Hi Laura, I wanted to share a recipe of something I have been makin'. I'm on an OMAD and STRICTLY carnivore with Monday all day fasting! It's a 3 day - "seafood casserole" kind of creation. Consists of a can of Albacore tuna in spring water, a can of sardines - wild caught in water and a vacuum packed large piece of wild caught alaskan salmon (coho or sockeye) from Trader Joes, all cooked on my outside covered grille. I put the salmon on a foil boat out on the covered grille and while its cookin', I make a foil boat platter with about 20" of foil, folded long way in1/2 and then cup up the outer edge (about an inch) to make a boat. Then scoup in the tuna (after draining water) and the sardines drained- and break up it all and stir it up. After the salmon cooks (about 15 minutes) I scoup it into the mixture and break it all up and stir it in. Then I scoup it all into the foil boat and flatten it out and put a couple scoups of beef tallow (fat) on top for oil.Then back in to the grille for about 10 -15 more minutes. But I also make about 6 local free range raw eggs whipped in a bowl and pour it on top and kind of stir it in. In 10 minutes I have a 3 day casserole that I divide in three and last me for 3 meals (days)! It only comes to about $5 per day to eat! It's awesome!!
I just moved from Lacey to FL. It has been in the upper 80°s. I really missed the sun living in WA. I do enjoy the snow, though. Hope y’all haven’t been losing power much this year. That was the worst. People just know how to drive with no traffic lights in Olympia. It was the funniest thing to me. Y’all don’t skip a beat in that situation. Pretty impressive but shows how often it happens. I was there for 4yrs.
If you have an instant pot you can cook the chicken then use a hand mixer and shread it! Add in the cream cheese, cheese and bacon and voila!! It's a one pot meal and easy clean up. Chicken can be from frozen or thawed. Also works well with Costco or Sam's rotisserie.

And I learned some tips that might be good - hamburgers 8-12 minutes 475 degrees, hard boiled eggs in muffin tin 325 degrees for 30 minutes then 10 min in ice water, start spaghetti sauce with pepperoni, add some banana pepper juice, add a beef rib or 2 til fall off the bone (then add your normal stuf) then take meat off bone which makes a deep rich tasting sauce. I cook my sauce a very long time 2-3 hours. Then I seperate it to make different things with it.

It was 2 below zero in Colorado Springs this morning. We grill outside when it is 50 degrees or above, sunny and little wind. I wish we could grill outside every day. I really like your approach and sharing how to eat out at different places. That has helped me so much. Thank you. I do use crockpot liners also. Some people live for having lots of rules.
Oh wow! It’s been a while since there are temps like that. I used to live in Forest Meadows. We had to anchor our grill to the house with concrete screws because the wind would blow everything across the yard and I was tired of repairing my grill. lol. I’m back in FL and it’s been in the upper 80°. I loved my 15 years in the springs but really enjoying FL again. We are outside more than anyone in our neighborhood. I prefer cooking outside. Stay warm!

My husband and 16 year old daughter and 21 year old son all live with me and won't do it either. I used to say poor me, no support, I can't do this alone. Then one day I realized my health matters. It's kind of like on an airplane they tell you to put your mask on first in the event of an emergency because *you can't help others until you help yourself.* Im just sharing my own personal revelation. Once I changed my mindset to putting my needs and my health first, I was able to take the first step.....alone. I won't lie, it isn't easy, and usually 2 to 3 days a month I mess up and go off plan with a cheat. I would lose weight a lot faster if I had support... and I wouldn't have the temptations that lead to cheating... but I'm not after perfection and I made my health the main goal, not weight loss. Hang in there and know that you CAN do this. ❤

One thing I love about eating carnivore is NOT cooking indoors unless I have to.But that’s easier for me than most people because I live alone in Southern California. Eating carnivore sure does make the dog and cats hang around more when I’m getting my meals ready.
I’ve been wanting to tell you for some time how much I appreciate you going into restaurants and helping us see what can be ordered from each of these restaurants that are perfectly carnivore! That is incredibly helpful. My husband loves Olive Garden, but I thought really the only thing you could get there were high carbohydrate meals. Watching you right now, 2 hrs after you posted. As a former owner of a huge (37 pieces!!!) collection of Le Creuset cast iron, porcelain ENAMELED pots from France, and even a porcelain pressure cooker from Austria, i can tell you the #1 NO NO for enameled pots is using metal utensils. I watched in horror as you scooped all your bacon from your enamel pot with a metal strainer, scraping the inside of your beautiful new pot. Using metal utensils will guarantee major scratches and wreck your enamel. I know you're happy that it was inexpensive on Amazon, BUT that's still no excuse for using any metal on those pots. I had my LeCreuset for over 3 ½ decades, literally, so having bought them all in the 1970s, mine were not as astronomically costly as they are now BUT I ultimately sold them all in the early 2000s, still in perfect condition, and made the switch to All Clad stainless. I still have and use my Austrian enamel pressure cooker. NEVER EVER EVER use metal on enamel and you do NOT need high heat as they conduct heat evenly. And NEVER EVER EVER scrub with anything but regular dish soap after soaking if anything is stuck or stained. If I ever did something crazy to mine, I used a small amt of baking powder and a sponge. BUT trust me, you gotta stop using metal on your new enamel pot or it'll be wrecked very quickly.

Ground beef goes a long way in feeding a family! Economical, nutritious and it’s versatile. We do a lot of taco bowls, cheeseburger bowls, etc.
