I've made this recipe before, it is excellent. One piece of advice I learned from Rachael Ray years ago is to salt your pasta water just before adding the pasta to the "salinity of the sea". It really is a game changer when cooking pasta, adds so much flavor to the dish. Great job.
FYI - Thr pronunciation for Gruyère is “Gree air”. Kitchen Hint: When cooking pasta, always salt your water, and add a little (1-2 tsp.) butter to water. It will prevent the pasta from sticking and will keep the liquid from boiling over. Additionally, adding olive oil to the noodles after cooking will prevent them from sticking together as they cool. Note: You should have allowed your roux to get a little darker, prior to adding the cheese. It takes 1 minute for the raw to cook off. A roux needs to cook for 1-2 minutes to fully develop.

Your tip on adding butter to the water is crap. It’s been proven that adding oil/butter to the water does nothing to avoid sticking. If you are so worried about sticking, add it after you drain the noodles!

My mother made the best mac and cheese, and I have her recipe, but, it is never the same, it must have been the love she always put into it, because none of us can create the same mac and cheese. Actually, minus the "gree air" cheese, this recipe is a lot like hers. OH gosh, do you suppose she added this "gree air" cheese? 🤣 I love watching you, it makes my day to have a chuckle, most of the things you do, I have done, so glad to see I am not alone! 🤣I agree with your wife, I call Parm cheese, foot cheese, it smells like stinky feet!

I picked up the Kitchenaid shredder attachment at Walmart. It was a great investment. Blocks of cheese are not as expensive and I shred a bunch at once and put it in individual bags. Love the new channel!

One of the best parts of your vids- you bring up questions that a newbie would also have - like how to "grease" a baking dish. And hints like reading the whole recipe first. Dave, I think you have a hit on your hands! Maybe you could try making a "best" recipe, and your own version together and compare. That Mac n cheese looks incredible!
To save time I shred my cheeses in my food processor. It is so much easier on your hands and so quick! You kinda drive me crazy watching you cook but I can’t turn away! lol I do enjoy your show and have tried making the cottage cheese flat bread. Dollar store has great rubber spatulas by the way😂
I put a little olive oil in the boiling water ,and it keeps it from boiling over.Some people say not to put oil on pasta or use in the water,because then it keeps sauces from soaking into the pasta.I don’t agree.Also,if you want to kick it up a few notches,and this might sound strange,but I had a little Thai peanut sauce and some red curry sauce ,plus other seasonings.Really good.Thanks Dave

That is how we make our "fancy" mac & cheese. Needs that salt & Pepper...and also yummy is 1/8 teaspoon of nutmeg in there. Sounds weird but it accents the gruyere cheese. My husband loves me to add some smoked ham in there too...but I prefer it without the ham. My quick mac & cheese is just Velvetta cheese diced up with milk & butter in the oven...with cheddar on top with the panko breadcrumbs/butter which my sons like the best.

“Groo-year” cheese is how we say it. Lol Unsalted because cheese has salt and you don’t want it to be be too salty and want to be able to control the salt/add your own with spices. Flour to make a roux like a ton of recipes start out, it’s to get/keep the sauce thick. Gumbo starts off this way too.
I've tried a similar recipe but with only cheddar. I loved it. Liked it better with breadcrumbs on top without the added cheese. Will try this one. Tip, let the macaroni sit for a while & settle before digging in, the taste is better. Yes, more salt & pepper. Good first try Dave.
So I have to say I dig this channel Dave. My husband is the cook in our house & I keep telling him he should do a channel too but that won’t happen. As soon as you said gotta keep it separated I sang the same song. 😂😂😂 Good ol Offspring. You have a concern over the unsalted butter but cooking with that completely helps you regulate the saltiness of a meal. Sodium is in everything so it helps keep the meals from being overly salted. At our age Dave too much salt is not a great thing. 😂😂😂😂

Dave love all your picking and flipping channels and even trash to cash podcast. A little tip when shredding cheese is to spray the out side with Pam and it makes it go faster and doesn’t stick as much. I grate most of my cheese because most pre shredded cheese has flour on it to keep it from sticking together and I have several friends that are celiac or gluten intolerant.
Dave, not sure if you're using non stick for the macaroni but if you are then try to use a wooden/plastic utensil to stir. Using silverware on a non stick surface scratches up the bottom pretty badly.
Gruyere is basically Swiss cheese, without the holes. And FYI I stop buying unsalted butter as it goes moldy in the fridge. Happen to me so many times I gave up buying it.
I don't know how to say the grrr cheese either lol. I prefer unsalted butter it has a richer taste to me. Great videos and love your picking channel also!

All that cheese and heavy cream, it’s gotta be good. I sing that any time I gotta separate something lol 😂 not cooking the flour long enough will also give it a flour taste. A good tip is to cook the flour until it smells nutty. I’d love to see you do a shrimp recipe. Mistakes happen 🙂 goodness gracious that looks good. I’ll definitely try this one. Alfredo isn't too different from this, tackle it... You can also make seafood and add about anything to this spinach is common for me. Best Mac I've ever had was Gouda and applewood bacon River Birch Lodge in Winston Salem has a good version
I am a Canadian Italian, been cooking pasta a long long time. Watched my Mother, my grandmonthers and great grandmothers and they NEVER add any type of oil or fat to pasta water. Use big enough pot, lots of boiling, keep water boiling while pasta is cooking, stir. Never had pasta stick, been making it over 50 years

Looks yummy. I’d add cooked bacon and jalapeños before I baked it. Or ham cubes that I fired up. Or a nice crumbled sage sausage.

That's a controversial move actually. It helps with the sticking, but it also limits the absorption/clinging of any sauce or flavoring you add.

It's pronounced gree-air. It's often used when making french onion soup. It's a cheese I buy fairly regularly.

Use Amish roll butter. The shredded cheese might have sawdust to prevent clumping. Yeah, sawdust, check the package for cellulose.
