I happen ro have the smaller baking tray, so will line w/parchment, fill w/ all batter, cut when done into squares! Just cant justify buying one more "gadget"! 81 yrs old, getting rid of "stuff"!😂😂
Never use parchment paper. Think of all the pollution in cutting the trees, transporting them, manufacturing the paper, transporting it. Plastic wrap, foil, parchment and waxed paper are totally unnecessary and cause global warming.

I used parchment paper to make a rectangle (folded and stapled corners) for my cottage cheese bread wrap. It contained the mixture and made a nice sized rectangle wrap without overdone edges.
Please don't use parchment, waxed paper, foil or plastic wrap, they are totally unnecessary and result in terrible amounts of pollution of land, air and water and increase global warming and climate change. Helping the planet requires that we give things up. Our ancestors cooked without them and we can too. Think about everything you buy, especially if it is made from petroleum. GIVE THINGS UP!

I watched a girl make them on 1/4 sheet trays from Costco. Her's also had consistency, and she cut across 4 flat breads to each pan. I thought I might try that way till your video today. Hers may work if you want wraps, but I love yours for the sandwich! Thanks for another great video!
Keto Twins used 16 oz cottage cheese, 4 eggs, 2 tsp Italian seasoning. Poured onto a half sheet pan, filled it edge to edge. 350° for 40 minutes. Cut into 4 pieces width-wise. Filled with sandwich ingredients and folded over.

I made the flatbread your way but poured a small amount in 2 parchment lined metal muffin top sections and it worked great. I used the rest of the batter in a silicone rectangular pan I have for keto egg pasta which kept it from getting burnt edges. That seems to be the trick, filling a mold so it doesn't get too thin. Your way is great for tacos, sandwiches or I guess you could cut them into strips for noodles/pasta. I'm trying some for lasagna tomorrow. Steve, thanks for keeping the great recipes and videos coming!
I'm so grateful you posted this recipe. I wanted the viral cottage flatbread to work but alas, not for me! Then this recipe appeared and first time success! The silicone baking sheets are perfect for six round buns!. I bought two so I now have 12 buns for breakfast sandwiches that I will use for traveling next week. Thank you Steve for experimenting so I don't have to!!

Just made these. FLAVOR is GREAT! But the consistency was a little surprising. Not unpleasant, but the texture of an omelette. However, there are none left, lol so that speaks for itself. Family all gave a thumbs up! ❤ PS… 🤦♀️ went back and watched your video again… AND GUESS WHAT I DIDN’T DO? I didn’t flip them over for another five minutes. 😂 operator error. lol. Will definitely be making these again.

Hi Steve! My cottage cheese buns came out quite well. I tastes two of them(just to make sure). They tased quite good on their own. I have a collection of fresh egg white since I make Vietnamese egg coffee daily. I swapped the whole eggs for egg white by weight. They came out also. Thanks Steve! Until next time👍

I have been playing around with cottage cheese alot and trying to find nice recipes to use. I used 100 grams of cottage cheese, one egg and 50 grams of almond flour. I didnt blend it just combined it all with a spoon. Added salt and garlic and baked it in the oven until it was brown around the edges. I used this as a pizza crust for my husbands dinner and he was amazed and said it was the best pizza crust i have made so far. I would like to find a way to remove the almond flour becuz of the high calorie and we try to stay carnivore as much as possible. Thanks for the new video and new tips and ideas! ill be trying this!

Right? I feel like the crackers saved my household from; well never mind. I NEEDED something crunchy. I'd been making kale chips...Steve saved me. My family heard a comedian say, Kale chips aren't food they are a brush fire. LOL
I had small silicone pans for mini pizzas that I used while back with indigo Nili's egg white bread, so I doubled recipe added 1/4 tsp xanthan gum and made 6 small individual pizza size crusts in them. Same as you, I un molded and flipped over to dry them out. I also tried adding 1/4 cup parmesan cheese, fresh grated kind, and they were great, nice structure 😊 also greek seasoning sprinkled on top just before baking is the bomb 💣
I tried this method and LOVE it for breakfast sandwiches and mini pizzas- so far😊 I don’t like the full recopiée for wraps as you didn’t. What I did was combine both of your ideas. For a wrap type situation, I used 1/3 cup of cottage cheese, 1 egg and seasoning. Then I spread that in a round on a piece of parchment and cook it for 30 minutes. ( I like the brown effect personally. ) I fill and fold in half. Wonderful! If I’m using this to make a larger pizz, folded in half, I cut the cook time to 25 minutes, flip, top the pizza and broil until pep is crispy, then fold in half and let rest. Most excellent. Thank you for this video because I can have beloved breakfast sandwiches !

