Lazy Man's Chicken Crumble

  • This has got to be one of the simplest recipes Jack has shown on the lazy man's series.
    Here is the recipe:
    *Preheat oven to 400F*
    YOU WILL NEED:
    * 4 frozen boneless and skinless chicken breasts (If your chicken is thawed, cooking time and temperature will be different. See below
    * 1 box/bag of seasoned croutons (choose a flavor! Garlic, ranch, italian... find these in the condiment aisle)
    * 1.5 cups of mayonnaise
    * salt-free seasoning blend. (I use "Mrs. Dash Table Blend". It's awesome.)
    * shaker of thyme (plus a fresh thyme sprig if you'd like a pretty garnish)
    * butter OR olive oil OR other cooking oil (I use olive oil)
    * Aluminum foil, oven-safe skillet, or square glass baking dish
    First, toss about 3 cups of croutons into a zip-loc baggy. Squeeze out the excess air and zip up the bag. Using a rolling pin, food can, or drinking glass, crush the croutons inside the bag until they become fine crumbs. If you feel like it won't be enough to cover the tops of your 4 chicken breasts, just toss some more croutons in the bag and do it again until you have plenty.

    Next, put your mayonnaise into a small bowl and season it generously with the Mrs. Dash Table Blend or some other salt-free seasoning blend. Adding the thyme is optional, but I highly recommend it. DO NOT ADD SALT. The croutons add plenty of salt by themselves. Stir it up and presto... now you have gourmet, seasoned mayonnaise.
    Now you need to grease the bottom of your baking dish (or makeshift foil dish) so the chicken won't stick or burn. Two options: (1) Scatter little squares of salted butter around on the surface, about 2 inches apart from each other, (2) Drizzle a bit of olive, canola, or other cooking oil in the bottom of the dish. (Olive oil is definitely your healthiest option, but the butter is tastier.)
    Place your chicken breasts right next to each other, on top of the butter/oil. Using a spoon or rubber spatula, spread a layer of the mayonnaise mixure across the top of each chicken breast. You decide how thick you want the layer to be. I like to spread it the way I would peanut butter on bread.
    Grab handfuls of the crouton-crumbs and sprinkle generous amounts over the mayonnaise, patting it down until each breast has a nice thick layer of crouton breading on top. Remember: the croutons are what give your chicken its flavor and seasoning and these will only be added to one side of the meat, so make the crouton layer nice and thick so each bite is delicious and well-seasoned.
    Now, just put your chicken in the oven (400F) and bake it!
    Frozen: Bake 400 degrees at about 90 minutes.
    Defrosted: Bake 350 between 20-30 minutes.
    Cooking times depend on the thickness of your chicken breasts. Always check as you go to see if it's cooked. Also, cover with foil when the crust reaches it's perfect color. you don't want it to burn.

    when jack tells you to bake chicken for 30 minutes, you already know that you have to bake it for at least 2 hours, else it will run back to the store where it came from, cuz its still kickin.

    @NoobPwner2448 the files get so big to deal with. It takes twice as long to process on my end. i love the look of 720. I will stick with that for now. I may check out 1080 in the near future.

    If it was actually a lazy recipe I would have just seasoned the mayo directly in the measuring cup if I were you so I wouldn't have to do more dishes lol

    Jack,
    I have a similar recipe. Preheat oven to 350 degrees. You take frozen chicken breast place them in a 9x13 pan. Pour a bottle of ranch dressing over top. Place in oven and cook for about 60 minutes. Chicken could be done earlier. When done the chicken is really juicy and tender. Tastes awesome.

    I mix equal amounts mayo and Dijon mustard with a few dashes of hot sauce, coat the chicken on both sides and cover with Italian bread crumbs. It's really delicious!

    The real lazy thing to do was season the mayo in the measuring cup so you didn't dirty a new bowl just to mix it up.

