I made this today. I had frozen riced cauliflower in my freezer so I sautéed it to eliminate the moisture from it being frozen then followed the recipe. It was a big hit. I want to master parathas and this one got me a step closer. Thank you Chetna 🙏

Well. We do squeeze after chopping or grating cauliflower or any such veg in muslin cloth and strain extra water which can be used in dough making so u can do either that way as well
Made this recipe today. Used my thermomix for chopping cauliflower. Went perfect. I had no chutneys available so put a slice of cheese on one of them and also some harisa paste on the others. Great recipe! Thanks for sharing Chetna!

Looks delicious. Would it be possible to add the cauliflower mix to the dough and mix them together? That way you only have to roll our the dough mixture and cook.

I'm such a dedicated alu paratha aficionado that i rarely end up making gobi paratha, but you've made this look sooooo good, imma have to make it now 🤤
Sorry... Your mixture was coming out... If you add half a cup of powdered poha ( puffed rice) to the mixture, the paranthas will come out excellent. The poha will absorb all the moisture and the paranthas will swell wonderfully. Try it and thank me later... 😊
