This is a part of a secret traditional Korean cooking technique called "Just put the right amount in" in which she just puts the right amount in without actually consulting measurements.
This is the truest example of "cooking is an art form". You are not meant to have it taste exactly the same every time you make it. Slight variations in the amount of each ingredient is just how the process works.
Don't worry, that's Italians too.
Though, as far as Italians go, it seems that's THE ENTIRE RECIPE and not just one thing here or there.

Mrs. Cho, your Italian mom, and my Puerto Rican one all must've gone to the same culinary school! 😂 I always thought it was 'cause my mom has a sight impairment to she learned how to just go by feel/smell/taste. But turns out that's just homemade mamas' cookin' for lots of cultures! 😍😍
It is an intrinsic byproduct of cooking for your family for a long time. A combination of practice and experimentation that allows a true master to subtly adjust a dish until it achieves perfection.
That and learning to recognize when an amount of an ingredient just feels right.
This is one of my favorite korean side dishes but I never knew what it was called! It looks pretty easy to make, too!
I could watch hours of Mama Cho cooking Korean recipes. I love to cook and I love Korean food, but the only Korean food I know how to make is 비빔밥 and 파전. I'm definitely trying this recipe!
Update: I tried this recipe and I can honestly say 콩나물 맛있었어요*. I ended up using the 고추가루** that I had from the bean sprout recipe in some spinach soup I made (instead of my usual Western supermarket red pepper flakes, which I was out of) and it was amazing. I'll definitely be using it in a lot of my recipes.
*What I was trying to say: "the bean sprouts were delicious." I probably messed up the spelling.

Korean Bean Sprouts sound nasty. Dislike
Mama Cho's Korean Bean Sprouts (Kongnamul Muchim) Recipe:
1 cup brown rice
1 cup medium-grain white rice
1 cup short-grain white rice
Wash rice, put in pressure cooker. Fill to 3 cup mark. Cook 10 min.
1 bag soy bean sprouts (1.5lb), washed
1 Tbsp olive oil
1 Tbsp minced garlic
2 tsp salt, sprinkled between layers of bean sprouts
Cook covered 1 min on high, then 5 min on medium. Uncover and turn heat off.
3 green onions, halved and sliced.
1 Tbsp red pepper (gochugaru), to taste
1 Tbsp sesame oil
2 tsp anchovy sauce / fish sauce
For those who are unfamiliar, anchovy sauce is often just called fish sauce.

Also for reference: the red pepper flakes are specifically Korean gochugaru, the stuff used in gochujang (red pepper paste).
You can buy them in big jars like hers or packets from the Asian supermarket/online and use them in tons of Korean (or non-Korean) dishes. Don't think this dish would work with the Italian kind etc as well (if at all?).

Also resonate with how your mom tries to explain measurements. My mom also taught me to add until it feels right in your heart when cooking.
This is how I season everything when cooking... I eyeball about what I think is the right amount or too little, and then I taste it and adjust until it makes me want to not stop tasting. Until the heart sings, is how I think of it!

Wash rice??? Guess my hillbilly behind missed that memo
Always wash your rice! Not only to clean it from any dirt, debris, bug stuff, but also because it helps keep the rice separated when cooked and it helps keep it from sticking to the pot since washing it separates the starches.

I watched a video on the history of this not too long ago
from what I understand, it's more of a tradition thing than an actual necessity
I learned it like 20 years too late and just don't bother lol
to remove any impurities and excess starch. If you prefer your rice to be more sticky then wash it only few times(water still milky), if you want it to be more fluffy then wash it until water come out clean. Water to rice ratio is still more important tho.
