Judy Zuniga if you want to make them non spicy you can add a couple of tomatoes or you can use New Mexico chile pods they usually come in a green bag, you can message me on any of my social medias and i will send you the picture of it ☺️

Claudia, I like how you give us the measurements in cups instead of ounces especially for the dried chilies. Some of us don’t have scales or know how to cook using metric measurements. And this is a great recipe. Thank you.

I made beef and cheese enchiladas this weekend using the sauce from this recipe. I tripled the recipe since I wanted enough sauce to mix in with the beef and then baked the enchiladas in the oven with it. Came out so so so good! Boyfriend said it was the best enchiladas I ever made. Your recipes are always on point!

I love referring back to this video for the salsa its SO good. However i stuff mine with a boiled shredded chicken which i also marinate and cook in the sauce, and place them in the oven to get them a bit crispy and top them with chopped lettuce onion, sourcream, queso cotija and avacado 👨🍳 🤌🏻 ❤️🔥 thank you again 🤩🤩

Like you said when you cook the chiles only put enough water to cover, and don't overcook or they get bitter. I like baking too and making liquados and aguas frescas. Thank you for your replies. I was always intimidated by making my own sauces but thanks to you, i see these chili pods with a whole new look. :)
If I don’t put the tortilla in the oil first then in the Chile then back in the oil.. the tortillas falls right apart on me. Just a tip if anyone is having the same problem ! Looks delicious Claudia !!
If you fry the tortilla with Chile sauce, you do not need to fry it in oil first, you only fry it in oil if you dip it in the sauce right after, then add your stuffing n roll...
If I dip it in the Chile sauce then on the oil it always falls apart and I can’t even roll it 😭😭😭 I’ve tried making enchiladas this way 2 times before. I’ll have to try a different brand of corn tortillas !
