    Gluten Free Sponge Cake
    4 Eggs (58-60 gr. each with shell)
    65 gr. Rice Flour
    25 gr./ Corn Flour / Corn Starch
    30 gr./ml. Whole Milk
    22 gr./ml. Vegetable Oil
    1/4 tsp. Salt
    1 tsp. Vanilla Essence
    100 gr. Fine Sugar
    1 tsp. White vinegar
    Preheated Oven: 150°C
    Baking temperature: 150°C
    Baking Time: 35 minutes
    After 35 minutes, increase the temperature to 170°C and continue baking for another 3 minutes without opening the oven.
    Baking time may vary depending on the type and accuracy of your oven.

    I really really appreciate this recipe, Michael. I made it for my celiac boyfriend for his birthday, and all the guests couldn't even tell it was gluten free. This is a recipe I want to keep for life!! I'm sorry there are so many haters, but I am very grateful that you posted this video. :)

    So I tried this recipe and I found it to be somewhat dry and lacked flavor (my own personal opinion, but it was a really good start.
    So I modified it by adding an extra 20 g of sugar and replaced the cornstarch with Arrowroot flour/starch as well I added about about a tablespoon of tapioca flour/starch and it was amazing!
    More moist, more flavor and a nice texture. Couldn't tell that it was gluten free. I am so grateful for this recipe even though I modified it. It was a perfect base recipe to work with. I finally get my sponge cake with strawberries and whipped cream again after being gluten free for nearly 15 years! And it's so easy to make! Thank you so much for posting this :)

    I’m French and is looks better than any génoise I’ve seen on other French video! It looks perfect! And the fact that no baking powder is needed is awesome!

      I have Celiac, and I have been giving up on bakery. I just find some gluten free receipe for bread and I enjoy it very much. You have no idea to miss one food that you have been enjoying for all your life and suddenly you can not eat it anymore. My favourite cake is chiffon cake and I want to try out you receipe so bad.       awwwww:) you know micheal i tried this recipe, and i forgot to butter the pan, or put a baking sheet, but it turned out to be as good as i did it last time. thank you so so much micheal:)

    Baked 3 times. Very successful. For the last one l used lemon juice instead of vinegar. Thanks a million. So suitable for my husband who is gluten intolerance.

    Amazing recipe thank you!! Made for my Mum’s birthday who is coeliac. Her favourite cake was always sponge, jam & fresh cream and she hadn’t had a sponge cake in over 20 years! She loved it! Thank you for your efforts in experimenting and creating this recipe!! 😃

    My 6 year old son has just been diagnosed with celiac disease and one of my first thoughts was how he couldn't eat your vanilla sponge anymore (one of the few sponges he will actually eat what I make 😂) so I can't wait to try this!     I've just made this and it was awesome! Soft and fluffy.. but it took me longer baking time. No one ever know this is gluten free if it's not me who spill the beans.. thank you Michael!!

    This recipe is so amazing, I can't believe in my eyes when it's come out so well without any baking powder at the same time I was so happy also. And I tried with buckwheet flour, rice flour and chickpea flour , just wanna make little more healthy. Thank you so much Chef you are awesome.

    This cake is incredible. I love baking and have recently been diagnosed with a wheat and gluten allergy, which has made things quite difficult! This recipe is an absolute game changer. I have made it twice already, both times in an air fryer and it worked really well. Next, I am going to try a couple of variations - I think an orange flavoured cake will be fantastic 😊

      I was thinking lemon would be good too. Anything citrus for sure.
      I've had celiac since 2015, it gets easier. Gluten is in everything. If you have not yet, check out the gluten dude. His site is the most informative. The gluten watchdog is amazing too.

    Wow! I have made this sponge cake, and I am absolutley blown away with the result. As someone who suffers with IBS, Gluten free helps me immensly. I am extremely gratefully to be able to have a treat that is not going to affect me the next day! and to be able to simply add fruits to it, and maybe a syrup on top, its fantastic! Thank you so much, keep up the great work!. I WILL be looking for more!

    I just followed this exact recipe! Except I made it dairy free by substituting the milk with soy milk, and I also used Mochiko sweet rice flour instead of normal rice flour. It turned out AMAZIIIING thank you Michael for this recipe! I made this for my mother who can’t have gluten or dairy. This video is literally perfect

    My nephew is gluten free & his mom just bought him a small gluten free cake and so expensive!!! I love baking at home cake boxes never have I ever made one from scratch so I thought to look into videos and learn how to bake a gluten free cake. This recipe is awesome I accidentally bought chocolate flavor corn starch I used it and added a little cocoa powder too and let me tell you it was soooo delicious and moist. Thank you for this recipe you are awesome!

