CORRECTION! Thankfully someone caught this, and I needed to make the correction - the reprocessing time is still 75 minutes, not 65 minutes. I was looking at the bone-in time, not the boneless -so please make note of that!!! This is why it is ALWAYS best to use YT videos as a means of inspiration and visual learning - but ALWAYS double-check canning info with the NCHFP's website or your book. ALWAYS!
It doesn’t matter how long you’ve been canning, sooner or later, mistakes will be made, especially while multitasking, phone calls, family needs, etc. Love your honesty and the fact you didn’t cover the goof up and allowed this to be a learning experience. Also, this will help newbies feel better about their learning curve. 😉
Yes that's so important. I just started Pressur canning and I was so frustrated because the first 4 tries where fails.... It took me quit some time to figure out what went wrong.... And when you only see the perfect filld endresults from others you get sad.. So thank you for being honest.
Sorry for the heartbreak.. but yes thank you for continuing the process of ways to fix or go forward. You are awesome, thank you for time and lesson.. hugs
I’m almost 71 y/o and I’m a new canner. Wish I’d started years ago, but I wouldn’t have had this wonderful community to learn from and be encouraged by.would there been a cause to de-bubble, since from camera angle there were air pockets?
No need to debubble raw pack meats. The meat will settle during processing and give off its own broth to fill airpockets. Any meat above the broth may become discolored, it is still safe to eat. 🙂
Thank you for this video! It's nice to see a "fail" and what to do about it. I'm very new to pressure canning and would have no idea what to do in this situation! It's nice to see real life and not just the pretty, dressed up version.
Wow! Thank you so much for being so transparent about the good, bad and ugly of raw-pack pressure canning. Keeping it real is so helpful for those of us who are totally new to canning.
Love ❤️ my “ugly” chicken! Favorite recipe is to layer in a casserole dish with rinsed home canned potatoes on the bottom, chicken , herb of choice, top with cheese and bake till bubbly.
I recently made chicken/turkey soup made of ingredients that I canned /froze this fall. Was able to share with three of my sister. OMG best chicken/turkey veggie soup EVVVER.
Thank you for showing us sometimes things go wrong. Most you tubers want you to think they never have failures. I love seeing the real deal. Thank you.
Thank you for owning your mistake and then showing us how to turn a mistake into a success! I love my canned chicken and have never had a failure but I am adding your information to the notes in my canning file so I can be prepared for any missteps in the future. (And you are right, there is no such thing as "ugly chicken" - this stuff is amazing.)
It’s so easy to forget a step. Luckily I’ve caught my forgotten step by going over my cheat sheet before starting my canner. Thanks for showing us how easy it is to slip a step.
Your honesty about being human brings a sense of normalcy to those just starting out pressure canning foods. Mistakes happen because no one is perfect. I certainly respect those like yourself much more for it. Thank you! ❤
Thank you for sharing your experience that aren't the Good Housekeeping seal of approval videos. It's necessary to know what we should do when it happens to us.
Oh my goodness, thank you so much for this! Thank you for showing us not only that even a seasons canner with a check it twice checklist can forget something, but also what to do if we have that experience. I will be pressure canning this weekend for the first time, and this gave me some extra encouragement! Nobody wants to fail, but it is so nice knowing that you can turn around and save it!
I've always said and believe everything happens for a reason and this.missed step allowed this to be a very informative learning lesson and the proper ways to fix it. Glad you didn't lose any chicken and can imagine how disappointing this was to you. Well now you're set for easy quick chicken salad. Cheer up there was no loss and keep filling that pantry lady. See you in the next. Missouri Wrightchk
I love that you didn't get rid of your mistake and thank you for showing what to do if you do make that mistake. We are all human, we all make mistakes. I love canning chicken! Makes dinner prep so easy!!!!
Thank you for showing how to rescue the failed lids. I have been canning all my life, and for the newbies this was a good exercise. Appreciate your videos and willingness to share your knowledge. Happy Canuary!
I am glad you are showing what to do when you have a failed seal. Everyone can make a mistake and this way we know what to do. Thank you for showing us this.
How funny! I’m canning chicken right now. I precooked my “ chunks” and got 11 pints canning now….I love doing this. And yep, some fail, but I reprocess or eat for dinner. Btw….I love your video’s, your content is fantastic. I also just finished dehydrating 4 packages of veggies too. Their sitting on my counter now for conditioning…..because of you..❤️
This was a great save, lol. Thank you for showing how one little slip in the beginning can affect your canning success. Chicken is my favorite thing to can. It's never ugly to me!
