SARDINIA, ITALY - Sardinia, an island with a lot of history in the Mediterranean Sea, is unlike anywhere in Italy. It’s my first time to visit this incredible island, and we’re going to explore some of the local Sardinian food, from the sea to the land, including some of the most extreme Sardinian cheese!

Seafood - To begin this Sardinian food tour, we started off in Cagliari, Sardinia. It was originally going to be a fishing trip, but turned out, they didn’t really want to go fishing, and instead they had some fresh fish and and seafood on board. At first we were all a little disappointed, but the crew Chef cooked such good dishes, that it all made up for it. The fresh seafood was outstanding and the simple Sardinian preparation was delicious. One of the highlight dishes was Fregula - Semolina ball pasta with seafood and tomato sauce.
Agriturismo Fattoria Cuscusa, Gonnostramatza, Sardinia - Next up we headed into the Sardinian countryside to try a rare and dying art of roasting a suckling pig underground. You never know how it’s going to turn out as you can’t monitor it. What was most interesting to me was all the different Sardinian herbs and bushes that went into the cooking and preparation. That’s what truly made it.
But the real highlight of the day was trying Casu martzu - Sardinian sheep cheese with live insect maggots!
It was an incredible introduction to the real Sardinian food, people, and culture!

Hi Mark I'm italian and i can only say thank you for showing our cuisine to the world and how deep and diverse it is in every region of our country, unfortunatly our food is often "faked" and low quality products are sold as made in italy ruining the perception of our food in the rest of the world. Hopefully more people will come here and try our cuisine as you did in this journey, the love that you have for the food is noticeable and i hope that you liked everything!
Hopefully Italians take less pride and eat other food too.
And the good thing is that italian food is healthy
Mostly all the Italian food is very simple, alot of Seafood and not much meat. It's so different than what people think.

When I was young, we had an Italian grocer in our neighborhood…really old school…he would bring us in the back to sample some food. He would go back home and bring back amazing goodies…like lemons as big as your head…cheese with maggots in it and divine salami! Miss you Mr. Merola!
Would never eat the cheese with live maggots, but everything else looks good!

Knew a couple Sardinians back in the day. They always told me I should visit because of the food and culture. This video made me want to visit the island asap. Food looked amazing. I love how serious Italians take their food. It’s heartwarming!

You really have to go. I went to sardinia in 2022 and it was the most memorable memory of my life! The beaches are not like other, it’s paradise! You have to see it.

My acquaintances once visit Sardinia and told me their foods are delicious. Giorno, Buciarati, Mista and others, you guys sure enjoy trip to this seafood heaven in Italy.
Everything looked delicious except for the maggot cheese. Pretty sure I wouldn’t want to try it. Kudos to you, Mark, for always trying every dish and being so positive and appreciative of everything you eat.
I suggest you trying tho, the taste is like nothing else, most people who dare gets addicted to the flavor

It's crazy how all cultures experienced some kind of underground cooking.
18 years ago stayed 1 week for whole family at OLBIA, North Sardinia, HB but 5 course evening meals. OMG the KING PRAWNS made us cry as they were so huge

It's a rainy cold day here in San Diego, CA but watching this incredible episode transitions me into riding on fishing boat bayside scarfing down fresh caught seafood with a magnificent crew on deck. Then smelling the aroma of backyard garden herbs, wood, & berries roasting underground a succulent pig from a nearby farm. OMGOODNESS!! What a phenomenal virtual barbeque from the best the earth has to offer. Salud to Mark & friends for bringing us such a magical experience from Italy once again!! Hi Mark, I look forward to enjoy this video, as I like Sardinia a lot. If you are still there, you must try Culurgiones, its a traditional fresh pasta dish from Sardinia, a kind of ravioli with a filling of mashed potatoes, pecorino cheese and mint. Sounds a bit strange, but its really delicious. Best enjoyed in a simple restaurant with a simple tomato sauce.

The mountain areas of Sardinia is one of the 5 Blue Zones in the world (places where people grow very old) It would have been interesting to see what they eat up there...Such a shame you didn't have longer time in Sardinia...I am going there in June and looking forward to all the good food there...Can recommend the Greek Island of Ikaria (another Blue Zone) If you want to taste truly healthy, delicious, healing food. I Went there for a month last year, and the food was amazing.

very happy to see another sardinia video, its been super long. last time i seen sardinia was when andrew zimmern went there and i learned of botarrga and the fact they eat mullet there as tradition where as america we usually just use them as bait. mark doesnt explain those cheese well, people say its literally gasoline and ammonia mixed together thats how strong it is lmao

I think that bread just wanted to get in your mouth Mark. 🤣 That meal on the boat was amazing. The lobster and fried seafood had my mouth watering. And it's so cute how Eduardo is always feeding Mark, he's the best tour guild.
And I've never tried the Casu Martzu cheese but I did buy that flavor of chips from Illegal Chips. It was funky and interesting but I have no idea if that's really what it tastes like.

Mark, I was 16 minutes away from Phed Mark on Friday, 1/19/2024! I regretted I couldn’t stop by. Phed Mark was on my list to eat while in Bangkok.
