Super happy your back, I was making the steak and chicken seitan recently and wanted more content!!
1-1/4 c All purpose flour or GF
3/4 c Vegan/organic white sugar
1/2 c Cocoa powder
2 t Baking powder
1 t Instant espresso powder
1/2 t Salt
1 c Plant-based milk
1/2 c Light-flavored oil
1 T Apple cider vinegar
1 c Vegan chocolate chips

glad you're back! I used this recipe (minus the espresso and cacao powder) to make regular choc chip muffins, apple cinnamon muffins, and now banana, pecan, choc chip muffins! They've all been amazing! So grateful to have found this muffin base!! =)