    I just made this today and wow the comments do not lie, this recipe tastes just like a normal sponge cake (with gluten). I also added pandan extract to make it into a pandan sponge cake. Thank you for your hard work to modify and create this recipe!!

    I cannot tell you how happy my mother was taking a slice out of your amazing cake! Respect to you!! Mum being highly gluten intolerant does not trust the store bought "Gluten Free" cakes and so really missed her favorite sponge!! It was her Birthday and I followed your recipe as you had said and it was a huge success! The cake wasn't too crumbly or doughy it was simply perfect!!
    This is by far the best gluten free cake recipe!!

    Love this. Thank you. I have been experimenting for 12 years and your recipes are simple and delicious. We just got back to the States from the U.K. and this was one thing I added to my list of things to learn. Now I just need to figure our GF croissants and GF sourdough. I brought some back with us to use until I can make them as I cannot buy locally.

    Thanks for the great recipe. Yes, you can add cocoa powder. I added 20g of cocoa powder. I baked a little longer than with a bright biscuit. 45min at 150 degrees Celsius and 3min at 170 degrees Celsius. Awesome 💝 thank you 💝 Love & Light

    I made this cake for him and it turned out beautifully!
    I have tried so many others and they just aren't very good to be honest.

    I've never baked before but tried your recipe. I substituted the oil with coconut oil and used a breadpan as I didnt have a cake one at hand. It turned out lovely. Very fluffy and moist. Many thanks.

    Thank You so much for this recipe ,it’s my brothers birthday and I really wanted him to have some cake.It turned out great and it tasted amazing.I didn’t have corn starch so I used yellow corn meal which did make a bit harder it truly wasn’t a problem.

    I have tried to make gluten free cake for years. This time I finally succeeded! Many thanks to Michael! In the second batch, I tried 50g instead of 100g sugar. Oh and if anybody wonders still, I tried 6 in and it did not work. 8 in worked perfectly!

    I just put it in the oven. Here in the US, our ovens don't do Celsius, so I put the oven on a little lower to 300 degrees and will go higher for the last 3 minutes. And because I didn't have any white vinegar, I subbed it with apple cider vinegar. I wasn't sure what fine sugar you were using (powdered or regular sugar put in the blender to make it fine. I just used regular sugar because I am a lazy cook. Edit: I also do not have a spring form pan so I used my 9 inch round cake pan. I guess I will find out in a few minutes if it will taste good or not! I am pretty excited to try it!

      Have you maybe tried this recipe for cupcakes as well? Would that work or would it stick to the cupcake liners? The consistency seems a lot like that of an angel cake so I'm not sure. 🤔

    This is genius. Even though I can't eat egg whites (can have yolks), I was fascinated by your method. You've given me great ideas for how I might improve some of my foods. THANK YOU for your time and effort. (me: celiac, and mast cell disorder - very limited diet)

      You can substitute the egg whites with aquafaba, powdered sugar, cream of tartar, and xanthan gum. Just make sure the canned chickpeas says "NO SALT ADDED" or it's nasty.

    Michael u should not let negative comments deter u fr getting yr art to a higher level. I have great respect for yr work n believe in yr skills n determination to bring new ideas into yr baking. U r possibly quite a perfectionist. In this world of the Internet nobody is 100% for u. There will always be detractors. However know that yr fans will support u, at least I know one who will 😊

    Many thanks for the Best sponge cake recipe. On top of that it’s gluten free. I used this recipe for making sponge for pineapple cream cake and it turned out to be so soft and flavourful. Finally I can enjoy pineapple cake that is more tasty than gluten ones 😊

    I used this mixture to top brown sugar, Pineapple rings and Glace cherries to make an upside down cake.It needed cooking for fifteen minutes longer. It turned out extremely well and I will be making it again soon.

    Excellent sponge cake. I have yet to try it myself but you made the entire process an art form. Doesn't look gluten free at all.

    Thanks so much, Michael. Wonderfully produced. The cooling rack lines add to its appeal. I will try it with other glutenfree flours like arrowroot, sorghum and millet, and with some added cocoa. Freeze dried fruit powders would be great in the mix as well. I'm excited and inspired. 😘🙏

      Have you tried it with arrowroot? I found the cake a little dry and instantly thought arrowroot might improve it. Overall I'm quite happy with this recipe and am very grateful for it.
