Making enchiladas can be a little messy, but just clean as you go 😅
PRO TIP!!!!
The 2 morita adds a little smokiness if you can’t find them you can substitute for 1 dried chile
chipotle or you can simply skip on it 😉
If cheese is at room temperature, it will melt in less than 8 minutes 😋
Ingredients: 24 enchiladas
Spice mix:
Salt I used 2 1/2 tsp
2 tsp black pepper
2 tsp ground cumin
2 tsp chipotle powder
1 tsp oregano
Filling:
2 lbs chicken breast(sliced in half)
1 medium size potato; chopped in small cubes
1 carrot;chopped in small cubes
1/2 onion;sliced
1 jalapeño
1 roma tomato
2 minced garlic cloves
For the sauce:
2 chile ancho
2 chile morita
2 chile árbol
3 garlic cloves
1 tsp vinagre
4 tbsp tomato paste
5 cups chicken broth or water
4 tbsp butter(salted or unsalted)
4 tbsp all purpose flour
4 tbsp chili powder
Salt to taste
To assemble:
Oil
24 corn tortillas
Melting cheese of your choice
1 serving of love 💕

I made these. They were INCREDIBLE. Recommend 100%. One suggestion: double up the spice rub as I did not have enough for 2 lbs of chicken and had to make some extra.
These look scrumptious. I use to be a burrito fanatic until I became a diabetic. Now I've taken a shine to enchiladas because corn tortillas are lower in sugar than the ones made of flour. I like enchiladas when the corn tortilla gets nice and soft, almost to the point of being like a tamale. My favorite is shredded beef, or Al Pastor style with shredded pork. Delicious.
This is about the 10th recipe of yours I've tried. The flavor levels and complexity are amazing. Too often I've had bland food and spicy sauce. I've never tried to make a homemade enchilada sauce before making this recipe. We had a cup or so of sauce left over and my husband grabbed it and told me he wanted to pour it on everything. I'm super excited to get your cookbook! (It will be the first cookbook I've bought in years as I keep a binder of favorite recipes). IF you need a video idea, I'd love to have some further information/suggestions on the types of dried peppers and how they are best used in recipes. Thanks for another great recipe!

Drooling, those look amazing. At the end of summer my local food bank has so many peppers available from the community gardens. This year I'm gonna have so many more uses for them. You've taught me how to make salsa and enchilada sauce with them.

What do they do in Mexican restaurants to make the enchilada sauce brown? Most places I go to the enchilada sauce is brown, not that I mind, on the contrary...I love it. I was just curious.

I make enchiladas about once a month, based off of previous recipes from Claudia. I mostly make the beef enchiladas and I experiment between red and green, and different cheeses. I go to my parents house every few weeks and make them veggie Mexican dishes (they are vegetarian, to my dismay lol), and I've been thinking of trying eggplant enchiladas. i don't know if that's a thing, or if anyone could make that authentic tasting. I don't recall Claudia using eggplant in any dishes, but what I've learned from here has gotten me so far. She uses carrot in this one, which I've never tried. What about eggplant, potato and carrot enchilada? The possibilities are endless!!!!

Looks yummy! I'm Mexican and have never had enchiladas with this type of filling and using using black pepper. I'm vegetarian and want to try making this sauce with vegetable broth instead. You're so brave Claudia for making this with a white top on! 😄 Muchas gracias!
you cause potatoes, cut in cubes bake first then mix with sauce and saute onion and garlic then mix together. I tried is good
