I just made these tonight and they are fantastic! I used half a cup of sugar substitute instead of the honey, and then they seemed like they wouldn’t hold together so I added an egg. Baked them just like the recipe, and they are deliciously crispy on the outside and soft in the middle. What a great surprise! I will be making these a LOT!

I have another recipe almost identical - except 2 bananas instead of butter - no sugar needed either. same - it doesn't make too many cookies, but have made it several times and not a cookie gets wasted! no need for long storage either - they don't last that long!
Yes, you can use 2 bananas. I have made this same recipe several times with 2 bananas 1 cup oat flour (grind own oats in coffee grinder) and 1/2 cup oats (not ground), then can add raisins, or cranberries, or chocolate chips, or walnuts, or cocoa powder, etc. You can also add a teaspoon of vanilla extract or cinnamon, etc. But the basic recipe is just bananas and oats/oat flour! bake at 350 degrees F for about the same time 13-15 minutes or maybe a few minutes longer - depending on oven. The only thing is, you can taste some banana - so if you don't like banana, then you might not like. I substitute a LOT of recipes with some sugar or all sugar by using ripe bananas. 😉
Some people believe it makes honey toxic to heat it, don't know if that is true, but heating does destroy good enzymes in the honey. I used equal amounts of maple syrup and I imagine they'd taste good w/demerara/turbinado sugar as well as palm coconut sugar, but not sure what amounts to substitute it w/ if you choose this option.

For a butter substitute try using Plain Greek Yogurt or Apple Sauce; Apple Sauce has always worked best for me.
