  • Hello There Friends, after exploring UA-cam and seeing the other Mac and Cheese recipes out there, I decided to make my Mac and Cheese which I think will make you absolutely fall in love. Everything in cooking is simple, and can be made by anybody, so easy in fact a child could do it! So watch the video and let me know what you think in the comments!

    Made this and it was definitely the best I've had. The only things I can't stress enough are the importance of cooking the roux long enough with just enough heat to make it barley bubble.. Not even going to try to imitate chefs interpretation of the correct bubbling.....LOL... And also letting the cheese melt long enough unless you have an immersion blender. Years ago I attempted a similar recipe and it came out gritty. After watching this video I understood why. Thanks again chef your recipes are authentic, amazing, and truly attainable with modest cooking skills.
    P.s. chef, correct me if I'm wrong but the way to tell if your roux is almost ready, as you stir it, it will start to leave a white film on the bottom of the pan...

      That is correct about the roux and also it should slightly turn into a "pale sandy fawn" color not enough to interfere with the "white" look we are looking for and final product! 😍

      @@ChefJeanPierre sorry I almost forgot the part about heating the milk. Adding cold milk to the roux would also cause the sauce to be grainy.

    I made this for my son and his 18 year old friends, thinking it would be too complex for their palette. Well now I’ve made it like 4 times for them and they said it’s the most AMAZING, macaroni and cheese they have ever had. Thanks Chef for the years of experience and passion you are sharing with us.

      He IS A PROFESSIONAL CHEF. He just isn't working in restaurants any longer. The situation we are in changed his life for the better. He had restaurants, then a cooking school. When everything thing was CLOSED UP DUE TO MANDATES, he got smart and went to youtube and made a new online profession for himself! Great Chef!

    I made this for Thanksgiving today. I didn't have gruyere cheese, so I substituted pecorino romano for half of the gruyere and used a little extra cheddar for the other half. I am afraid this side dish upstaged the main dish. It was mac and cheese, not turkey, everyone was reaching for when it was time for seconds. Chef Jean-Pierre I wish you a happy, healthy, and gratifying Thanksgiving. One of the things i am grateful for this year is your channel. I've been cooking for 40 years, but you have leveled me up. Everyone is noticing the improvement in my food! Thank you Chef! Keep it up! You've now got the best cooking show on UA-cam!

    This spring I was heartbroken with the implosion of the BA Test Kitchen. I felt like I had lost a home and now was wandering through UA-cam on the prowl for a new home. The other day, UA-cam brought Christmas in September. They introduced me to Chef JP. He is a cast of characters and needs no supporting members. For example in this episode, I swear heard Sgt Sholtz from Hogan's Heros as he was speaking about the lack of flavor from that 20-year-old tin of nutmeg. There is a whole bunch of personality and a little flair and I'm confident with four recipes down that I can successfully make each one. That's a great teacher. Chef JP raises the bar, our skills and entertains all in one! Thanks Boss!

    I LOVE how in every video he emphasizes that cooking is a fun creative process! There's no reason to spend time cooking if you're not enjoying your time and cooking for yourself and your own tastes! That's why chef provides all of these ideas like including the mushroom, the goat cheese, the lobster, the truffle oil, the brie, but if you don't wanna do it, don't! So many chefs online act as though there's only one method to cook delicious food, but that couldn't be further from the truth. Much love from New York!

      @@sfopaladin2661 Oh hell NO!!! Nothing wrong with simple cooking - I love cooking Chinese Food with left overs! Just have fun cooking - and love what you do! I love a ham, mushroom & cheese omelette - honestly it's divine! Saute the mushrooms in just a drizzle of Truffle Oil, it's a strong taste, so don't over do it. Add a little Champaign to the eggs and milk, the CO2 will help to add bubble to the eggs and make it feel lighter, plus the taste is awesome!! I've been playing around with cheeses from all over the world & currently I love Ossau-Iraty!! Although Comte is fantastic with Mushrooms!! I also prefer shallots or fresh chives, if I'm going to use a Allium in an omelette but I do love the taste of Spring Onions, especially in Chinese dishes!!! OMG the Chinese can cook!!!!
      A "diabolical mixture!" OMG I burst out laughing at that!!! God bless you!! I must add that I love a smoked ham & good thick bacon!!! That we can agree on! 🤣

    Chef, I have watched every single one of your videos and I'm finally ready to give a recipe a try. My fiance requested the mac and cheese, so tonight that's what we're having.     I was YELLING at the screen - "Where's the NUTMEG!" and finally you brought it out! Perfect. Freshly grated cheese is best - that stuff in the bag is not nearly as nice. Oooh, lobster is a great idea. We don't do breadcrumbs - just the parm/reg - it gets crispy and lovely while the other cheese stays soft and creamy. Oooh baby. This is beautiful.

