These look scrumptious. I use to be a burrito fanatic until I became a diabetic. Now I've taken a shine to enchiladas because corn tortillas are lower in sugar than the ones made of flour. I like enchiladas when the corn tortilla gets nice and soft, almost to the point of being like a tamale. My favorite is shredded beef, or Al Pastor style with shredded pork. Delicious.
I made these. They were INCREDIBLE. Recommend 100%. One suggestion: double up the spice rub as I did not have enough for 2 lbs of chicken and had to make some extra.
I love the oregano in the spice mix and the technique of dipping the tortilla in the sauce instead of pouring sauce on top of all of them after they are rolled! I'm going to try this recipe tonight!!! Thank you!!❤❤
The one thing I love about Claudia’s recipes is she uses ingredients that are easy to substitute based on taste or what you have available to you! I made this first for vegetarians/vegans so I had to substitute the chicken for mushrooms, lentils, and homemade refried beans with a nutritional yeast cheese sauce on the side and they loved it! I didn’t have access to the dried chiles so I used a 7 oz can of chipotles en adobo for the sauce and followed the rest of the recipe as written. Made it the way it was written secondly and was so grateful for leftovers! Makes amazing freezer meals for when I am short on time for the work week. Thank you!
This recipe is amazing, and it’s been a blockbuster every time I’ve made it. Try experimenting with different varieties of chili for the sauce! I added dried Guajillo peppers and half of a medium onion to my sauce mix prior to blending.
This is about the 10th recipe of yours I've tried. The flavor levels and complexity are amazing. Too often I've had bland food and spicy sauce. I've never tried to make a homemade enchilada sauce before making this recipe. We had a cup or so of sauce left over and my husband grabbed it and told me he wanted to pour it on everything. I'm super excited to get your cookbook! (It will be the first cookbook I've bought in years as I keep a binder of favorite recipes). IF you need a video idea, I'd love to have some further information/suggestions on the types of dried peppers and how they are best used in recipes. Thanks for another great recipe!

I used New Mexico chile pods since I didn't have the Chili moritas. I used 2 of them after I softened them (along with other pods). My family went CrAzy over the sauce. Good luck!
Would be nice to see you do a video using store bought ingredients making enchiladas semi-homemade. Meaning if someone doesn’t have time to boil the chilis and blend to make the sauce. Thank you. 😊
