CHIANG RAI, THAILAND - Today we’re traveling to the mountains of Chiang Rai and harvest, cook, and eat garlic chive roots - known in Thai as rak chu (กรากชู) with the Akha people - but before we arrive, we’ll enjoy a dish you can’t leave without trying.
Part 1) THAILAND’S HIDDEN DISHES, with Tourism Authority of Thailand - This is Part 1 of a series of 5 videos where we’re traveling across Thailand to eat 5 hidden dishes to support local communities and highlight their unique food. Today we’re in Chiang Rai (เชียงราย) to eat pork fried with garlic chive roots (หมูผัดรากชู).
Nam Ngiaw Mor Din Pa Aeed (น้ำเงี้ยวหม้อดิน ป้าอี๊ด) - maps.app.goo.g... - Immediately after landing in Chiang Rai, we got the rental car and drove straight to Nam Ngiaw Mor Din Pa Aeed (น้ำเงี้ยวหม้อดิน ป้าอี๊ด) to eat a bowl of nam ngiaw, a northern Thai dish including noodles and a tomato stew. It was as good as it always is. Something you don’t want to miss when you’re in Chiang Rai.
Pha Hee Coffee (กาแฟผาฮี้) - maps.app.goo.g... - The main destination was about an hour drive from Chiang Rai into the mountains to meet Pa Luang Aran, the head of the local Akha community. After a quick coffee we continued to harvest garlic chive roots and they made 3 different dishes, pork fried with garlic chive roots (หมูผัดรากชู), chili dip with garlic chives (น้ำพริกรากชู), and laab Akha (ลาบหมูอาข่า). It was an exceptional meal, everything fresh and dedicated to garlic chive roots.
Locus Native Food Lab (maps.app.goo.g...) - To complete this northern Thai food tour we went to the best gourmet northern Thai dining experience, led by Chef Kong of Locus Native Food Lab. Along with a full course of dishes, Chef Kong also cooked a dish using his own complete interpretation of garlic chive roots. An absolutely spectacular meal.

Garlic chives! Wow! That's some amazing looking garlic. I love garlic Mark and would love to get my hands on those garlic chives. Garlic has a few good health benefits, so I imagine that that healthy too.

Thai food is my favorite food but I wish I could find more authentic Thai food like this where I live in CA besides the same dishes you find in every restaurant.
Me, too! A big problem is sourcing the many ingredients that are uncommon here. I have been able to grow my own lemongrass and Thai basil and chilies, but many of the other ingredients just don't thrive here. I'm guessing that's why CA Thai restaurant menus seem so standardized - you can only cook what you can find
@@SadieMccollough-mf3jl Exactly and the dishes they do have don't use fresh ingredients like bamboo shoots and coconut milk, that's why i would like to go to Thailand some day to eat real Thai food.
It's a shame. Even in the PNW everything on every menu is the same. Same for Mexican food, Thai, Vietnamese, everything is the same in every restaurant.

Visited Chiang Rai few years ago for our TV show, too, and their dishes are really the culinary treasure hunt I never knew I needed. You won't see them coming, but your taste buds will definitely feel the kick!

nam ngiaw is the best thing ever. im half thai myself. Every two years I will always visit my grandparents with my mom in the chiang rai maesai ban dai district. northern thai is a different vibe compared to the rest of thailand.
