    Canning Peach Preserves in the Instant Pot Max:
    Wash your jars, lids, rings and canning tools with hot, soapy water. Add 2 cups of water and the steaming trivet to the Instant Pot liner. Place the jars, lids and rings on the trivet. Sterilize using the Canning (low) setting for 1 minute with a Quick Pressure Release. Note: Sterilizing is not strictly necessary for recipes with a processing time of 10 minutes or more and can be skipped in this recipe. Carefully remove the jars, lids and rings from the Instant Pot and fill with the jars with the warm preserves leaving 1/4 inch of headspace. Wipe the mouths of the jars to make sure you get a good seal. Place the lids on the jars and screw on the rings tightly but not as tightly as possible (fingertip tight). Place the jars back into the Instant Pot and fill the liner with water until it comes up 1/4 of the height of the jars. Lock the lid and select the Canning (max) setting for 10 minutes. Select Slow Pressure Release. After the cook time is finished and it has been on slow pressure release for 5 minutes, manually quick release the rest of the pressure. Remove the jars from the Instant Pot to a heat resistant surface and allow to cool overnight. Check to make sure all of the lids have popped down. Any that haven't popped need to be transferred to the refrigerator and used up first as they do not have a proper seal.

    I am impressed by the Presto Precise Digital canner. It is a dedicated food canner featuring water bath & pressure methods. I think it is the 12 quart capacity size and been completely sold out according to the Presto website. Sells for $250 at this time and appears to be well made. Since my new stove does not recommend home canning, I would be very interested in your evaluation when it reappears (soon I hope) on retailer shelves.

    Any more videos on canning with instant pot max? We want to can pickles, salsa, and maybe homemade sauces. Not sure what settings to do it on. Thanks!

    FYI - You don't have to sterilize your lids if processing for 10 minutes or longer anymore. It was a recent change to the recommendations. A few channels I watch have stated this for canning this year.

      Yes, I put that down in the full recipe. But it was part of the canning instructions in the Max manual so I wanted to show it. 😁

    I guess you could have just water bath canned them in the max. Wish it was 8 or 10 qt. The other electric canners are much bigger. They do quarts. But I love my instant pot.

    When I was a kid and helped my grandma can pickles, I don’t think we tightened the ring until they cooled. Did you tighten the lid before you put it in the IP? Just curious. You make it look so easy. Thank You.

      I tightened the ring enough to keep the lid on place. "Fingertip tight" as they say... Without that they would probably leak under pressure. 😁

    I’m just curious when I read the IP Max instructions in the manual it says to can on low for high acid foods like jams. You used the Max setting. I’m wondering if that’s right.

    Really nice video. I didn’t know there was an Istant Pot with a canning feature. I have a regular IP. Is there a way to can with it like in the one you have.

      One brave person showed how to steam can (not pressure can) and only high acid recipes, and only after testing your IP to see if the unit you have can hold the correct steaming temperature. If you want to risk it: video part 1 is safety warnings, part 2 shows the process.

      I say "brave" because despite the entirety of part 1 being warnings, most of the comments seem to be fixated on the lack of USDA (?) testing and approval for *any* multicooker in canning anything.

      Hey, recently got an IP LUX 6QT. I have experience with heat/pressure devices to destroy microbes specifically foodborne (US VET ex lab tech research 8yrs.)... here's my unsolicited opinion. The manual gives specific temperatures capable on non-mini device series LO= 235/239 - HI= 244/248F
      Pressures on the various PRESSURE cookers range between 10.2 -11.7
      The minimum canning heat required is 240F
      Minimum pressure is 10 but totally depends on your altitude.
      You can attain the minimum pressure canning temperature and pressure easily with your IP.
      Can you use it to can? If you can adhere to pressure cooker requirements for heat/pressure yes, however if you mess it up you can't sue the company because they made the disclaimer for legal safety. My opinion. Yes, and I use mine this way. So far, so good.😉👍

    Do you recommend tightening all the lids prior closing the Instant Pot? I’ve always left them a little loose, and tightened the lids after

      I just tighten enough so nothing slips around during the pressure cooking, then I remove the ring for storage

    I didnt know Instant Pot sterilize. Does that mean only the Instant Pot with 'canning' can sterilize jars? or can i use the regular instant pot for sterilizing jars?

    This is the first video of yours I saw and if I hadn’t seen all the comments saying you usually talk during the videos, it would definitely have been the last. But because many comments make me think you usually have good videos, I will look for another one or two. White words on the screen are barely readable, especially when they only stay up for a few seconds.

    I’ve been having a hard time figuring out certain things on my Instant Pot Max. Because of your yt page, I successfully canned my pulled pork liquid sauce! I have a batch of refried beans...I set my chili for 7h hours instead of 7 minutes. Haha! So I made a HUGE batch of the best refried beans and really want to can them. Any tips?

      I figured out what I needed to do with the refried beans. They had to be pressure canned. I do have a great pressure canner so it turned out just fine. Thank you for answering me...and laughing!

      It has a higher pressure setting that goes up to 15psi

    Would 2 quart jars fit in there for canning? Or even 1 quart jar?

      No, its not deep enough for anything larger than pints.

      In my regular 6-qt Instant Pot three wide-mouth quart jars do fit-just barely and only if you arrange them so the vent isn't in the way. I use them to make yogurt directly in the container I store them in. The fit is tight. Some regular-mouth jars also fit, but about nine out of ten wide-mouths do fit.

    I guess I’m a bit confused, when I see some of the settings being changed. Is this something where you can put your jars in for pressure canning and feel safe leaving the house, while it pressure cans and, subsequently, releases steam, allowing the jars to seal, while still inside?

      do not ever leave the house when using a heating appliance like that. unless on crockpot mode

      Yes, for this reason I have not used it for any low acid foods. The risk with canning high acid foods is pretty minimal (because if there is any botulism it's very noticeable by smell and such) so I'm comfortable with using it for those foods.

      megparkgv this is no different than water bath canning... you’re only supposed to can high acidic things and not low acidic.....
