne pasta
4 cups cheese sauce (recipe follows)
2 ounce cheddar, grated (1/4 cup)
2 ounce Gruyere cheese, grated (1/4 cup)
1/2 to 1 teaspoon chipotle chile powder (depending on how much spice you prefer)
Preheat oven to 350 degrees.
Oil or butter a 9 x 13-inch baking dish.
Cook the penne 2 minutes less than package directions. (It will finish cooking in the oven.)
Drain pasta and set aside.
Combine cooked pasta and cheese sauce in a large bowl and mix carefully but thoroughly.
Scrape the pasta into the prepared baking dish. Sprinkle the top with the cheeses and then the chile powder. Bake, uncovered, for 30 minutes. Let sit for 5 minutes before serving.

CHEESE SAUCE
MAKES ABOUT 4 CUPS
1/4 cup (1/2 stick) unsalted butter
1/3 cup all-purpose flour
3 cups milk
14 ounces aged Cheddar cheese, grated (about 3 1/2 cups)
2 ounces grated Monterey Jack cheese
1/4 to 1/2 teaspoon chipotle chile powder
1/8 teaspoon garlic powder
Melt the butter in a heavy-bottom saucepan over medium heat and whisk in the flour. Continue to whisk and cook for 2 minutes before slowy adding the milk, whisking the mixture constantly. Cook until the sauce thickens, about 10 minutes, stirring frequently. Remove from the heat and add the cheese, and chile and garlic powders. Stir for about three minutes, until the cheese is completely melted and all the ingredients are incorporated.

The dish is called macaroni and cheese, it doesn’t matter what pasta you use it’s still Mac and cheese.

Nmoetoe actually, penne is better for “mac n cheese” because elbow macaroni is completely smooth and sauce doesn’t stick to it well. Penne has ridges and is rough so sauce better adheres so macaroni isn’t the best choice for “mac n cheese”

One thing I thought was really telling was at the end when Jack said that vegetarians can add vegetables to the mac and cheese. Jack apparently thinks that you have to be a vegetarian to eat vegetables.
Not to mention the dish he made was vegetarian

He is literally missing eggs to hold it together and I know it's not seasoned properly. Most important the cheese sause should o been cooked same time or after boiling the pasta.😅😂 Cheese would of been hot and ready

Only thing I would add is toasted bread crumbs on top before baking. Gives it that nice crunch. I do add fried chicken, onions, garlic, broccoli, etc. when I make mac and cheese but I know that is not traditional. I think the bread crumbs are a necessity though. But yes Jack did a good job on this one

My bro made a really amazing Mac & Cheese dish with a bunch of different chesses, but he also added bacon to it. I'll have to give him this recipe and ask to see if he can work some magic with it. Great as always. Also that parody was pretty funny.

@ModestNeophyte 1 lbs is fine. I think it's a better size, too. Nice job. What was grainy about the cheese sauce? 3 cups of milk should have smoothed out the flour. let me know how it turned out.

@CoryBoom yes. try chili powder and see if there is just chipotle powder. If not, chili alone will work fine.
Swiss will work, too.
side dishes would be some steamed green veggies. green beans or brussel sprouts or asparagus.

@ModestNeophyte your flour sounds find. You need to slowly melt the butter then slowly put the milk in the make the flour smooth out. Once all the milk is in make sure it's smooth and make sure this is all being done over a med flame. I'd try it again. You will nail this.

If you want a crisp top on the mac n cheese, put some breadcrumps. Makes it really good, and adds a nice crunch, so it isn't so... smooth! But good job Jack, looks good!

Oh wow. I saw that cheese at my store the other day (it was $16 I think!). I may have to experiment with it now, though, if the mac n' cheese is THAT good. =)
