I've been cooking and baking for over 40 years in fine dining restaurants, hotels, hospitals even worked overseas 2003 I'm Texan and learn thru trial and error it's best to chop up the almonds this way when you're cutting the Biscotti's with your Bread knife it doesn't tear up the biscotti cookies. I'm glad I discovered your channel you do beautiful tutorials and now with the Christmas holidays I find myself assorted cookies this week I'm going to make some batch of tiramisu so it'll be perfect when I make a full size batch on Thanksgiving.😊
EnriqueScott-se3vp: Yes, I chop up the almonds also, but I use the Costco Tamari Almonds so that the flavour of the nuts is more assertive. Also, I add in a cup of Craisins, plus lots of bitter almond flavouring, and 1/3 cup of Amaretto.

Best of all I love what I do so I always share with my friends and family people that I love never go to waste I always have a jar of mixed chocolate and vanilla on the counter

I have been making this recipe for many years. I found it in the Fanny Farmer Cookbook 1978 edition. The only difference is, the almonds are chopped and toasted before adding to batter. I think chopped almonds are easier to cut at the end. Biscotti is the best cookie i have ever eaten. Viva Italy from Irish New Yorker!!!

I was unable to cut the pieces properly and the dough was not bounded may be coz of that it broke into pieces while cutting but butter quantity should be more for a perfect dough which on further half way we can cut into clean pieces...it was my experience 😍

Oh yes, they seem so intimidating, but once you make them, you realize it's not that bad. And the results are unbelievably better than the ones from the store.