I did notice that one person highly recommended using the large curd cottage cheese, which I couldn’t find. And yet another person whose one cup and one large egg turned into a really thick batter used a magic bullet. But I particularly like having the individual “buns“ what a great idea! Thank you! Glad you gave this recipe another iteration. I tried it in a mini dash chaffle iron, using two eggs rather than one, and it was a disaster. I'll stick to making plain flatbread rectangles and circles. Lol
I wasn't ever really interested in flatbread. I wouldn't know what to do with it even if it tasted amazing. But THIS looks much more useful! I already have the whoopie pie pan which I use with an egg white bread, but that recipe is a super pain with lots of ingredients and you have to whip egg whites forever, plus it's still a bit styrofoamy, but fulfilled a need. Two ingredients and a simple few seconds in a food processor really appeals to me. I am going to try this. Thank you for the great idea!
Thanks for the recipe and the modification explanation! I made this but I modified it further - added shredded chicken breast (used a hand mixer on cooked chicken) and mozzarella - so it's a mix of the chaffle recipe and this one, sort of. Made four long oval 'garlic bread' sized pieces in my silicone mold for that. I am going to use them for pizza bases. I've made them before with just the chicken, egg, and mozz, but I figured if I added in the cottage cheese they'd be more like this cottage cheese bread. I used 4 oz chicken, 4 oz mozz, 1/2 cup cottage cheese, and one egg to fill the four molds. I've frozen them for future use but I did break off a corner, tasted good! Will be good pizza bases. Two carbs each,

I agree with you .... but my brother does not eat mammals, so turkey sausage is his best option. Also, anyone who eats kosher or halal. I happily thank the pig for giving his life so I can eat pork.
Since they can be toasted too, I bet they would be great with cream cheese, butter or a nut butter. Thank you for consistently testing things out to see if recipes can be altered and still work out.

Even though I’m a staunch Chaffle maker, I’ll have to try these. I have a couple Ambiano mini waffle makers that have the wells on one side and a flat plate on the other (with an “embossed” pattern) so they look more bun-like when I make all kinds of sandwiches. I’m always into buying more cooking tools so I got excited to see the silicone molds. Thanks for your excellent cooking videos!
I also have had trouble with this flatbread. After watching how you made them, I invested in some 6" silicone cake pans. Then made my flatbread. Worked like a charm. I got about 4 1/2 flatbreads. When I do it again I will measure how much I am putting in each so the breads are more even. Oh yeah, I drained the cottage cheese before using and I think this also helped.
Exactly 💯 the recipe I was hoping to find. Thank you soooo much! Why? Because I simply don't eat breads that are thick in height. As I have aged (70s now) I find thick breads are harder to swallow easily. Thin FLATBREADS when used as sandwich breads REDUCE THE CHOKING FACTOR for me. Many older Senior Citizens experience this and your recipe for FLATBREADS recipe looks like the perfect size for smaller sammies. I will definitely make some of these TODAY.

"Bread" might be a bit of a misnomer though - We're going with "Pancakes" here. (3 of these little guys have as much protein as a scoop of whey powder... and with a little nut butter - taste 100% better! ) Thanks again!
I've had good luck with the original recipe unless it's tomorrow, then it cracks for me too even if I warm it. But what a good idea making the little ones. I like that idea much better than making wraps. Very cool. Hopefully they won't crack when cooled. Thanks for your ongoing content.
The nozzle on that avocado oil allows you to do a stream or a spray. It's all in the way you push the nozzle. But be warned, when it sprays it sprays everywhere! Can't wait to try these. I've been enjoying them as wraps for a few weeks now.
I did this with the Muffin top pan exactly like you are doing, I have the exact same pan! Great minds think alike. I've tried every variation of keto carnivore bread and I didn't like any of them as well as this, plus this is super easy. No whipping of egg whites always makes me happy. I think next time I'm going to double the batch and pour it on the parchment lined baking sheet because one batch is pretty thin and gets Brown and crispy on the edges and I have to cut it off. I'm thinking a double batch would be thick enough and then I just cut it up to the size I want. Really enjoy your videos! Seriously guys, try this recipe. Every time I eat it I'm thinking, "how is this good for me??" ✨

