This was such a good recipe! A couple of changes I recommend - for softer, smooth bread I recommend sifting in spelt flour rather than all purpose. Otherwise, this is my favorite

I'm going to try incorporating either the aquafaba or the vegan buttermilk into my classic banana bread next time to see specifically how it changes the recipe.

I just learned of this ingredient "aquafaba" from your video. I had to play it over and over again to hear what you were saying! Whoa! What a discovery on the use of chickpea water. Can any can of bean's water be considered "aquafaba"? We don't always have cans of chickpeas but we have cans of other beans, such as fava beans and black beans. Would they also work?
I made this yesterday and this is now going to be the only way I make banana bread. I used aquafaba from beans, and it works just as well. Even my partner said it was delicious and happily ate it for dinner.
I swapped out the sugar with date syrup (just whizz up some dates with a little water) and if you want to avoid the oil use apple sauce. Works out just as well imo.
I'm going to try making the recipe with flax as my daughter is allergic to chickpeas but i wanted to ask, can you make aquafaba with any other 'bean juice' instead?
Hi Lee, I find chickpea liquid works the best in baking, but you could definitely white bean liquid for this recipe. Or many readers have used flax eggs (I mention how to substitute with those in the blog post).

Also if anyone wondering what to do with those chickpeas, You can make namkeens(salty snacks,there is whole paradise of salty snacks even sweets) Chole(chickpea curry)
When you use the chickpea water for a recipe like that, you then have to have a recipe in mind to use for the actual chickpeas. I've tried them and I know they can be okay/good if made well but I personally don't eat them much and haven't cooked with them at all so I'm nervous. Edit: just watched your recent video talking all about chickpeas, plan to try some of that stuff out asap. :)
Omg chickpeas are great! Try hummus for starters. I like Indian chickpeas using tomato paste as that’s what I grew up with and a lot of western recipes have the chickpeas being kinda “naked/undressed” which makes them boring (eg. when ppl just throw them plain on a salad). I hope you find a yummy recipe!
How do you store the bread? I've made it twice and both times its become gooey the next day? Not lite and fluffy. But its perfect out of the oven... I usually cover it and put it in the fridge. Any ideas?
