Jabchae is my favorite Korean noodle dish. It taste good warm or room temp. Great to make for a crowd. I use brown sugar or plum syrup instead of maple syrup and add in blanched spinach. I like to saute the mushrooms separately to get browning on them. I like to keep the veggies more crisp so not a long cook time there.

Please try Japanese shiritaki YAM noodles. They are sold in small plastic bags in fridge of Asian markets. Before use, drain liquid and boil yam noodles for 2 minutes in water. Discard boiling water. Don't eat more than 1/2 cup because very high fiber. Once your system adjusts you can eat more. Great in soup or with veggies and seasonings like chapchae seasoning. Really fills me up. Great for diabetics too. Also sold in jello lime bars clear or with added seaweed on the brownish bars. Konyakku is the Japanese name.

this was delicious--sheet pan version is a great time saver! minor variation: use a small skillet to make your sauce then dump rinsed noodles and sauce ONTO sheetpan with veggies and mix. I added some fresh tender spinach at the end and let it wilt in. FYI: I never bother with parchment paper (extra garbage for what??)--sheet pans are easy to wash and can go right in the dishwasher. They will discolor but I think the patina is lovely.

I actually like the fact that you roasted the veggies that you used. Mostly because I think roasted carrots are sweeter than literally any other way you could cook carrots. I also appreciate the tip of removing the stalk of dehydrated shiitaki mushrooms. I just bought a bag of those to use for a vegan lasagna recipe. I wasn't expecting the bag to be so large. And the bag I ended up buying was the smallest one available at the Asian store I go to.

I just made this recipe. It is delicious. I am not an accomplished cook. I didn’t time the roasted vegetables well and everything was pretty mushy. I added celery to the scallion sauté just for crunch. The household loved it tho one of my friends said, “No chewing required it slides right down.” Pay attention to roasting time unless you don’t want to chew your food. I love this channel. You have introduced me to so many new methods and styles of cooking today with this one simple, yet complex, dish. Oven roasting vegetables has never occurred to me because in my mind i thought that it would dry them out. You prove otherwise. Thank you

Maybe you've already answered this before but what sauces/spices should one have at hand to make most items from your cookbook? I see soy, rice vinegar, maple syrup... Could you suggest a few more for someone looking to stock up on ingredients?! Thank you!!! This dish looks absolutely amazing!

Wondering what would be the best method of smoking tofu at home? It’s very hard to find here, even at Asian grocery stores. Thanks.

    • @BillHesse

One could place it in a smoker but if you don’t have one I believe they make a smoker you can use in the kitchen that holds the smoke inside of a glass bowl. Not sure if it would permeate like a proper smoker.

This was excellent, thank you! Will definitely be making this again. Give the leftovers to my son who enjoyed it as well. I cut down on the.Gochugaru spice because I’m a wimp and I roasted the vegetables in my foodie so it came together really quickly. Thanks again!

I love your recipes although I alter them to fit my budget. ( I am a senior on a small budget). I use dry veggies that I bought in large bags from an Asian Supermarket. They never go bad and I don’t have to buy as frequently. My oven stopped working a while ago so I use a toaster oven now. It works great for roasting veggies! I love your veggie combination. I will try the smoked tofu. What a nice idea!

I love your videos, chef. I want you to know that your go-to flavor profile of soy sauce, toasted sesame oil, garlic and maple syrup is something I’ve been using a great deal. That sauce, with the addition of the Korean chili powder, reduced until thick, makes a delicious and complex glaze for pork.