Such a PERFECT video!! We usually learn the most from our mistakes. I learned more from this one video than all the several vids I’ve watched! So thankful you made this mistake and then explained where to go afterward. I start my canning journey with the recent arrival of my first canner, All-American 921, any day now! 🤓😬😆
I lost 5 jars in my last canning session... it hurt. I could see that it was the fat in the jars that caused my issue. I will be more careful next time. Thanks for sharing real life canning problems.
I forget to de-bubble sometimes even with the de-bubbler sitting on the towel next to the jars. It's very easy to miss a step when you're excited about a new recipe.
I'm glad you owned up to making your mistake. This shows new canners that everyone can make mistakes, and something doesn't seal. But showing how to correct your mistake is also helpful. Chicken salad, chicken tacos, and chicken pot pies are my favorites.
Thank you for always being so honest with us Darcy and showing us things to watch out for. I've only pressured canned once so far, and it was 4 jars of ugly chicken. I know it's silly but I'm afraid to eat it, what if I did it wrong! LOL
Thanks for that comment that the food would ruin quickly! I think all us newbies would look in on these jars in our pantries and grab something else! And how long would that continue?
I used my first ever batch of ugly chicken [and my first ever pressure canning batch] last night for the first time and I didn't die, so I think I did it right LOL
Thank you for showing the failing part of the chicken and how to save it. First time pressure canning, it helps to see what needs to happen and what will happen when you don't follow the steps.
Pressure canning is new to me, so I REALLY appreciate seeing why wiping the rims is such a huge deal. So, while I'm sorry your time was wasted, I do thank you for your mistake and willingness to share with us!
I like that you didn’t edit your mistake. As a first time learner that makes me feel good about messing things up myself. I use to get caught with analysis paralysis and wouldn’t try anything new until I heard a podcast about just that and I was like nope I need to stop that. It’s definitely better to try then to not. Thank you!!!!! You’re awesome 😎
Thank you! I'm glad you show the real world! Some people will edit out their oops! We are all human and get busy and/or forgetful at times! Especially those of us that are a little long in the tooth !
Those of us who can will always find a way to persevere and not lose what we have put so much effort into for us and our families. Appreciate the video and your efforts. God bless
Thank you for this video! It was a mistake that so very many people would make, had they not seen this video. Thanks for sharing and being a great teacher!
Thank you so much for showing your video with not wiping rim with vinegar. That is a very big step to not forget, for everybody we learn from your mistake!
Thanks so much for your honesty! Everyone will make a mistake, but showing what can happen is so valuable!!! Also, thank you for clarifying finger tight!!!
CORRECTION! Thankfully someone caught this, and I needed to make the correction - the reprocessing time is still 75 minutes, not 65 minutes. This is why it is ALWAYS best to use YT videos as a means of inspiration and visual learning - but ALWAYS double-check canning info with the NCHFP's website or your book. ALWAYS!
Good idea to mix breasts and thighs...I'm going to do that my next chicken canning session! Thanks
Thank you for walking us through how to deal with lids that didn’t seal. You’re the best.
Why? Wouldn't chicken still be safe at 60 min for both pts and qts? I think they could.
If it has meat of any kind I usually let them process at least for 90. Can never be too safe
It's not a failure, it's a learning opportunity...for all of us! Thank you!
It's easy to forget, especially when we are in a hurry. Thanks for reminding us how important it is to not skip this step.
You bet!
Darcy, thank you for your honesty. I really appreciate that you showed all the steps as I, too have forgotten things. ❤
I am glad to see you focus on small batches and that everyone has had fails no matter how experienced you are
Agreed. Really important to share the failures/ hiccups along with the successes
I love when people share mishaps. It makes it relatable.
Thank you for keeping your canning session real & showing us how to fix a mistake in order to save our food! ❤️❤️
You are awesome, thank you for time and lesson.. hugs
I usually just freeze a can that does not seal, thank you for walking us through how to reprocess.
I’m almost 71 y/o and I’m a new canner. Wish I’d started years ago, but I wouldn’t have had this wonderful community to learn from and be encouraged by.would there been a cause to de-bubble, since from camera angle there were air pockets?
It's never too late !!
No need to debubble raw pack meats. The meat will settle during processing and give off its own broth to fill airpockets. Any meat above the broth may become discolored, it is still safe to eat. 🙂
@@melissac3313 I learn something new every day, it’s so exciting to pick up recipes and instructions from those who are experienced,

I learn something new today. I will definitely try this!
