I absolutely love that this isn't a "traditional" Mapo Tofu in the slightest - this is just good old, simple home cooking. It's clear this is something that your family actually makes and eats.
I was surprised she didn’t use doubanjiang, substituting with pepper and sriracha. Everything else seemed fairly by the book (more veggies than usual but she’s turned it into a one pot kinda thing)

Mapo Tofu is Chinese and Sichuanese! It’s fine for other E. Asian cultures to put a spin on it, but the origins should be respected.
I don't even know other cultures than Sichuan had mapo tofu coz Sichuan mapo tofu slaps

Sichuan Mapo Tofu is one of my favourite dishes, I learned about it from shokugeki no soma and after my first bowl I became hooked.