Another amazing post and sounds like it will work really well. That's the detractor about making homemade tortillas, Indian fry-bread or naan-type breads is that you have to fry or cook just about one or maybe three at a time. I about gave up on the flatbread but you have given me new hope! I liked the taste of my first attempt but I had the same type of issues. These will be easier to store and pop in the toaster like you showed. I only have donut pans so mine are like mini bagels. Thank you for this great video!
I have those exact mat here, so I will try them out soon(ish). I will also try to add in some Egg White Powder to see whether this helps. I need to see where I can use my 4 pounds of egg white powder, maybe reduce an egg or just adding some might make them slightly different. Who knows, great idea Steve, I love your work.
I love the round silicone molds. I bought them to get consistent sized whoopee pies. But for myself, I use them to make burger buns with Victoria's keto flour.

My mission is to try this over the weekend. I saw the Keto Twins had tried this as well. This is a much better than buying expensive bread.
The twins made "noodles" by thinning the mixture over a large cookie sheet. They made Lasagna.

I have been playing around with cottage cheese alot and trying to find nice recipes to use. I used 100 grams of cottage cheese, one egg and 50 grams of almond flour. I didnt blend it just combined it all with a spoon. Added salt and garlic and baked it in the oven until it was brown around the edges. I used this as a pizza crust for my husbands dinner and he was amazed and said it was the best pizza crust i have made so far. I would like to find a way to remove the almond flour becuz of the high calorie and we try to stay carnivore as much as possible. Thanks for the new video and new tips and ideas! ill be trying this!
@@teresacoburn6559 have you tried lupin flour ? Keto twin replaced the almond with lupin in their chaffle recipe.

Right? I feel like the crackers saved my household from; well never mind. I NEEDED something crunchy. I'd been making kale chips...Steve saved me. My family heard a comedian say, Kale chips aren't food they are a brush fire. LOL
I had small silicone pans for mini pizzas that I used while back with indigo Nili's egg white bread, so I doubled recipe added 1/4 tsp xanthan gum and made 6 small individual pizza size crusts in them. Same as you, I un molded and flipped over to dry them out. I also tried adding 1/4 cup parmesan cheese, fresh grated kind, and they were great, nice structure 😊 also greek seasoning sprinkled on top just before baking is the bomb 💣

I tried this method and LOVE it for breakfast sandwiches and mini pizzas- so far😊 I don’t like the full recopiée for wraps as you didn’t. What I did was combine both of your ideas. For a wrap type situation, I used 1/3 cup of cottage cheese, 1 egg and seasoning. Then I spread that in a round on a piece of parchment and cook it for 30 minutes. ( I like the brown effect personally. ) I fill and fold in half. Wonderful! If I’m using this to make a larger pizz, folded in half, I cut the cook time to 25 minutes, flip, top the pizza and broil until pep is crispy, then fold in half and let rest. Most excellent. Thank you for this video because I can have beloved breakfast sandwiches !

And yet another person whose one cup and one large egg turned into a really thick batter used a magic bullet. But I particularly like having the individual “buns“ what a great idea! Thank you! Glad you gave this recipe another iteration. I tried it in a mini dash chaffle iron, using two eggs rather than one, and it was a disaster. I'll stick to making plain flatbread rectangles and circles. Lol
The Dash Mini just runs too hot for something like this, in my experience.

I wasn't ever really interested in flatbread. I wouldn't know what to do with it even if it tasted amazing. But THIS looks much more useful! I already have the whoopie pie pan which I use with an egg white bread, but that recipe is a super pain with lots of ingredients and you have to whip egg whites forever, plus it's still a bit styrofoamy, but fulfilled a need. Two ingredients and a simple few seconds in a food processor really appeals to me. I am going to try this. Thank you for the great idea!

