  • CHICKEN-N-DUMPLINGS
6 to 8 cups Chicken Broth
    1 Chicken boiled and deboned
    Dumplings:
1-1/2 cup (204) grams ALL PURPOSE FLOUR
2 teaspoons (10 grams) BAKING POWDER
    1/2 teaspoon (3grams) SALT
1/2 cup (118 grams) (4 ounces) CHICKEN BROTH
2 tablespoons (28 grams) VEGETABLE OR CORN OIL
Mix dry ingredients then add the liquid. stir to bring together and roll out onto a floured surface very thin, 1/8" thick. Use a pizza cutter to cut into 1-1/2 inch X 3" rectangles.
    MILK AND BUTTER FOR FINISHING.
Boil and debone chicken. Strain broth. Bring broth to a boil and add dumplings a few at a time and let rise to the top before adding more. cook for five minutes after adding the last dumpling. Turn on low and add the cooked, chopped chicken, a few tablespoons of butter and a pour of milk. let warm and serve. I make cornbread and peas to accompany them.

My 85 year old mom makes great dumplings. Before the pandemic her church would have big dinners. She would make a ten quart canner full of dumplings. They were always gone before the dinner was over.

That's a meal fit for a king, for sure! And its just like my mom made. Not until she got much older did she let the girls even help in the kitchen and she always cooked good food from scratch for the family. But when she got older she asked me to help roll out the dumplings and I saw why she didn't make it so often anymore. That can be hard work if you aren't in good shape or just plain old. I think cooking was as much for her enjoyment and relaxation as anything else. She looked so sad when she finally had to stop it altogether and we girls had a whole new appreciation for her cooking.

Of course several more friends also showed up to eat! They love it when I cook for them!
Yes I also add butter and milk at the end when they are simmering.
A big pan of cornbread and the were set for the day.I did put in crockpot so they could keep it simmering till they were ready to eat! Good old Southern Meal! I enjoy your videos!

Miss Amy, you're the first one I've seen who rolls out your dumplings the way my mama taught me! I was born and raised in southern MS, though also lived in Nola and Slidell when I was little. Never thought to use broth in masking them, mama always used ice water. Haven't had chicken and dumplings since my dad passed away in 2020. Only my daughter and I eat them, so just haven't thought of it.I add butter and milk to mine, too. And sprinkle a bit of parsley on top.😊👍

Mmmmmmm Mmmmmmmm Good stuff . I made some Thursday myself ( pretty much the same way you did it with a couple exceptions). I used the Mary Bees frozen dumplings . I add about 1/4 cup of flower stirred into 1 cup of water or broth in the pot to thicken them up, I cheat on cooking the chicken and broth . I buy a good sized rotisserie chicken at Sam's Clun ( $4.99) and throw it in a pot of water and cook it for about an 30 minuets or so to make my broth , Take the chicken out and tear it up to be added later. Strain out all the bones gristles and skin etc. The rest is pretty much just what you did except after I got all my ingrediencies in the pot I dumped it in my crock pot and let it cook on low till supper time . I made some homemade biscuits and cooked some green beans to go along with ours :-) I am a new sub , Looking forward to seeing what you are up to next :-)

My goodness! This looks so yummy Amy! Its funny how we make the same foods as other countries, but call them different names. If we were in Italy it would be called Pasta! Hahaha! Same thing almost, just no baking powder.
It looks delicious, I sure am gonna try making them. Most of the time I cook lage portions because I came from a family of six kids. And when we all got together it was alot of people. So now I have to put alot away in the freezer or give it away. For myself I make large pots of soup from the Azores , and put in small containers so I can enjoy through out the month. Living alone you have to know how to store extra food thats for sure! If you have an email I can send you the recipe for the soup I make. It's made with linguica. Its wonderful!

Next time someone asks me for my recipe (which is my grandmother’s recipe) for chicken and dumplings, I’m going to send your video to them. One exception, I add one beaten egg to the dumpling portion. She told me to beat the egg in a coffee cup and add milk to the top. A whole cup of milk would make them too sticky. I also add chopped onion and celery to the chicken while it is boiling.