Thank you for being willing to show your mistake. It’s nice to know no one is perfect.
Thank you for this video! It's nice to see a "fail" and what to do about it. I'm very new to pressure canning and would have no idea what to do in this situation! It's nice to see real life and not just the pretty, dressed up version.
Ugly chicken is awesome!! Thanks for being part of Canuary!
Wow! Thank you so much for being so transparent about the good, bad and ugly of raw-pack pressure canning. Keeping it real is so helpful for those of us who are totally new to canning.
Thankful for channels who keep it real! Failures happen, sometimes we know why and sometimes not. Ugly chicken is one of our favorites!
Love ❤️ my “ugly” chicken! Favorite recipe is to layer in a casserole dish with rinsed home canned potatoes on the bottom, chicken , herb of choice, top with cheese and bake till bubbly.
Sounds yummy!
Mmm that sounds good! I'm always looking for new recipes for my canned meat! Thanks!
Thanks, a new recipe for “ugly chicken “ is always welcomed!
I recently made chicken/turkey soup made of ingredients that I canned /froze this fall. Was able to share with three of my sister. OMG best chicken/turkey veggie soup EVVVER.

Thanks for your information. Who said an old dog can't learn new tricks?. I am 79 and you taught me something new.
It’s so easy to forget a step. Luckily I’ve caught my forgotten step by going over my cheat sheet before starting my canner. Thanks for showing us how easy it is to slip a step.
I love that you showed the error and then corrected it. Very useful information.
Your honesty about being human brings a sense of normalcy to those just starting out pressure canning foods. Mistakes happen because no one is perfect. I certainly respect those like yourself much more for it. Thank you! ❤

Glad it was helpful!
Good for you leaving in the error and showing how to correct that. That is why Canuary is so great people can learn so much.
I've always said and believe everything happens for a reason and this.missed step allowed this to be a very informative learning lesson and the proper ways to fix it. Great tutorial! You turned a mistake into a learning experience and it's so important to know what to do in the case of a failed seal.
so glad that you were able to save the jars after the "mis-step". Gives others the hope that they too will be able to avert disasters.
Thank you for showing how to rescue the failed lids. I have been canning all my life, and for the newbies this was a good exercise. Appreciate your videos and willingness to share your knowledge. Happy Canuary!
Glad you think so!!!
I am glad you are showing what to do when you have a failed seal. Everyone can make a mistake and this way we know what to do. Thank you for showing us this.

Thank you for sharing the complete video, we all learn from each other’s mistakes!!! I love canning and watching everyone’s videos.
You are so welcome!
Great reminder to slow down and look at recipes no matter how many times you've made a recipe. Thank you.
Such a PERFECT video!! We usually learn the most from our mistakes.
I learned more from this one video than all the several vids I’ve watched! So thankful you made this mistake and then explained where to go afterward. I start my canning journey with the recent arrival of my first canner, All-American 921, any day now!
🤓😬😆
When you show us that you can have things go wrong then it helps me not to freak out when something goes wrong in my canning. Thank you!
I lost 5 jars in my last canning session... it hurt. I could see that it was the fat in the jars that caused my issue. I will be more careful next time. Thanks for sharing real life canning problems.
I love having canned chicken on the pantry shelves. It's just a GREAT addition for easy meals on busy nights.
I forget to de-bubble sometimes even with the de-bubbler sitting on the towel next to the jars. It's very easy to miss a step when you're excited about a new recipe.
Thank you for showing that common mistake and how to save the food when jars do not seal. This is information that everyone needs at some time.
I am fairly new to canning and have had several fails with my canning, pressure cooker issues. I do small batch canning as well, 4 pints at a time.
Thank you sharing the mishap. It will help the rest of us remember the importance of wiping the rim.
I’ve not mixed the thigh meat in with breast meat before, but it makes a lot of sense! Will be doing a batch like that soon
It's very refreshing to see someone fail and share so we all learn. Thanx.
I'm new, actually getting ready for my 1st canning. This video was so very helpful! Thank you so much and for the print out, you Rock! 💜
Remember that is for the Presto only - if you use another canner, there may be some different steps.
LOL
The food will spoil quickly!
Thank you for keeping it real for us. That chicken doesn't look ugly at all.
I am so glad that you showed your blooper and pointed it out for those of us that are new to canning
Allowing us to see mistakes and how to recover from them is important. Thanks for teaching us.
BEST description (plus demonstration) of finger tight of all the videos!!! Thanks from all of us newbies.
