I made it and loved it. My kids weren't crazy about the crunch from the almonds. That's ok - more for me! I had some leftovers last night for dessert with whipped cream. YUM!
I’m allergic to almonds, but I’ve been making a yummy fauxtmeal using coconut flakes and hemp hearts! I throw in a small amount of chia and flax seeds too. The key is to soak the seeds overnight. The taste and texture is spot on.
I’ve been so busy with work I haven’t had a chance to look at my YT notifications for a few weeks. Sorry for the delay. I soak my seeds overnight in water. I use a combination of hemp hearts, flax and chia. My ratio is 2:1:1. For example if I use a tablespoon of hemp hearts, I use a half tablespoon of chia and a half tablespoon of flax. I use brown flax, but you could do golden if you prefer. I buy only organic seeds, and store them in the frig so they don’t become rancid. I usually soak enough for a few batches since the mixture seems to keep well. Then I mix however much of the soaked seeds I want for that meal with the coconut flakes, and light coconut milk until it’s a texture that I like. You could use any alternative milk that you like, or even heavy cream, but if you do, I’d suggest thinning it with water so it doesn’t become like a paste. I eat mine cold, like overnight oats. If you want it warm, I’d suggest doing so gently on the stovetop. You can also bake it like she does here, but I’ve never actually baked my seed fauxtmeal. If it’s cooked too hot, or microwaved, then you’re loosing nutrients. I do have my recipe written down, but I am not where I can access it now. I’ll try to remember to come back and post it here later.

I made this for my kids because they love oatmeal for breakfast but I’m trying to cut way down on their sugar intake. They both love it (3 & 6 yrs old)! I made on the weekend and I have enough to feed them both 3 mornings a week. I used whole almonds instead of sliced, processed in food processor, desiccated coconut, and monkfruit sweetener. I also took another commenters advice and used unflavoured gelatin instead of collagen. Tastes great and keeps my kids fuller for longer. Thank you!

I got the books I ordered. I got the one for breakfast after seeing this video. But I also saw a desert one. The one with a lemon desert and also tall glass with yummy in it, lol. Don't know what that is yet. But anyway the best. This is wonderfully laid out. Even has extras, like a list of all substitute sugars and other list to help you choose. Lots of pictures and so well done with them as well. A must buy. I just have to share this because I couldn't be happier and it is not easy to find a good cook book with this kind of diet.

Great recipe!! I subbed Isopure for collagen added Hemp seeds and sprinkled the almonds on top. I've done a version with a few tbsp of pb fit too. I think it's better that actual oatmeal, great stuff 💙

@@22ERICSHELLY No, it says I have already subtracted any erythritol (because it has zero carb impact) but that the carbs are total carbs, meaning they include the fiber. So if you want to get net, just subtract the fiber.

If i like my oatmeal more on the soupy / wet side, can i simply add extra heavy cream and butter and cook on the stove top until the "oats" have softened??? I seriously miss oatmeal so much, (but the thick casarole consistency just isn't for me). ❤
Ok, I am going to have to do this one over. When you say a 1 quart dish - I am lost. If you say a 9x13 or 7x11 or 4x4 I can get it right. A one quart dish doesn’t help me. So I found a small baking dish and imagined if I poured a quart of liquid in it, would it fit or overflow? I concluded it would fit. So I used that. It filled it nearly to the top. I was worried about it rising and overflowing so I put a pan underneath it to catch any drippings. Thankfully there were none. When the time was up, it did not jiggle ‘just s little’. It jiggled a lot. I gave it a few more minutes. Then I let it cool for 20 minutes. When I scooped a corner out, the flood underneath filled the void. Still I scooped up a bit more than half a cup’s worth. The chewy parts from the bottom, sides and top was quite good. But the runny part was just batter and the almonds and coconut did not soften at all. So I shall try again tomorrow with a larger pan. I just hope the other one I have is big enough that the thickness can cook through. Edit: ok I went to Amazon and fount a 1 quart glass dish. The dimensions were 8.5 x 5x5. I ran to the kitchen with a tape measure and mine is 6.5 x 5.5. I don’t know if that extra two inches will bring the depth of it down enough to cook in the center. I may go a bit larger. I almost feel like making it spread out and bake it like a brownie and then crumple it up with some cream. We’ll see…

What's the best way to reheat leftovers? I'm single and think I can get 4 servings out of it. Reheat a single portion in a small pot over the stove with a bit of water? Or can I microwave it, with a little bit of water, also?
Wow!!! My kitchen smelled AHHMAZING while baking this! It’s super rich and decadent!!! I had to give mine 30 min but maybe need more time as after cooking and scooping into a bowl it kind of collapsed and spread out. Is there any way to cut down on the butter as it seems to be seeping everywhere and if so how could I possibly half the butter? I’m new to this so looking for tips. Would this also work with half & half (10% cream)?
I didn't have the first time I made it so I left them out. It was great, but once I made it with the collagen it really makes ALL the difference in texture so hopefully you'll pick some up.
Someone else noted that the butter pooled into the bottom of the dish. Carolyn told her that the collagen absorbs the excess oiliness similar to what flour would absorb.

Reheat a single portion in a small pot over the stove with a bit of water? Or can I microwave it, with a little bit of water, also?
You can reheat it in portions in the microwave, no water is necessary but just do 10 seconds at a time and stir in between until warm to your liking.

Wow!!! My kitchen smelled AHHMAZING while baking this! It’s super rich and decadent!!! I had to give mine 30 min but maybe need more time as after cooking and scooping into a bowl it kind of collapsed and spread out. Is there any way to cut down on the butter as it seems to be seeping everywhere and if so how could I possibly half the butter? I’m new to this so looking for tips. Would this also work with half & half (10% cream)?
You could cut back by 2 tbsp, I think. I wouldn't do more than that. Did you use collagen? That usually keeps the butter from separating.

I didn't have the first time I made it so I left them out. It was great, but once I made it with the collagen it really makes ALL the difference in texture so hopefully you'll pick some up.

Someone else in the comments section said she used one packet of unflavoured gelatin. Hope this helps.
Someone else noted that the butter pooled into the bottom of the dish. Carolyn told her that the collagen absorbs the excess oiliness similar to what flour would absorb.