Thanks for the recipe and the modification explanation! I made this but I modified it further - added shredded chicken breast (used a hand mixer on cooked chicken) and mozzarella - so it's a mix of the chaffle recipe and this one, sort of. Made four long oval 'garlic bread' sized pieces in my silicone mold for that. I am going to use them for pizza bases. I've made them before with just the chicken, egg, and mozz, but I figured if I added in the cottage cheese they'd be more like this cottage cheese bread. I used 4 oz chicken, 4 oz mozz, 1/2 cup cottage cheese, and one egg to fill the four molds. I've frozen them for future use but I did break off a corner, tasted good! Will be good pizza bases. Two carbs each,

Even though I’m a staunch Chaffle maker, I’ll have to try these. I have a couple Ambiano mini waffle makers that have the wells on one side and a flat plate on the other (with an “embossed” pattern) so they look more bun-like when I make all kinds of sandwiches. I’m always into buying more cooking tools so I got excited to see the silicone molds. Thanks for your excellent cooking videos!

I also have had trouble with this flatbread. After watching how you made them, I invested in some 6" silicone cake pans. Then made my flatbread. Worked like a charm. I got about 4 1/2 flatbreads. When I do it again I will measure how much I am putting in each so the breads are more even. Oh yeah, I drained the cottage cheese before using and I think this also helped.

Exactly 💯 the recipe I was hoping to find. Thank you soooo much! Why? Because I simply don't eat breads that are thick in height. As I have aged (70s now) I find thick breads are harder to swallow easily. Thin FLATBREADS when used as sandwich breads REDUCE THE CHOKING FACTOR for me. Many older Senior Citizens experience this and your recipe for FLATBREADS recipe looks like the perfect size for smaller sammies. I will definitely make some of these TODAY.

Tks for the recipe! I bought the silicone pans and they turned out great! I am working on how to brown up the flip side though - a little undercooked for me. "Bread" might be a bit of a misnomer though - We're going with "Pancakes" here. (3 of these little guys have as much protein as a scoop of whey powder... and with a little nut butter - taste 100% better! ) Thanks again!
I've had good luck with the original recipe unless it's tomorrow, then it cracks for me too even if I warm it. But what a good idea making the little ones. I like that idea much better than making wraps. Very cool. Hopefully they won't crack when cooled. Thanks for your ongoing content.
The nozzle on that avocado oil allows you to do a stream or a spray. It's all in the way you push the nozzle. But be warned, when it sprays it sprays everywhere! Can't wait to try these. I've been enjoying them as wraps for a few weeks now.
I'll have to experiment with that and see. Maybe I'll lay down a plastic tarp first, just to be safe... 😉

I did this with the Muffin top pan exactly like you are doing, I have the exact same pan! Great minds think alike. I've tried every variation of keto carnivore bread and I didn't like any of them as well as this, plus this is super easy. No whipping of egg whites always makes me happy. I think next time I'm going to double the batch and pour it on the parchment lined baking sheet because one batch is pretty thin and gets Brown and crispy on the edges and I have to cut it off. I'm thinking a double batch would be thick enough and then I just cut it up to the size I want. Really enjoy your videos! Seriously guys, try this recipe. Every time I eat it I'm thinking, "how is this good for me??" ✨

Another amazing post and sounds like it will work really well. That's the detractor about making homemade tortillas, Indian fry-bread or naan-type breads is that you have to fry or cook just about one or maybe three at a time. I don't have much silicone but I may need to get these bun makers! I appreciate you including the link! Best, from Colorado!

Amazing format for this recipe !!! So much more versatile than these huge, fragile sheets. I just found a 4" version of the molds (20$ canadian...) which will be perfect for breakfast sandwich, club sandwich and other goodies. Very grateful for this channel ! 💛🙏
I about gave up on the flatbread but you have given me new hope! I liked the taste of my first attempt but I had the same type of issues. These will be easier to store and pop in the toaster like you showed. I only have donut pans so mine are like mini bagels. Thank you for this great video!
I have those exact mat here, so I will try them out soon(ish). I will also try to add in some Egg White Powder to see whether this helps. I need to see where I can use my 4 pounds of egg white powder, maybe reduce an egg or just adding some might make them slightly different. Who knows, great idea Steve, I love your work.
I love the round silicone molds. I bought them to get consistent sized whoopee pies. But for myself, I use them to make burger buns with Victoria's keto flour.
