    Instant Pot Peach Preserves Recipe
    4lbs peaches, washed and chopped
    juice of 2 lemons (about 1/4 cup)
    1 1/2 cups sugar
    Add the chopped peaches, lemon juice and sugar to the inner pot. Lock the lid and cook on Pressure Cook (high) for 4 minutes. Allow to natural pressure release for at least 15 minutes and then quick release the rest of the pressure. Press cancel to turn off the keep warm mode and select Saute (normal) and allow to summer, stirring occasionally for 20 minutes or until they reach you desired thickness. Remove from heat and transfer the preserves to jars and allow to cool before covering and transferring to the fridge.

      Honey is toxic when heated.

      cristian rivera You can make almost anything in the Instant Pot! I have stewed rhubarb in it very successfully too.

    I always blanch and peel my peaches. Leaving the skins on is ok?

    Hello : How long will the preserves be good for, hope for longer than a week? There is only my husband and I and they will need to last longer than a week in the frig. Thank you.

      My neighbor freezes hers in smaller containers and takes it out as they need it. Probably would keep a couple months or so that way.

    Do you have any tips for cleaning your instant pot? Mine just looks grubby from spills and use and I try but its so hard to get in that little channel around where the lid latches!

      Get one of those spongey paint brushes with the angled tip. With a little dish soap it works wonders. H/T Jeffrey at Pressure Luck 🤗🤗🤗🤗🤗

    Did these preserves thicken when they cooled down?

      Yes, some. Not as much as a jelly though. We like ours as topping for pancakes or waffles. 🙂

      Ok thanks. I wonder if you could do a two step process and use sure jell somehow to thicken it instead of sautéing it.

    Use brown sugar instead of white death

      Brown sugar is just white sugar with a bit of molasses. The Dark Brown Sugar just has more molasses. They're 4 calories per gram regardless and are processed exactly the same way, the only thing that may change is slightly different flavor profile with brown sugar vs. white. That may mute some of the peach flavor vs white sugar which is essentially flavorless but sweet.
