I made this today using the paneer I made from your masterclass. It is a joy to follow along with you and the whole family loved your recipe. Absolutely delicious. Thank you so much.
Chetna's comment @7:30 or so about splitting - I too have lived this heartache. Made a meal I really wanted to work, and it fell to bits and I had no main! I then started looking at other recipes and googled "why did my Koftas fall apart", and ALWAYS use cornflour. How much, I am never sure.
Thank you Chetna, will try this recipe but in a vegan version. Tofu instead of the paneer. Also will try to airfry the koftas instead of frying. And use coconut cream. Same same but different. 🙏🙏🕉
This looks so good! Kofta curry is top of my list of favorite foods. Where I live, despite being a large city, Indian restaurants are few and far between, and so expensive, but Indian food is my favorite kind. I’ve been wanting to learn how to cook it, but it always seemed so complicated. Thank goodness for cooking videos! And, fortunately, I know where to go for the ingredients. I’m not vegetarian, but I don’t like much meat and rarely eat it, so I really appreciate the vegetarian recipes. Now all I need is to find the energy to do it!
Thanks, Cheta, the Mr loves it. Our green chilis seemed to be extra hot. We need practice, on getting the kofta to not stick to the pan. Likely we need to start with a hotter pan. But, overall it turned out great.
Hello, I'm new to your channel and cooking your recipes here in Texas! Indian food is my favorite food and I crave it daily! Ordering takeout becomes so expensive, so I am learning from you! Please tell me if corn flour is the same as cornstarch (as we call it in the US)? Thank you!
Thank you from Minneapolis, Chetna! I made this for Valentine’s Day 2023. The flavors turned out delicious. This is my 1st time making it, but it is my go-to dish that I’ve had at Indian restaurants for over 20 years. I notice the versions I’ve previously eaten were cooked around the entire kofta, are they typically cooked in a deep fryer at restaurants? Is that how you get the sides browned too? Also, what is your take on incorporating cashews and/or dried fruit or raisins? I noticed that sometimes they are in there, other times not. I look forward to watching more of your videos and learning. Thanks again! ♥️
Thank you so much! We just had your kofta for dinner and the whole family is sooo happy! All plates and the pan are clean now (much licking involved). Great success
Made this last night and served then with shop bought Chapati (no matter how many times I try I can't make Indian flatbread and have read all your tips bur Sainsbury's aren't bad) I did add cumin to the oil along with the cardamom and cinnamon and some crushed fenugreek leaves at the very end. Delicious and will make again
I made this curry for my family. I didn't have corn flour, so I used all purpose flour. A few of the koftas split because I think I overcrowded the pan. The second batch I fried, did not split. I still ate the split koftas for breakfast with scrambled eggs! My family thought this kofta curry was absolutely delicious! Thank you!
I have become such a good cook from watching your videos and making your recipes! I used to never have the confidence to make something from scratch and I’m INDIAN 😅! In my mind I just always felt that I’d never be at the same level as my Nan and mum but I’m not going to lie I’m better than them now haha! I hope one day my kids can learn from me the same that you have from your Mum! Thank you so much xxx
my 4 year old asked if we could watch Chetna, which we do just for fun... this recipe looked especially amazing so we made it and both my picky eaters ate it. you are a godsend Chetna!!! ❤️
Dhanyavaad Chetna. I am learning Indian cuisine. Just love your use of the ingredients. Tried your roti recipe and first off I used regular whole wheat flour which, you can imagine came out tough and. OMG they were frisbee 🙀. Then my 2nd round I bought Atta. The real flour and since then my rotis have greatly improved 😊 Also tried your Mum's Aloo recipe and it came out ok. So I suppose I need more practice. I'm living it. Please keep the recipes coming I love them🙏
This looks Delicious !!!! And it looks pretty easy to put together. I love leftovers so the large recipe would be no problem for me, I think I would double the curry also, because why not? Thank you as always sharing your passion and great recipes.
Just gorgeous. I will be cooking for a party where half of the people are vegetarian and the other half Vegan. Would it be okay to substitue heavy coconut cream instead of the dairy? I have also found a recipe for Vegan paneer that is made with Soya milk and was wondering about your thoughts regarding that. Thank you for the reminder about the Corn flour The first time I ever made Kofta was from an old cookbook of my mother's and that tip was not there. Everything fell apart. I wept. Thank God for Gin and Tonic. Nectar of champions and solice.
A restaurant where I live makes the best malai kofta-it is my favorite curry-so I am always looking for a great kofta recipe. Their recipe uses cottage cheese, but I have been wanting to try pre-made paneer. Thank you.
Omg !!! I’ll cook this , this weekend .i loooove potatoes and this looks so delicious . One question , double cream is what we called in the usa table cream or heavy cream ? Thank u so much for this recipe , now let me see where can i buy paneer . Lol
Hi Chetna that looks amazing 😍 my mum did cook kofta curry it was lamb kofta curry which we don't do much lamb in our house we do chicken 🍗 that made my mouth watering 😂 definitely will give this a try, thank you so much for sharing this amazing recipe 😁❤️
Hi Chetna! Thank you for this, it looks amazing. One question -- at the end you add "Dublin" cream. Is that the same as heavy whipping cream in the US?
Love your channel. Do you post the recipes anywhere? Or could you tell us if they are in a specific cookbook? Thank you for sharing your passion for food!
Made this today. It was ok but for my tastes I would probably finely chop the onions, ginger, garlic and chilles. Then add with the tomatoe puree and yogurt do there is some texture. In addition I may also add some chopped tomatoes either fresh or from a can to make the sauce go a bit further and add to the texture. I did like the kofte receipe and I think they would go well with umli.

