How to Make Cherries Jubilee!

  • Want an easy but impressive dessert for your next dinner party, family gathering or special celebration? Then you might want to watch this "How-To" video produced by CCM's Media Center and Professor Mark Cosgrove, chair of the Hospitality Management and Culinary Arts Department. In the video, Cosgrove shows how to make Cherries Jubilee, the flambéed dish created by Auguste Escoffier for one of Queen Victoria's Jubilee celebrations.
    Ingredients: 1/4 cup demerara sugar; 1 tablespoon Arrowroot; 1/4 cup orange juice; 1 cup dark, sweet cherries, rinsed and pitted (or use frozen pitted cherries); 1/2 teaspoon finely grated orange zest; 1 jigger Kirschwasser (cherry brandy); 2 servings vanilla ice cream

    Sir, add the Arrowroot to the orange juice and stir well , you will never have any problem to make them smooth !

      Not only that but the sauce ended up thin again because he let it go too long with the arrowroot. Arrowroot should probably be added toward the end and once thickened stop heat so you don't break the sauce, not unlike cornstarch.

    I use to make something similar, but easier.
    - St Dalfour Black Currant Fruit Spread w/ a tiny bit of water heated in a skillet until the consistency of syrup.
    - Add and heat fresh sliced peaches.
    - Remove from heat, and add brandy.
    - Return to heat until if begins to boil.
    - Pour over your best vanilla ice cream.
    I ignite it at the table with dimmed lights to see the blue flame from the burning alcohol.
    It impresses the guest at least once.

    Why don’t you mix arrowroot and a liquid beforehand to make a slurry and prevent lumps?

    Disolve the arrowroot in room temp orange juice before starting your process . Much easier.

    Man you have to look super close just to barely see any flame at all. Was like a 0.2 seconds before the camera went into a different angle.
    Before I was like what there was no flame what’s he talking about lol

    Although used in this video, these brands are basically cheap brandies flavored with cherry-flavored syrup or extract. Real Kirschwasser is fermented entirely from whole cherries only. It is more expensive, but the flavor will not be sweet or artificial - It will be complex and taste like real cherries.
    Real Kirsch is a great ingredient for any recipes requiring cherry flavoring, not just this one. It is also a good digestif or sipping brandy. So, it is well worth the price to pay extra.

    And if you had desolved the arrowroot in the orange juice first you wouldn't have the lumps to begin with...

      Nina Simone ... Yes, but not as disturbing as him trying to dissolve arrowroot in a hot liquid. Even a schoolgirl knows the arrowroot should be dissolved into the OJ prior to heating.

      It's a steel pan, there's no problem
      Crepes Suzette are prepared in the same type of pan using a fork and a spoon, it's no big deal

    It was made for the celebration of Queen Victoria's 60th anniversary of being on the throne, hence the name "Jubilee"

    Yes, which is why a real cook knows to dissolve the arrowroot (really?, not a true ingredient) in the juice prior to scalding it in a pan that was overly heated. Please, do not use this recipe, it's like trying to perform in a concert hall on an upright Yamaha.
