I always find making my own white béchamel then add Munster cheese is so good. Then I shred four types of cheese then a Parmesan cheese crisp or crumbs for the toppings with a little shred Parmesan. This made my mouth water when watching.
That looks great! Love the English cheddar. I mix in a tablespoon of English mustard powder into the flour to make the béchamel. Adds a lovely undertone of flavour.

My only tweak to this great recipe is adding 5oz of Fontina to replace 5oz of Gruyere. So Cheddar/Gruyere/Fontina. Fontina is hands down the most slept-on cheese in America. Melty, great on a burger, so many uses! Love this video. Thanks!
Nutmeg! I tell people that they disagreed. They think of things like sweet potatoes. Nutmeg needs more credit for what it does. The subtle tea and nuance of fresh nutmeg is a game changer.
Such a treat! I add one tsp of sweet mustard and one tsp of sriracha to the béchamel sauce + half a clove of garlic to the simmering butter before mixing in the crumbs.
Made this one last night, I subtitute with swiss cheese. It's incredible. So delicious. My husband and I loved it. Even my brother in law asked for more. Thank you for sharing.

VERY similar to my Dad's "Famous" Mac and cheese (adapted from a Good Housekeeping cookbook YEARS ago). We use mustard powder and a cheddar/fontina mixture as our cheeses of choice for a good cheese pull and flavor!! Happy Mac-ing!

Mac and Cheese has been a fav of mine forever. A trick I learned from my mom----to keep from getting a steam facial, just run cold water in the sink while draining the pasta., obviously beside the pasta not over it.
I learned to run cold water over the pasta to stop the cooking while I'm making the cheese sauce so the noodles don't get mooshy. I like the pasta al dente (spelled wrong idk?)

My Cajun Memere’s advice regarding a Roux was vital in many of my dishes. For example, even though I know you’re not making gumbo, her advice regarding that roux was to cook it until you think it could almost burn and then keep cooking until it was the color of a pecan shell. That could be a labor of love the can take half an hour in a cast-iron pan. But it came from a woman who grew up on the Bayou so I will heed her advice. She also taught me that a roux Compliments so many other things. Like the thin liquid from her pot roast. It changed that into a glorious sauce.
This recipe looks absolutely delicious I’m gonna cook it as soon as I can In the mean time doing my Mac and cheese with just Swiss chees and velveeta and ground pepper ; Swiss cheese on a block - used shredder 😂yum
Tip: Don't use hot water when you fill up your pot. Hot water carries sediment from the hot water tank, and that build-up gets into your water and food. I'm a licensed home inspector, and it's common knowledge in our field, so I try to share that information whenever I can. Use cold water. Any minerals in the cold water will boil off, unlike the sediment in hot water.

I have 2 family members gluten sensitive although not celiac...but whenever possible try to accomodate...i myself like to lessen my gluten load throughout the week....i do tend to buy GF pasta ..and GF breadcrumbs .....however when you made your rue sauce...can i substitute GF flour for the flour OR can i just leave it out altogether and do just the milk ..cream...and butter ? Love all your recipes and tips...thanks...new to this channel.

I add bacon, onion, Italian herbs and sometimes red peppers, topped with sage stuffing mix, breadcrumbs and cheese. I've also made pizza mac n cheese too, just scrape off pizza topping and add to mac n cheese. Both are great. Way too plain without the extra's.
I've made this several times. It's always HUGELY popular, especially with teens! Grandkids request it every family gathering.

Cayenne pepper is also really nice in a cheese bechamel sauce like this one. I add cayenne with the nutmeg and it works really nicely together.

FYI a cheese béchamel is a mornay sauce
I also like to put some cayenne pepper in my cheese sauce.

I like a couple of dashes of hot sauce myself, but the mustard does blend well with the sharp cheddar.
Worcestershire sauce is also a good flavoring addition.
A pinch of cayenne also adds a bit of umami.

Instead of salt, use chicken bouillon (veggie bouillon for the non meat eaters). Adds even more depth of flavor, 👍🏾

I make this recipe 2-3 times per year! It’s the best baked mac and cheese recipe. I add some velveeta to help it stay creamy even after it cools down.

I do this same recipe but my mother added onion to the dish, finely diced and it just adds a bit more to the taste!

I made this last night and it was so good! I had friends who are lactose intolerant going for seconds! I did substitute the Gruyère with Swiss.
