POT PIE & WINTER STORM FARM DAY

  • CHICKEN POT PIE
    1-1/2 to 2 pounds Boneless Skinless Chicken Thighs seasoned with salt & pepper, Boiled, drained & chopped (BE SURE TO SAVE YOUR BROTH)
    1/2 stick, 4 TBSP BUTTER
    1/2 cup chopped yellow or white ONION
    1/2 cup chopped CELERY
    1 cup chopped POTATO
    1 package frozen PEAS & CARROTS
    1 TBSP dried PARSLEY
    1/2 teaspoon THYME
    SALT & PEPPER
    2-1/2 cups CHICKEN BROTH (saved from boiling the chicken or canned)
    1/2 cup ALL PURPOSE FLOUR
    1 teaspoon ground TURMERIC
    1/2 cup HEAVY CREAM
    1 box thawed PUFF PASTRY
    I used English Peas but other options could be green beans, parsnips, turnips or sliced mushrooms.
    Melt BUTTER in a large pan and add parsley, onion, carrots, peas, celery, potatoes and thyme. Season with salt and pepper. Cover on medium heat and let cook until tender about 5 minutes stirring occasionally. Sprinkle in flour and stir it to incorporate and let it cook for about 1 minute. Add the chicken broth and TURMERIC and stir. Let cook for a few minutes to thicken. Turn off the heat and add the chopped chicken and the CREAM. Set aside to cool a bit. The Turmeric gives the filling a golden color. Turmeric has health benefits such as the potential to prevent heart disease, Alzheimer's and cancer. It's a potent anti-inflammatory and antioxidant and may also help symptoms of depression and arthritis!! Spray the inside and outside of an 8 X 11 INCH casserole dish with non stick olive oil cooking spray. The recipe calls for an egg wash but I didn't want to waste an egg! As you can see in the video I used 4 pieces of the pastry. I had 2 pieces left over and put back into the freezer for another time. May a dessert time!😋 BE SURE TO PLACE THE PASTRY ON TOP AND FOLD ON THE OUTSIDE OF THE DISH. I KNOW THIS BECAUSE ONE TIME I JUST PUT IT ON TOP OF THE FILLING AND IT SANK INTO THE FILLING! SPRAY THE PASTRY TOP WITH THE OLIVE OIL SPRAY OR USE AN EGG WASH, CREAM OR BUTTER. SPRINKLE THE PASTRY WITH SEA SALT FLAKES AND PEPPER. PLACE into a 400 degree F oven THEN TURN THE OVEN DOWN TO 375 DEGREES F and bake for 45 minutes until golden brown. Let sit for about 15 minutes to cool and set. ENJOY! Most of the time I DOUBLE THIS RECIPE AND FREEZE HALF OF THE FILLING FOR A QUICK AND EASY MEAL ANOTHER DAY. Simply thaw the filling and place the pastry on top and back. Easy easy!

    Here in Lower Alabama today (Friday 2-19-2021) We finally have Sunshine for a couple of days. It is so nice to see the Sun 🌞. Although, It is still too cold for me. It is only 39°. Much better but, still to cold for me. I am So ready for Spring. ❤

    What a great idea! .....all that in most peoples pantry👍That weather here in the Ozarks was TERRIBLE! People didn't know what to do! But there's an older sweet couple on UA-cam; Miss Lori & Mr.Brown from Whipperwhil Holler; she does a channel on Old School Recipes and they are HomeSteaders; they can live "off grid" or On. They built their own Cabin and Spread, away from town, in the Woods; I've learned alot. ❤😘

    I am so happy to see y’all are ok even though times are really hard for y’all right now. I have been worried to death about y’all. I am in southeastern Kentucky and we have been hit really hard. We have so many without power. Thank you so much for being such an inspiration to all of us and the way you and John show your love for God. You all are truly a shining light in this ever so dark time right now. Please pray for me when you get a chance I have lung cancer and a sixteen year old daughter that I want to watch grow. I know everything is on Gods terms so I accept that but I sure would appreciate any and all prayers. Good luck on the farm and I will be praying everything gets back to normal for the animals because it is so hard on them when they aren’t used to this weather. God is good!!!

    Amy, that pot pie in looked yummy. Do you ever give your chickens the veggie and fruit scraps? My grandma always grew huge gardens. She would give her 🐔, turkey 🦃 and duck 🦆 the scraps, but also, she would cut open watermelon 🍉 and cantaloupe and give them the whole thing. They also really love potato and tomato skins. She would let a few squash grow really large, and give those to them. They loved all kinds of fresh fruit and veggie scraps.

      Girl yes I do all that for my chickens. They do love it all. I make them a cornbread and tomato salad too with herbs sprinkled on top. They are rotten. They adore tomato peelings and seeds. During he summer I make them frozen grape tomatoes to cool down. I love the story of your Grandma. Sounds like some good memories 😊💜

    Once again, I have you all in my prayers 💜🙏🏽. I absolutely love pot pies especially on a cold day. I think I’ll pick up a rotisserie chicken to make one too later on today since it will be snowing all weekend up here in Michigan. I hate to hear you all down south are having our horrible weather so please stay warm and safe! I miss going down to Louisiana to visit family so hopefully I’m able to make it back down there this year. I actually have some kin folk in Monroe who I haven’t seen in over 5 years. One of these days I would love to meet you when I’m finally traveling again!

      I grew up in West Monroe! Who is your family in Monroe? I hope you do get to travel and see them this year. I’ve never been to Michigan but I want to soon! I know y’all are accustomed to this weather but we Louisianan’s just aren’t prepared for such. The sun is shining today so we can see some light after 7 days of this. It’s gonna be alright. Please let me know whenever you come up here because there are some great camping sites and also the lakes are nice to visit in the warmer months. Even though I’ve lived here most of my life, I always enjoyed the south better 😂. I can’t wait to meet you 💜💜

    Ok!!! I made your chicken and dumplings! They were delicious best I ever made following your recipe. It just made me so happy.       Yes they do have a barn to go into and stay dry. They will come out during the day but at night they go into thst barn. The weather is warn and sunny so far this year and we are so very thankful. 😊🎄💜MERRY Christmas

    Sometime when you are doing video, standing with your back to your cook stove, you must be too far from video microphone, I can barely hear what you are saying. Love your videos and hate missing what you are saying. This happened this morning when you were making Chicken Pot Pie and talking about the canning kitchen flooding and freezing over. Then when you moved over to stove to cook, the microphone was much closer, the sound was fine. Just so you know.

She had a stroke back in August and lost her oldest son in September on her birthday. Say a special prayer for her and me. We miss him terribly..anyway we always crawl in bed at night to watch you and she spotted your purple ring. Can you tell me where you got it?     I love pot pie! Do you ever use a bottom crust as well? So sorry about all your winter storm problems! I’m sure your heart sunk when you saw your canning kitchen. 😒 My Grandma and old timers used to say if snow lays on the ground for long it’s waiting for another snow. She lived in PA. Personally, I couldn’t care less if I never saw another snowfall. I’m in TN so we get some but not like years ago. Goodnight Amy and John.

      I have never heard that saying your Grandma said about snow ❄️. I love that. Thank you for telling me this. Here in Louisiana we never have snow stay on the ground. It usually falls overnight and we have to get up early to enjoy it and it is melted and gone by sundown. Thank you for writing me this kind comment😊💜
