Authentic dan dan noodles actually use a sesame/peanut mixture called "erba jiang" which is an 80/20 ratio of peanut to sesame paste, so peanut butter is totally acceptable! Either way, love these noodles so much and very cool to see Chinese dishes getting more popular!

This dish was so good and my kids ate it all up! I couldn't find all the ingredients but I made do. I couldn't find the fermented mustard green so I used capers and I couldn't find the garlic bean sauce so I made that with some dried mushroom half a can of beans, three cloves of garlic, balsamic vinegar and soy sauce plus vegan oyster sauce. I don't know what I was missing.... I appreciate your work and suggestions. It made for a happy happy dinner for my little ones.
I discovered DanDan Noodles many years ago in preinternet times in an older coffee table-sized Chinese cuisine and culture book and tried it several times. They were described as "pole noodles", a street food where a traveling vendor would have his pots, etc. on a pole and he would stop and make the noodles for customers. I would ask others (fellow cooks and even chinese take-out places) and no one seemed to know about them, NOW in internet times it is amazing to see so many different interpretations of DanDan noodles. The Food Ranger has a nice video where he is in Chengdu, Sichuan Province trying different Dandan noodles at street stalls. Sichuan peppercorns have a numbing effect like cloves.
You ladies are the perfect combo. I enjoyed every minute watching you. I laughed so hard because both of you always show the bloopers at the end of your videos. Love it❤

So much fun! Entirely off-topic, I loved their sound equipment because it significantly reduced the high-pitched sibilance I normally hear in the videos.
We had a blast! We recently added a new audio software to our editing flow. If you have a moment, take a look at our most recent video and let me know if you pick up on the sibilance. It's a fine balance--if we dial the sibilance back too much, it sounds like I'm speaking with a lisp.
