Wonderful recipe. I made this a few times and accidentally made a even more delicious Japchae by stir frying the noodles using the pan which had sautéed the beef. ( I completely forgot to stir fry the noodles before stir frying the Ingredients ) The noodles became more flavorful with the left over beef sauce. Yummy !

Thank you for this OUTSTANDING recipe and great written directions. Japchae is one of our favorite Korean dishes and your method worked perfectly for me even though I forget to add the garlic to the sauce! I substituted baby bok choy for the spinach so I'd have a green vegetable that held up to being reheated after refrigeration. It worked out very well. I wish I knew a secret for cutting those noodles. I always make a mess of the job. So nice to be able to cook everything in the same pan.
I'm glad you enjoyed it! There's really no secret to cutting the noodles. You can just run the kitchen shears through the noodles a few times while draining. You can also just pull them by a handful and cut them short. Hope this helps.

I grew up in upstate SC...so whenever anyone asks what my favorite food is, I always just say country cooking. But...whenever someone asks what my favorite dish is, I say jabchae. :) Then I generally have to explain what I'm talking about. Great video!

Wow I love chap japchae, and have a package of the potato noodles. I had for a few years because of the 50 thousands steps it took me the first and last time. It did come out yummy, but wasn’t sure if I could handle all that steps. You made it look so much easier without compromising the taste . So I will check the expiration date on the package and if it’s still good I will using your recipes!!❤❤❤

We've never made japchae before but I had it this spring at an Appalachian Trail hiker hostel (Woods Hole) and really liked it. We made your recipe, with a tweak or two, last night and it was so fun to make, easy, and delicious. My 21 year old daughter loved it! I bought ingredients from your list and let me tell you, the soy sauce and sesame oil were so much better than what I had on hand. We added a little zested fresh ginger to the sauce (1/4 tsp or so), and included some bell pepper (omitting the mushrooms) which we were careful to cook separately so they wouldn't make the whole dish taste peppery. We used ribeye but it was tough, maybe something different next time or pre-marinade a little. Definitely will make again!
I lived in S. Korea for two years and learned to LOVE Hanguk pap (korean food). I learned to make bulgogi, shigumchi, but japchae perplexed me. The sauce, especially, evaded my best efforts. NOW I know. Ko map soom nee da, songsaengnim! Miguk mal PERFECT
Really enjoyed watching your video … so easy to follow! I tried making it right away (with a couple of substitutions cuz that’s all I had: used bokchoy instead of spinach; chicken instead of beef).