Glad to know I’m not the only one who likes to wear nitrile gloves when handling raw chicken! And yes, I also change them frequently, too!
Thank you for showing the failing part of the chicken and how to save it. First time pressure canning, it helps to see what needs to happen and what will happen when you don't follow the steps.
Love this. This is a great way to store chicken without taking up freezer space when chicken is on sale.
I'm glad you showed your mistake, cause I think sometimes people don't think it's necessary. All steps need to be done. Good save.
I was glad to see you shared your experience with a bad batch of chicken with processing. That’s really good to know.
Thanks for pointing out your mistake. It will help the rest of us think twice when we're prepping!
Ugly Chicken was the first meat that we canned. We love canning chicken, because you can make so many recipes with it. Thanks for all you teach us..
Pressure canning is new to me, so I REALLY appreciate seeing why wiping the rims is such a huge deal. So, while I'm sorry your time was wasted, I do thank you for your mistake and willingness to share with us!
Thanks for showing us how to fix the mistake. I like the fact you kept the video real to show us that stuff does happen.
I'm good at forgetting a step when cooking and canning. I do double check now. We all learn something new every day.
I started canning chicken a few years ago and wondered why I had waited so long! My whole family loves it. It's worth the effort to learn.
Thank you for showing exactly how to reprocess a failure to seal. I feel a lot less anxious about canning now.
Oh man. I have caught myself skipping that step before. Thank you for showing us it’s not always perfect.
I learn so much from videos that are not perfect. Mistakes happen and I love hearing how you use them, fix them, etc. Thank you
Thank you for posting this. Seeing everyone's uh oh's gives me less stress when I can.
I think it’s excellent that you went ahead and posted this video. It shows people that even seasoned canners can have mishaps.
Thank you! I'm glad you show the real world! Some people will edit out their oops! We are all human and get busy and/or forgetful at times! Especially those of us that are a little long in the tooth !
Very helpful to see what to do when you have a failed seal. It was also nice to see what the chicken actually looks like once it comes out of the jar.
I enjoyed seeing how real you are even when you make a mistake. Thank you for that and how to fix a mistake.
I love that you showed the fail. It helps others know what to do.
It is easy to forget at times. Thank you for showing what you can do if they do not seal. I know I would hate to throw anything away...
Thank you Darcy for sharing a small batch and what happened as it helps all of use learn together.
Thank you for showing what to do when something fails.
I think this is the best video I have seen yet. Failures are a fact and knowing how to fix it is supremely important
I appreciate how up front and real you are. Thank you for showing your mistakes.
So glad you corrected your error. Some new canners may not have realized the missed step. You are great in your descriptions in how to can protein.
I love how you showed us mistakes happen and how to fix it!
It's so great of you to show how things sometimes go wrong.
I have canned many years and still make mistakes! Thank you for sharing your mistakes for others to learn from!
Thank you Darcy. I always keep my book out and double check procedures and times even after canning for over 30 years. Better to be safe!
I appreciate your showing us your error and owning it. We all have errors at one point or another
Your honesty is so appreciated. It says so much about your character. Thank you.
Those of us who can will always find a way to persevere and not lose what we have put so much effort into for us and our families. Appreciate the video and your efforts. God bless
Thank you so much Darcy!!! Because of your encouragement, I pressure canned 7 pints of chicken today for the first time!!! Thank you!!!!
I love reading all your canning and dehydrating videos. You are a very thorough teacher.
Thanks for showing us new canners how to save our food !!!
Yes please to that pressure canner! Thanks for the opportunity! 💜
Thank you for this video! It was a mistake that so very many people would make, had they not seen this video. Thanks for sharing and being a great teacher!
I love the repurposing of jars!
Thanks for being 'real' and showing your mistakes.
Thank you so much for showing your video with not wiping rim with vinegar. That is a very big step to not forget, for everybody we learn from your mistake!
I really appreciate you sharing not just the pretty chicken, but also reality that it doesn't always go perfect. Thanks so much for sharing!
Thank you for showing the errors and how to correct them. We are all human. Thanks for sharing.
Thank you for showing us how to save a project that didn't work out!
Thanks so much for your honesty! Everyone will make a mistake, but showing what can happen is so valuable!!! Also, thank you for clarifying finger tight!!!
Thank you for showing us how to save the jars that did not seal.
I appreciate you showing us that mistakes happen-because they do. Thank you for also showing how to correct the problem. 👍
I'm am so glad you showed this so that newbies can learn from one of the most important tasks.
