No cornstarch and no almond extract makes this Cherries Jubilee sound much nicer than the old school ones!

Love Melissa Clark. She’s truly a flaming redhead. Spectacular cook as well. Why no shrooms for the Steak Diane? Pretty traditional isn’t it? Also adds umami which she supplemented with fish sauce.

Love Melissa's attitude and her recipes, but I'm pretty sure that combining butter and oil doesn't actually increase the smoke point of the cooking fat. There was a video talking about this saying that since there is just less butter in general, there's less to burn/smoke, but that there are still those milk solids in the butter so they will still burn. I totally still do butter+oil too, but that's just food for thought.

Steak doesn't have the salmonella problem that poultry does. But I also would have washed my hands just from good habits.
