Just made these enchiladas last night-my husband and I loved them! Thanks for the recipe and you made it quick and easy and had the camera focus on the food prep the whole time-I'm a visual learner-it was great instruction. I did make a mistake and bought the green enchilada sauce but it was just as good. I also used flour tortillas as is and fresh salsa I had in the frig. I also used jalepenos. Really good.
I just made these with my boyfriend. Had no idea I was supposed to fry the tortillas in oil. What a difference! We mixed the beans in with the chicken and onions and it was BANGING!!!!! 100% making this again !!
Hi, AB!! I've learned so much from you and I'm so glad I found your channel!! I have a pro tip for you, though, and everybody else out there. A quick way to heat your tortillas to perfection is to take 10 tortillas and wrap them in wax paper. Stick that packet in the microwave for 2 minutes. Remove them from the microwave with a potholder. They'll be soft and hot when you take them out so be careful (I keep a wet paper towel bunched up nearby to cool my fingertips). You gotta work fast when you open them and you can just continue on the way you do. I usually take one, place it on a plate, put my filling in, roll it, and place it in the pan seam side down. Repeat until you have all ten done. A couple of hints: If you're doing at least 20 enchiladas, you can make 2 packets of ten and when you finish with the first packet, stick the second one in the microwave and continue. Also, a good idea is to actually use 11 tortillas because the tenth one might stick to the wax paper and you don't want to waste precious time trying to unstick it. Just use a beat-up or broken tortilla for the 11th one. Every pack of tortillas has some misfits in it. Try it and see. You'll never do it any other way after that. Yummy! I would add some of the enchilada sauce and rotel in the meat though.. it's just easier. I would then cover with enchilada sauce and cheese. Looks great. Thanks for all the hard work!!!

Tried this, the flavor was great! I made two changes, I put all the ingredients in the skillet with the chicken and stirred it. I brushed olive oil on all the tortillas and then microwaved on high 3 at a time for about 20 seconds, rolled the filling in the tortilla and put in the baking dish. It went quickly and the family bragged on it. Thanks for the recipe!

I cook for the Food Bank Volunteers in my area. I made these for them yesterday. I added epis( creole seasoning to the meat and onion mixture) and stuck to the rest of your recipe. They came out so moist and decadent. Thank you for sharing your recipe. I'm looking for more recipes so I'll check out your channel.

Looks good as usual, AB. Made this same recipe myself several times. Only thing I do different is I add the can of drained Rotel and drained black beans to the shredded chicken and onions and warm thorough. Then spread on the tortillas with the enchilada sauce and cheese.

I jump start my box chicken stock by putting the stock in a sauce pan. When I am shredding the chicken, I toss in all the skin & bones. I let the liquid come to a gentle roll, to add the extra flavor. I strain the stock to remove the skin & bones. Now you have jumped up the flavor. Just an idea. Dude! That looked awesome. That's how I do my enchiladas. The rotisserie chicken is fine. I mix it up a bit and use some Hatch Three Chili green sauce mixed with half & half. Either way, it rocks like you do brother! We have similar tastes in good food. Keep bringin' it AB!

PRO TIP: if you want to shred the chicken to the perfect consistency in seconds? Use a hand mixer it’s saves lots of cook time

I boil up a whole chicken, shred it and add canned green chiles. I've been looking for a recipie using las Palmas, but with a homemade twist. I cannot wait to try this!

Dude! That looked awesome. That's how I do my enchiladas. The rotisserie chicken is fine. I mix it up a bit and use some Hatch Three Chili green sauce mixed with half & half. Either way, it rocks like you do brother! We have similar tastes in good food. Keep bringin' it AB!

Dude your the man!! My first time watching one of your videos, I mostly did it exactly how you did but I did flour instead of corn tortillas. Because sour cream is the authentic way to eat them and for us mexicans its a very different sour cream that you buy in the states
