I tried this method but used pressure cooker and at the end put the lid and let it cook for few minutes. It tasted awesome. Putting spices in water beforehand really made a difference.

Gobi always made my parents fight. Bcz my mom likes gobi with little crunch she doesn’t t like to cook it all the way but my father liked gobi very well cooked almost like halwa. And my moms was used to cook her Way and my father was used to grumpy while eating it.
Me and mom also over Gobi. Thankfully we both like it well cooked with bit of crunch. But we have diff opinions on potatoes. She likes them mushy like gravy and I like them crisp haha.
Great recipe as always. I remember watching people at my Nani's house deep frying the Gobhi and potatoes before mixing them with the gravy. I never figured out why they did that but it had a different taste to it.

It's a delicious meal. But since potatoes are such heavy starchy foods I feel we should also include a raw salad to balance it out. Lots of people get a stomach ache after eating potatoes (Gastritis I believe) A fresh salad with raw tomatoes (Non-juicy variety or salad will become watery) onions (For people who eat onions, use red onions. Cut them into thin slices and dunk in cold water to remove the astringency. Squeeze water out) and thinly sliced cold cabbage and carrot. Instead of an oily and fatty salad dressing like they do in the west, we use lemon juice and salt+sugar combo. More than enough for a tasty and healthy salad. A salad won't be healthy if oil and vinegar is poured on it or fried food is added to it. Our Indian salads are all very healthy. Spices can take it a lvl more. Use chat masala, jeera powder and Kashmiri powder+ little bit red chili powder. If you want a Chinese taste add some soy sauce. I love this salad. I skip onions. I always try to include this salad in my meal whenever possible.
