It wont be an exaggeration if I say that India is the master of vegetarian recipes, and being a vegetarian I must say the combinations you use in your dishes are very innovative. I thought that kind of dishes we make here cannot have a better version, but I am amazed to see your version and now I want to try it. I've been vegan for 4 years but I'm still in recovery from an eating disorder so I have major issues eating well and cooking & end up just having the most boring simple food ever. You can just cook a big batch of the apple and pear porridge topping and warm it up during the week as desired. I do this with all my oatmeal toppings, then you can also add it to cold yoghurt, into overnight oats, etc.

having lived in the US for 20 years i am used to the huge variety of winter squash. Any winter squash is easiest to roast or cook in the instant pot with skin on first and then scoop out flesh. I grow kabocha, delicata squash and butternut . Roasted with garlic and chilies and then scoop out flesh and add to stews, much heartier flavor. Easier than peeling.!!
I would never have imagined chickpeas and aubergines in one dish! Separately they make two of my favourite curries (chole and bharta) but this is amazing!! Thank you Madeleine!

Great video Madeleine! Try creamy cauliflower blended soup with almond flakes above or broccoli soup with hazel.. Also is a great idea pasta with broccoli pesto and some grilled mushrooms. I recommended these recipes because I love the way you cook.

Just thought I'd share that I made the curry this evening. I've only ever had aubergine a handful of times, and I've never really liked it. Originally I bought broccoli to use instead, then earlier today I crossed my fingers and bought an aubergine as well. Result: it was my first enjoyable experience with aubergine. I still used the broccoli, and it was lovely
These all look delicious, and very adaptable! If you want to save yourself a bit of effort, you can just half/ quarter the pumpkin and bake it for an extra 10 mins - the seeds come out really easily once baked, as does the flesh. I do this for butternut squash pretty regularly.
So I tried the spiced sweet potato soup tonight and yum! At first it was a bit too runny so I quickly cooked another sweet potato and added it to the soup, blended it and the consistency was perfect. My partner doesn't like carrots and said he didn't want any. But then he tried it and loved it! I have enough soup for lunch tomorrow, I can't wait. I definitely recommend this recipe. I will be trying the other ones too! :)
I love your videos so much! So relaxing and makes me want to eat healthier. A little piece of advice for when you slide the ingredients off the cutting board with your knife: use the back of the blade to slide them off, not the part you chop with, or the blade will get dull. I didn't know this either until recently.
The darker orange squash you have is a Hokaido and they're super popular here in Germany! I bought some frozen diced chunks of it and it still had the skin on it. I surmised that you can eat the peal. I chucked them into a curry and it was super tasty and I didn't even notice the peel. I also love Delicata squash (en.wikipedia.org/wiki/Delicata_squash) because you can eat it peel and all. It's so good sliced baked with a little drizzle of olive oil, a sprinkle of curry powder, cinnamon, and smoked paprika.

You may be already doing this but I highly reccomend saving the pumpkin seeds with some of the pumpking left on it, spread it out on a banking tray, add some spices and a little oil and put them in the oven for a wonderful autumnal snack. Add seasalt and black pepper after baking :) zero waste and sooo delicious!

In my spice tray I have cumin, garam masala, cinnamon, paprika, chilli and turmeric. You can do everything with these!

Just a small tip on the side: if you own a microwave, try microwaving the whole squash for 3 minutes. It’s still raw but really easy to peel!

you can microwave the pumpkin for 30 seconds (prick it with a fork first) and it will peel much easier :)

Try the green medium sized pumpkins they taste amazing and no need to peel them. I steam half and roast the other half with crispy sage
