Between you and Nisha from Rainbow Plant Life, and the guy from Spain on a Fork, I will never have to eat boring, bland, veg*n food ever again! And curries are so friendly to batch cooking, I don't have to worry about wasting food. I really wish cauliflower were more inexpensive here in the US. I love it too.

I *love* all different kinds of Indian food but being allergic to cilantro makes it hard to try it at restaurants. One of my goals this year is to try a new Indian dish at least once a month to teach myself how to make real, traditional recipes that we can all enjoy.
Made aloo gobhi with a twist today: had some zucchini to use up, and thus I subbed out some of the taters for the squash. I served it with chole my wife had made earlier in the day, brown basmati rice, and curd. It was great but still did not make up for the sting of Arsenal losing yesterday Merseyside.
This looks great, Chetna. I have to give this one a go! To be honest, you made me stop ignoring cauliflower 😅(it was the chickpea stew with Harissa-cauliflower as a topping). Indian and Indian-inspired cuisine is a great gateway for me to rediscover veggies my family just wasn’t able to prepare well. Pretty much all types of brassica veggies. Though "a small knob of ginger" made me laugh out loud. In my culture that’d considered a very scary amount of ginger. Love to get a visualization, it’s really necessary 😂
I made a double batch of this (with a giant cauliflower!). I've been eating it all week and it gets better and better every day. Thank you for an easy to follow and delicious recipe. PS... It sorta reminded me of American Home Fry Potatoes. We eat home fries with tomato ketchup. Yours was super tasty with tamarind "ketchup" on it! 😉

Looks so easy and delicious! Could you please tell me more about the chili powder you use? I assume it's not the same as the chili powder used in Mexican or TexMex dishes. Is yours simply powdered and ground chilis? Or are there other spices added? Is it hot or mild?
Outside of North America, chilli powder (two L's) is always pure ground dried chillies. Edit: chilli powder is normally hot, but if you prefer a milder chilli powder, use Kashmiri chilli powder
I made a version of this a few days ago. The leftovers are in the fridge. My version needs more salt and white rice before I'm satisfied to eat the rest of it. Aloo Gobhi or Gobhi Alu?

On my shelf, I have i.e. a book about apples and pears; a book about berries; a book about artichokes;...about asparagus; mushrooms; potatoes; pumpkins; zucchini and aubergines; herring.. I have so many recipes for chicken wings that my sister in law once joked: "you should write a cookbook just on chicken wings!" My answer was: "If I ever do that, I'd make it a trilogy. Because I was also stressing over the prep of the tomato, shallots (I didn’t have any onions) potato and Cauli, I forgot the Garlic and Ginger! 🤦🏻And also the turmeric, had to sprinkle it in towards the end. And tried to create my own Garam Masala like spice blend…. Is there an Indian name for such a disaster? 😄

Any reason you use sunflower oil in your cooking? I mostly use Canola oil for Indian cooking and it works great!

But potato takes longer to cook then cauliflower. Other wise sounds yummy.
You can add the potatoes first, or you can chop your potatoes and cauliflower so they cook in the same amount of time.
then cook potatoes first, all potato varieties are different and take different times to cook