    When I make it, it cooks much faster because I get a brand of frozen chicken called "Purdue". Their breasts are thinner and not very big. Also, I break them apart and lay them in the pan side by side, so they cook a lot quicker. Other things that effect cooking time include how well your oven works (mine's insanely hot, hahaha), and whether you're using a glass cooking dish or foil. The glass dish seems to make my chicken cook within about 30 minutes, whereas a foil dish takes longer. -Jennie D.

    Yeah, I have to say that this is a 'must try' recipe. Since you said that your frozen chicken was over-lapped and it took longer than you thought, just laying the chicken breasts in a single layer in freezer bags would be a great start to an easy meal. You could even make the layer the same dimensions as the pan used.

    Did you ever think about getting a digital instant food thermometer?
    Its nice to check the core temprature of meat when you're not shure about it
    For chicken about 75 degress celsius (i'm too lazy to think in fahrenheit right now) is perfect. It has to have that core temperature for at least 4 minutes.
    Everything below 70 for chicken is not considered 100% safe to eat.

    I tried this because it sounded delicious, and I didn't like it very much. But I didn't come back to hate on it, I was just gonna say that I didn't mix the mayo in a bowl. I just sprinkled the seasonings on the chicken and spooned some mayo on top. I didn't want that much mayo anyway and I'm lazy. But it mixed very well and I saved a step.

    Looks great !!! However, I would probably use butterflied or chicken strips and coat both sides, oh yeah. I do like the fact it can be done from a frozen state as well. I make my own croutons from my Italian bread so I may have to add a little more salt along with the seasonings. I'm glad I pack my chicken breast singularly. It's gonna make this recipe a breeze and it won't take as long to bake. Thanks Jack :o)

    @odoyle77 instead of croutons use breadcrumbs or crushed ritz crackers.
    yes. flat baking dish is fine as long as it has a small lip on the edge to keep juice in.

    @CaptChadd you shouldn't. My seasoning has only 9% salt. You just shouldn't add direct salt because the croutons have a certain saltiness to them already.

    If you take that seasoned mayo, spread it on bread (like you were making a sandwich, but covering the while side of the bread), then fry it mayo-side down, it makes a pretty good toast (flip it to get the back after the mayo's fried a bit, and left some oil on the pan). The eggs in the mayo make it cook up pretty well.

    @djteac Don't worry it's not a stupid question. It's homemade mayo made with equal parts oil and bacon fat. It's great on burgers and fries

    Sure, but remember that you'll have to add salt and other seasonings to the crumbs if they aren't already spiced up. Croutons come with tons of salt and spices in them.

    I've done the same recipe with fish fillets (not from frozen).
    it's not a bad Idea to add some lime or lemon juice to your seasoned mayo.

    the formula to convert Celsius to Fahrenheit is, Fahrenheit = Celsius X 9/5 + 32 ... so 75 degrees Celsius is roughly 167 Fahrenheit

    most people are fine with 720! its once you get into big tv's like 36 inches and above that resolutions above 720 are really needed, at least in my opinion.

    Weird question: Where can I get forks like the one at the end of this video? With the slot in the handle? Love the basic design of that. Definitely going to try this recipe too. Boneless, skinless chicken breasts are probably my primary source of protein, always looking for new ones to do them up.

    @Zzroronoa From what i hear the mayo act cooks into the chicken making it moist and flavorful as mayo is made of oil and eggwhites with a few other ingredients something i wonder is if you could use this breading method with stuffed chicken like take your chicken breast maybe put a oyster stuffing or what ever stuffing you prefer then use the crumb and bake it off i think it would be pretty sweet none the less

    Hey Jack, got to ask, Seeing as we can't get your sauces/seasonings here in sunny (joke it's snowing right now) Scotland, is there a blend of spices you could recommend to mix together as a substitute? Not needing your recipe but an hint or two would be awesome so can recreate that great Jack taste. Oh btw, my mum asked me to thank you after I used you're eggnog recipe over Christmas and she absolutely loved it... although did double the alcohol in it lol.
