The boar being ride-able reminds me of a concept art from Dark Souls 1 where there's a sort of Fat Official lookalike riding a boar. I assume they've entertained the idea of a boar-riding enemy for a while.
Not exactly a callback, but Messmer the Impaler has some very notable similarities to Elric of Melniboné from Michael Moorcock’s novels. Both GRRM and Miyazaki were inspired by those, so it definitely seems intentional.
a detail about the Spine pulling dude is that he has the exact same medallion as the man in the painting (The one with the lady next to him). didn't the DeS Monk have a corrupting Queen or am i just thinking of DS2.
An interesting detail is on the armor of the guy right after the one that looks like Vilhelm (0:52 in the trailer). This dude is wearing a pretty historically accurate grecoroman armor set, like an older and more refined version of the exile set, which could be a callback to nameless king's armor in ds3 or the drangleic set/looking glass knight from ds2.

I respectfully disagree that the dancer enemy moves like the wardens. Their move sets look very different and only similarity is dual swords

Its a little vague iirc but Old Monk did at least overthrow the Queen, and the Fools Idol is made in her imagine, so kinda

One other thing is a certain armour shown in the DLC trailer looks very similar to Havel the Rock
