Hi Carolyn! Thanks for sharing this recipe. I made them yesterday substituting vanilla protein powder since that's all I had. I used my regular Cuisnart waffle maker and got exactly 6 full size waffles. They were perfect. The batter was nice and thin so it easily spread across the waffle plates. They tasted great and definitely put me in mind of the Eggo waffles I loved before keto. 😋 I froze the extras to enjoy another day. Thanks again for your great recipes. Lisa
I have that same waffle iron but I like this recipe: two eggs, 2 Tbsps. Equip Prime Protein powder (unflavored), 1/8 tsp baking powder, 1 Tbsp. beef gelatin and 3 Tbsps milk (I use raw A2 Golden Guernsey milk but any milk will work). Mix the milk, eggs, protein powder and baking powder in a blender. Then add the gelatin and mix again. Makes 6-8 mini waffles (one serving) depending on the size of the eggs. They are very light and fluffy. I top with KerryGold butter and Rx Sugar Allulose maple syrup.

I appreciate this bc I can't have almond flour and have been experimenting w beef protein powder in recipes and it always comes out rubbery/sticky. From your recipe, it seems I'm missing gelatin (I was using collagen) and this may be the missing link to awesome waffles my body can tolerate! Woot! Thanks so much for posting this! 🤗
I like this recipe better since almond flour is sooooo high in oxylates it should be avoided by anyone with depression tendencies. Had to cut nuts and greens out of my diet completely. Huge improvement in brain fog and mood.
Brava! This is by far the best low carb waffle recipe I have tried so far. With all of the other recipes I tried, i was not impressed with the taste and texture of the waffles, and/or they were not solid and easily fell apart. These waffles came out great in my waffle maker, firm and slightly crispy on the outside and soft in the center, and tasted great! For some reason my batter was much thinker than yours, and I had to spoon it into my waffle maker. I followed your recipe, except I used a Tbsn of egg white powder instead of egg whites, and added a 1/4 tsp. of xanthum gum to hold my waffles together better.

Carolyn! I have a 4 hole Dash to make chaffles. When somebody is making something and says it's done when the light goes out i LOL. That's not how it works. I usually use a timer. Love your recipes ........................ 😎👍👍

I love love love all of your recipes (especially your almond flour pancake recipe which I make for company!). But I've recently been taken off of almond flour due to the high amount of oxalates in almonds and the fact that I form kidney stones. I'm going to try this with pecan flour, which is much lower in oxalates. Have you tried subbing pecan flour in any of your recipes and if so, what is the biggest difference?

I'm going camping for 7 days. We will have block ice in our cooler for fridge items. How long would you say these would last in this situation? I was keto for 10 years. Recently I discovered my real problem is oxalate Overload. So I now have to avoid foods which have high oxalate. Sadly that means no almond flour. I can have coconut flour tho. I really miss Caroline's blueberry scones & brown butter cinnamon donuts. I have to see if I can switch over to coconut flour somehow. My "healthy foods" were killing me.
I keep telling myself that I need to make these. I saw the recipe in your newsletter a while back, but I'm always in such a rush to rat and leave for work. Do they freeze well? I'd love to be able to freeze them and just pop them in the toaster for a quick breakfast. Side note: I made your chocolate chip cookies. They are fantastic! Even my very picky husband likes them. As is my typical habit, I used a little less sweetener, because I don't care for super sweet cookies, and they're nearly perfect. The flavor is there, but there's a tiny texture thing going on. I think I have an idea. I'll give it a shot and let you know if it actually works.

I've never greased a dash machine as they are non-stick and have never had an issue with any sticking. so are you pre-greasing just to help making them more crispy?
The problem with the keto waffle maker is that the waffles are too small. I like to make burgers and my burgers are larger than the bun. That doesn't work. Besides, it doesn't fill me up but I can't eat two of them so a larger round waffle maker would be great.
I made these today and they weren’t crisp at all…..even after putting them in the oven for 10 minutes. I’ll toast them to reheat the next time but if they don’t get crisp I’ll probably have to throw them out. I hate wasting ingredients but I also don’t want to eat something I don’t like when choices are so precious. I love many recipes from Carolyn and I have one of her cookbooks….but these were a big disappointment for me. Sorry.

Maybe I need gluten. Lol. Anyway. I only eat two small meals a day and I don’t want to spend a meal on something I don’t like. (Although I did today since I made them for brunch). @@twinfin8571 what sweetener did you use? Because he used anything with Allos or xylitol, they won’t get crisp.
But even if they don’t crisp properly, they’ll still be delicious. Why would you throw them out if they taste good?
