- EASY CHEESY CHICKEN AND SPAGHETTI
1 ROTISSERIE CHICKEN (store bought), deboned and chopped
2 tablespoons butter
1 tablespoon olive oil
2 (10 ounce) packages Frozen SEASONING BLEND (green and red bell pepper, onion, celery and parsley chopped)
1 to 2 (10.5 ounce) cans CREAM OF MUSHROOM SOUP
1 (10.5 ounce) can CREAM OF CELERY SOUP
1 (10 OUNCE) can RO-TEL DICED TOMATOES WITH GREEN CHILIES
4 CUPS chicken broth PLUS more as needed
1 - 4 ounce jar diced PIMENTOS with the juice
1 to 2 (12 ounce) packages of SPAGHETTI NOODLES
1 pound VELVEETA cut into cubes for easy melting
juice of 1 LEMON
1 cup SHREDDED CHEDDAR CHEESE for topping
1 to 2 cups FRENCH'S FRIED JALAPENO CRISPIES for topping
Heat butter and olive oil in a large skillet. Add the vegetables and cook for 3 to 5 minutes. Add the chicken broth and noodles. Cook for about 5 minutes until they are beginning to cook. They will finish cooking in the oven. Add the mushroom soup, celery soup, pimentos and ro-tel tomatoes. Stir together and add the lemon juice, and chopped chicken. Add the velveeta cubes and stir. Place the lid on to let the cheese melt with the heat on very low. Stir one last time and pour into a 9 X 13 BAKING DISH. Top with shredded cheddar and fried jalapeno crisps. Bake for 20 minutes on 375 degrees F COVERED then uncover and bake a few more minutes to crisp the top.(optional) Serve with some toasted bread. Any leftovers can be frozen and baked another time too!
God has richly blessed John because he is a godly levite of his home. When John prays I weep tears and pray to God so my husband would join hands with me to pray together and bless our home. I'm a mess.. but it's a good one. Love you both. Jesus is coming everybody.
Keep on praying for your husband, your prayers will be answered one day. We had a couple in our church, the wife prayed for her husband for over thirty years, and when he reached retirement he finally gave his heart to the Lord, so keep on praying sister, God hears the prayers of His children!!!!!
@@janetsellers1384 Thanks Janet, I trust Our Father to move on this, even today.. it's not been modeled before him, his dad was an extremely quiet soul, read his Bible.. and all praying was left to mom. Us northerners just don't have that Bible belt rich heritage..

I'm cooking now for our house and my mom and grandpa. My parents have lived with my paternal grandparents for many years. My dad passed unexpectedly in December 2021 and my grandma, his momma, joined him in Heaven exactly 4 months later. So my mom now lives with her father in law and I now cook as often as possible for them. I know my grandpa will love those jalapeños. Everytime I watch U, Amy....I come away thinking U should have your own National program. Like on the Food Network or similar network show. I have a chicken spaghetti recipe that’s very similar. I use to make it for my kids and their tennis teams. There were no leftovers. But, now that I know about the fried jalapeños, I’ll be adding those on top!

I break spaghetti in half, also. Makes serving easier. When I do it for a potluck or funeral, I break in thirds.This chicken spaghetti looks delicious!

This looks amazing especially after you added the Rotel! Love that stuff! I had never even heard of chicken and spaghetti until my first visit to Shreveport before I decided to move. The lady I was staying with told me that was what she was making for supper one night. This was in my mi 20s so it’s been a long time ago. I remember her cooking on the stove top so I don’t think she made it into a casserole. It was really good though. I will probably make in it a casserole. There’s just one of me here so unless I share with my sweet neighbors, I love to have things in the freezer. I’m rarely able to stand long enough to cook anymore. This makes me sad but there are so many people in a worse shape. You are a bright Ray of sunshine on even my harder days. Nevervthink you are not appreciated! You are loved, John too. Thank you for your friendship. It means a lot. 💜🙏🏻

Pampered Chef website....yes...their stuff is a touch pricey, but if you can afford something more expensive, there's no reason why you should guilty, and truth be told, if someone makes comments like you mentioned, that's simply blatant a "Sour GRape attitude becauset they can't afford pricey equpment.
