I've never used a roux. Never needed to, and I make a mean Mac and cheese. I don't know if I would use all of those ingredients but I would definitely like to try it if you make it 😂
You forgot the cream cheese and black pepper I like my parmisan fresh from the dairy case and some lobster tail shrimp or BBQ brisket mixed in and some herbs

I find the hardest part is getting the right texture, I’ve made it wrong just about every way possible. Gluey, too much flour? Or when the sauce doesn’t stick to the noodles, I think that’s from melting the cheese with too much heat causing the fat to separate.
I AM ALLERGIC TO EGGS. I have never used eggs in my Mac-n-Cheese. This roux method is excellent. Gonna try this method this weekend to go with my fried whiting.
How do you deal with left overs and reheating. It's good coming out of the oven but we ALWAYS have leftover. Trying to downsize to 10 at most, if our oldest and partner in town. If we had this AND everything else, there WILL be leftovers.

The condensed milk also stabilizes the cheeses and the dairy making it harder for the sauce to split on you. Thanks for these great recipes!!!
