I remember my grandmother given me the recipe for enchiladas with the wolf chili over 50 years ago. Thank you for reminding me. I'll be given and showing my granddaughters how to make enchiladas with the wolf and red sauce.
Arnie, I love how loving & respectful you are to your Mom! I’m torn between these two recipes, they both look amazing! But Mama’s recipe wins, just because it’s so simple and immediately reminded me of my pre-retirement office days. Back then, I had the privilege of making three wonderful Mexican American friends over the past 30+ years. They all shared the practicality of their mom, grandma, and other family cooking and life stories over the years. It wasn’t until I retired in 2019 that they finally shared their “secret” recipes, and I’m so grateful for that!
I laughed when I saw the title of this video! I’m a gringo who lived in South Texas for 22+ years. My “adopted” Hispanic mom made the BEST enchiladas and I had eaten enchiladas all over Texas. When I finally talked her into teaching me how to make them, they were almost the exact same recipe as your mom’s! The only difference was in addition to the cheddar cheese, she added a little bit of grated Velveeta! She would freeze the Velveeta before she grated it (this was in the ‘80s before they sold bags of grated Velveeta in the stores.) Her family had lived in the Rio Grande Valley since way before Texas became Texas and I thought I was going to get this secret recipe of Mexico for enchiladas. I still make them now almost 40 years later and they’re still my favorite!

Hello Arnie and mama, just want to let you know I really like your recipes my grandma use to cook Tex-Mex and her tamale’s we’re the best and Arnie I like your enchiladas but I have never tried the way your mom makes them so I’m making them right now since there was enough sauce in the chili beans I dipped them in and rolled with a little onion and cheese and now just waiting for my husband to wake up to put the chili beans on top and put cheese on top cover them and put them in the oven. I love watching you and your mom and your recipes are superb, thanks for sharing. God bless

My mother always made cheese enchiladas with wolf brand chili so now I do. You are the first I have seen do it this way. Love it!! We also put extra onions on top with the cheese. I’ve never seen enchiladas in a restaurant with chili on them and I really don’t like red sauce. I’m going with your mom for the win!! We are from the Lubbock area and there is a lot of great Mexican food here but nothing topped mom’s enchiladas.

Every time there is a mom recipe, you know its going to be good. Once I heard you say you were going to use a sauce from scratch, I already new you were the winner. I am sure moms recipe is just as good, but I am old school and the only reason I will make a recipe out of a can (which I call a Rachael Ray"s fast meal) is when i am feeling lazy. I will use Las Palmas sauce or El Pato sauce. Top it off with queso fresco, queso cotija. As you say, which ever way you make it , it will turn out to taste great. Thanks for sharing. I will have to see if I can find and taste that wolfy chili, here in California.

I have to give the win to mama. Her enchilada looked like it was covered in smooth liquid gold lava! Mmmmmmm Mmmmmmmm good! But Arnie, POINTS to you for adding meat AND cheese inside your enchilada! I cook up some ground beef on the side just like the way you do but also use the Wolf on top. You get 2 contrasting tastes and the best of both worlds! Keep up the great work!
I am from Texas living in China for the last 5 years. Unable to go home due to COVID restrictions that canceled air travel. I made mom's enchiladas yesterday and they were so delicious. I am unable to find Wolf brand chili here (there's a hole in the market), but I used a different brand. Same with tortillas so hard to find, but I managed. Gracias a tu mami tan linda!
This is exactly how my mother in law taught me to make them using wolf brand chili about 30 years ago. She's from the Robstown area. I stack them sometimes because it's faster than rolling them. I love them...and they taste even better the next day.

I always make them with the traditional sauce like Arnie, have to try it the other way some time. Arnie, if you dip the tortillas in the hot oil like your mom does and then dip them into the sauce right before you fill and roll them they’re not as likely to tear apart. It was a trial and error thing for me LOL
I love chili. All kinds of chili, even Wendy's chili. I discovered Wolfe brand chili when we got some in our Seattle Dollar Tree store. Now if I find it at Walmart I buy 5 cans at a time. Dennison is still my favorite with Nalleys a close second. Happy to see someone else use chili in their enchiladas
Hey Arnie, this gave me a couple ideas. My mom used to make enchiladas with onions too, and I discovered if you soak the onions for 10 minutes and rinse them out, it takes away a lot of the unpleasant bite raw onions have. Also, I think if you covered the pan with foil and then uncover them for a few minutes at the end, you can get the best of both worlds in regards to softness and color.
@arnietex my grandfather did his enchiladas the same way as your mom. My mom and I have both done it the same way and taught people our way.. I have recently started making my own chilli sauce. One suggestion I would make is to do the tortillas in oil then put a thin layer of chilli sauce on the bottom of the pan and after placing the enchiladas, put some sauce on top with cheese and or onion. It makes rolling them much easier.

My late Grandma made her enchiladas just like your mom. I'm glad I found your video. It reminds me of my Grandma. See however cut up a block of American cheese and used that in the filling. I'm usually not a fan of American cheese, but it's good in these with the onions and chili .

Oh my goodness. I have never found anybody that makes enchiladas like I do. I'm a fifth generation Texan and make enchiladas just like your mama including the wolf brand chili on top and Colby jack cheese inside.

Amazing twist to enchiladas. I have never seen anyone use canned meat I am from West Texas and the traditional form is always as you did your regular ground beef the authentic sauce and the cheese. Now I understand when I went East in Texas how everything was just transformed differently not sure how it happened but it is a different twist. 👌

The enchiladas that Arnie makes is how my mother would make them and the chili enchiladas is how they would make them at restaurants and my elementary school. So I love both styles of enchiladas.

Both my parents grew up in NM so I grew up eating the red enchiladas stacked flat with the fried egg on top that she mentioned. It’s soooo good!