Whatever looks like a green bean in the pepper section of your grocery store's vegetable aisles, or if you see a similar sized pepper that's red. If not, try 1/3 of a jalapeno. It's my understanding that jalapeno heat varies, though. It's adding heat, without the vinegary taste of a hot sauce. If you find neither, and want the heat, you could likely use either cayenne or chipotle powder.

ooooh coconut cream COMPLETELY changes the whole thing.........
great suggestions to make it vegan, I plan to test it out too!
I fancy a vegan version too. Maybe Oatley cream instead of cream. Looks soooooo nice
How did it turn out? Did the coconut cream work?

Hi Chetna. How do you recommend reheating any leftovers ? Do the kofta stay crisp? X

Yes. Francesca it is the same.

Heavy cream or whipping cream. They're only about 3% different in fat content.
Should we wait for the koftas to cool down before adding to the sauce or can they be reheated gently in the sauce? Looks amazing btw!
You can add them warm or room temperature
That looks sooo good
thanks
My goodness Chetna you make me laugh you are sooo funny and sweet 😋 that looks yummy tongue is hanging out ❤
Chetna, this looks delicious! Is there a printable version of the recipe somewhere (or, did I miss this… perhaps it’s in your new book)?
Instead of freash chillies can I use dry red chillies. I have an abundance of dry red ones

Will the koftas work well cooked in the air fryer rather than deep fried?

Can the shaped kofta be frozen before frying for later, or should they be fried and then frozen?
Oooh how lovely!! But I would be greedy and not want to share!!
Can you share a paratha or latcha recipe please
Yes they are both already on the channel
Yummy yummy ....👌👌🥰
Thanks Rachel
which pan are you using? I mean brand?
Fantastic such deligjtful recipes delicious...where i love j can't bit Paneer....any substitues?
you can use more potatoes
The Mr makes his own, or buys Mexican Queso Fresco cheese which he says is very close to paneer.
Made this today! It was so good I ate too much!
What is the pan you’re using here?

Is this recipe in one of your books?
(I heard a rumour that you have a new book coming out)
Well I will address the rumours in a couple of weeks..... ;))))
Is this using tomato paste or puree?
puree

How would you change this recipe if you wanted to use minced lamb instead of paneer cheese ?
Probably do the same and cook for longer.......
How about bread crumbs instead of corn starch ?
yes you can but bread crumbs soak up a lot of oil so cornstarch seems better for this purpose