    Finally someone who doesn't stir in the liquid into the roux half a cup at a time, many people don't understand how the roux works the flour is coated in butter making it difficult to form lumps the whisk just helps mix something viscous into something thin.

    Chef Jean-Pierre, has swept me away, I love his commentary, he sounds like a bother from another mother. Always entertaining, and every time I follow his recipes a little of him comes out and I start speaking in his rugged french want to be Italian accent. I 💕 his recipes but most of all I love and adore him! 👏❤️

    So sorry Chef to be late with responses but hand down you are my favorite amongst all the youtube cooking channels. You are funny, make the best food I have seen and explain everything very well!
    BTW my CUPBOARDS and pantry are full of new oils/spices/herbs/flours that I have run out of space. No joke.

    I made this for dinner and it is by far the creamiest macaroni and cheese I have ever eaten or fixed. My husband and I loved the texture and all the flavors of the different cheeses. Do select “good quality cheeses” and follow as directed by Chef Jean Pierre using the immersion blender (if you have one) which does makes the sauce very silky and so, so creamy. This recipe makes a lot, so I divided up all the left overs and froze them in small Corning Ware dishes for later meals. Defrost the day before in the fridge and reheat on a low temp is best. Here in South Carolina, Mac and Cheese is a side dish for Thanksgiving so this recipe is a must now to prepare for family and friends. Chef Jean Pierre’s recipe of Mac and Cheese will not disappoint your palate for sure and truly worth all the effort to make anytime you want a great comfort dish to enjoy eating.

    I am currently learning how to cook properly, however, my boyfriend is Italian and his family are chefs so the pressure is on! I will definitely cook him this mac and cheese 😍 looks so tasty!     Let me start off with telling you I've never had anything with white truffle or black for that matter so I didn want to be disappointed so I ordered your white truffle oil WOW I couldn't put it down the smell was like haven to my nose 🖤💙 so i had my granddaughter help me make the macaroni an cheese mind you she's 4 yrs old (start them early to love to cook) she did an excellent job in repeating everything you said to do 😂 I did change a few things I used goat milk cheese instead of brie an I used white pepper 😊 I agree with your ma 😍 let me say it was the best macaroni I had ever had my granddaughter even asked for seconds 💞 thank you for the wonderful recipe I will use it often 🖤💙

    Good afternoon Chef. I stumbled upon, and I am glad I did, your "UA-cama" videos (I can say that because I am Italian). Not only do you present wonderful videos and recipes but you "hava" wonderful sense of humor. Your videos and recipes bring me back to my cooking school days in the early 1970s. I am methodically going through your great videos to bring back the basics of cooking. Yesterday I went to the local butcher and bought "soma" veal bones and I got a lot of beef bones from my local grocery store and tomorrow I am going to "teacha" my wife to to :make reala" beef stock for use in my soups and stews. Since I am retired (I was an FBI agent for 25 years) I will continue to watch your videos. Thank you for producing them, and to those who think they are the food police....ala fungo!! Please "keepa" your great sense of humor. DP

    Chef Jean-Pierre, excellent 10/10 recipe and directions for Lobster Macaroni and Cheese. I heated the milk with the lobster tails and shells on and it infused the milk with seafood flavour - very good.

      @@ChefJeanPierre it tasted a bit tangy maybe too much cheese so I fixed it by adding more Mac to it and seasoned it using oregano and it was fine next time I try mozzarella cheese 😅

    Thank you so much for posting this recipe! This is my favorite recipe now, I have never had so much fun cooking. Prior to this I had never made a roux or a sauce like this. I thought scratch Mac and cheese would be way outside my abilities. Now I’ve used a roux with several recipes and I have a new confidence and ability with cooking that I never had before. It’s fun, tasty and I feel proud and accomplished afterwards. Thank you!

    Gotta say when I make this mac n cheese I may modify the recipe ever so slightly and cook it on a coal bbq like my last one. Cant wait to see how it turns out though!
