Honestly, I remember scrolling on Tumblr 3,5 years ago, only searching for curries. My dad has Indonesian roots + our family wasn't a big meat-eating family anyways. So I remember calling him up and asking him to make curry that night, because I was craving it so much. He admitted he was craving curry too, so we high-fived through the phone and ate curry that night. WHAT a usesless comment, but I needed to share
I love curries but I'm allergic to coconut. So if anyone else is allergic to it or just doesn't like coconut, I make curry using a combination of plain yogurt (almond, soy etc) Greek style if I can find it but either works. Then a splash of milk (unsweetened plain almond, soy, rice etc). Works great.
Hey, so there's a common mistake a lot of people in the west seem to make so thought I'd clear it up. Lentil daal is kind of a redundant phrase because daal is the Urdu/Hindi word for lentils so you're essentially saying lentil lentils. Same for naan bread (naan is a type of bread so it's just called naan) and another frequently used one - chai tea (chai means tea). Great video besides that.
Yeah I already knew this! Just a common thing people say over here, I think because it clarifies for people who speak English what it is you're referring to. So lentil dahl - if you just said dahl the general public (my audience) wouldn't necessarily know what I was referring to!
@Madeleine Olivia Hmm, I get that, but at the same time I feel like it's important for white audiences to be more knowledgable about non-Western cultures - we know so much about the West but the same is never done for us by really learning about our cultures outside of Western narratives about our cultures. So for example, if your audience wouldn't understand, you could always say 'daal, which is an Indian dish made of lentils' instead of 'lentil daal'. I know it may sound like I'm nitpicking but there's so much ignorance about and even disrespect of non-Western cultures and narratives that extends even to simple things like food, and that's why it ends up being very frustrating, so it would be nice if there was more of an effort by white people to make the effort to learn about things. Did you know that when the British colonised India, they couldn't be bothered to learn about the different kinds of foods there so they called all Indian food "curry" (I still have no idea myself what curry is, being South Asian and never having eaten anything called curry here), and they didn't make an effort to understand the diverse religious communities either so they banded them all together under the banner of "Hinduism", which wasn't a thing before they came. These small things affect the things we know and study and that's why I wish there was more awareness about them. It's cool that you already knew about the daal thing, but I do wish audiences did too! On a side note, have you ever read Orientalism by Edward Said? It's got very interesting perspectives related to this.

I love all of these recipes! I made a sweet potato/chickpea curry with spinach, last night. Mine turned out soupy, but I served the veggies with a slotted spoon and let the others add as much broth as they liked. Curry is a real comfort food when the weather turns cold and snowy.
@@ohleander02 Actually, the curry "broth" wasn't a problem. I ate/drank it as Soup, today and still had plenty for the actual curry...I did use a cornstarch slurry, so the rice could soak up the curry better. Thanks for the tip.
If you don’t like/have coconut milk or cream or maybe have diabetes, you can substitute it with tahini. Per tin of coconut milk/cream, I put about 1/4 cup (or a 2-4 spoonfuls, I don’t measure it) and then add water until it’s the consistency I like. It also bumps up the calcium and iron count and reduces the fat content significantly. Also makes for a lighter curry. Also Mads I love the “curry daks”: your Thailand tourist elephant trousers are the perfect curry-making attire!

I made the cauliflower one yesterday, it was delicious! I only had red lentils, but they worked fine. I also added some chopped almonds and cashews, and I'd definitely recommend that, that little bit of crunch really makes it extra good.

Your videos make me so happy to watch. Not only is the editing and sound really relaxing, but seeing proper techniques applied warms this chef's heart. I've seen so many vegan videos where the food is overcooked, looks bland or just is so thrown together, I know things won't come out properly. Yours have the love and care taken into them by someone who knows what they are doing in the kitchen.
I can't eat onion or garlic, so I appreciate that you use fresh ingredients in these recipes instead of just using curry paste. (I have to avoid curry powder as well, but 3 out of 4 recipes that I could easily modify is a treasure!)
I absolutely love this video and enjoyed watching it very much thank you! Can I suggest trying a similar video but either without the music or with the music more in the background because I loved hearing the sounds of the cooking and it was so pleasing but I found the music to be a little bit in the way of that! Normally the music wouldn't bother me but the video quality was so exceptional that I feel like the music wasn't necessary :-) I just love to see something similar and enjoy the natural sounds... Curry's are one of my favorite foods. I make them quite often, and while I can't say they're particularly authentic, they are delicious. One of the biggest problems I have with more authentic curries is that I can't handle a lot of heat. I love the flavours so I try to eat them anyways though haha!
Absolutely going to try all of these (except no mushrooms, can't eat them) but everything looks so delicious. Curries are my favourite food as well! I love especially thick ones (is it the word to use? like not runny ones, but more like that can be almost eaten with a fork :D ) and curries that have a lot of turmeric in them.
I've just finished my first ever lentil cauliflower curry and it was absolutely delicious! Very easy recipe very much worth trying :) I will proudly take it with me to work tomorrow. I'm looking forward to trying more recipies of yours

I make a really lazy and non-spicy curry that I love - and is a big favorite in my family. I just do what I would do if I were making vegetable soup (cook a bunch of veggies - whatever I have on hand - and broth with either a can of crushed tomatoes or a can of tomato soup depending on what I have on hand, and seasonings - salt, pepper, garlic, onion powder, herbs - parsley usually) except I cut the broth/water-and-bouillon by half or more so that it's only enough to just cover the veg. And I make sure that there's a steady amount of liquid until the veggies are cooked through. Then I let the liquid cook out a bit and reduce until it's stew-like. Then I add a little bit of plain vegan yogurt, half a can of coconut cream or milk (or almond milk if I don't have coconut milk) and I keep adding a little bit of curry powder and garam masal at a time until it tastes the way I think it should. I let it simmer for a few minutes to let those flavors bloom and done! It's easy, I can just put everything in a pot and walk away and only have to check on it every ten minutes or so until I have to add the creams and spices. And it goes so quickly each time I make it! I serve it with some steamed rice and by the end of the night, it's completely gone. I've not had leftovers once! ...which is a little disappointing. It would be nice to have some leftovers for an easy and filling lunch the next day.

Only just having moved out of home, I’ve found that making curry is a very cheap, filling, and nutritious dinner. Butter chicken was one of my favourite dishes and now, seeing as meat is expensive and such, vegetarian curry is still amazing. Canned coconut milk is so cheap, and if you invest in some spices you can cook about anything you want with a bunch of flavour
Is there a way to substitute coconut milk in curries? Because where I live it is very expensive but I LOVE curries :) So it would be great if there is a cheap alternetive ;)
A great tool for curries is a pressure cooker: saves you putting anything in the oven and also reduces cooking time while retaining the “cooked-for-hours” flavours.
I've tried curry a couple of times and didn't like it very much. I believe and tell myself it's because I am not familiar with the taste of curry. But i'm determined to give it more tries and oh man these recipes look so delicious! As always love the vibe of your videos

Cant speak for Madeline but these are the really common veg to get in takeaway dishes. And brocolli is really cheap in the uk so a great way to stretch a meal and add colour

I think curry paste would be better for more traditional thai curries (Green, Red etc) because those curry paste's often include fresh herb ingredients like galangal and lemon grass

Oatly has an amazing oat-cream you could use aswell! It comes in a light brown package and is located at the soya milk in most supermarkets :)

If you feel like it's soupy you can always thicken with adding a cornstarch slurry and then bring it to boil. :)

I think curry paste would be better for more traditional thai curries (Green, Red etc) because those curry paste's often include fresh herb ingredients like galangal and lemon grass
