I have used curry in literally almost all of my cooking for the last 12 years and am a bit used to the smell and slightly yellowed items here or there by now 😅🤣
My parents both love to cook foods from various countries orgin and in my childhood days therefore our apartmemt (and obvioulsy also my clothes) also smelled like spices - I remembered now when you mentioned it, this was noticed by my childhood friends as well.
Now as an adult I am living in a country where we have big shops only for spices and it is like paradise for me I feel like a happy kid when I enter these shops 😊 & I am so happy I grow up with a love for cooking and trying out new recipes❤
I still have some american friends who say things like “oh that spices shit smells a lot” or if i enter the room “you smell like curry, did you have dinner”
@@RainbowPlantLife I also have thoughts about this "I wish I would have said that when I was a kid", but I did it once: I live in Finland and we have snow and frost always in the winter. My mother always sent me walking to school and in the cold I had to wear a beanie. I didn't take it off until I got into school. Once on the other side of the road was a guy known as "tough" who shouted across the road to me: "Does your head freeze when you wear a beanie!" I told him, "Actually NO - because I'm wearing a beanie!" He never came back to it. And I was satisfied that I told him according to the facts of physics LOL

Finally somebody mentioned warming up the stainless steel pan dry! When I first started using stainless steel THIS WAS THE TIP that kept me persevering because caramelisation = flavour
For the longest time I was like “I just can’t use a stainless steel pan, it sticks too much.” Learning this was a game changer!
I have never heard about warming up a stainless steel pan before. Great tip!!

I’m a student with a tiny tiny kitchen so I just wanted to say I really appreciate delicious meals like this that are relatively easy to make in a small kitchen with limited ingredients! And it was also surprisingly fast to make so it fits in my schedule! Thank You!
This was a beautiful experience watching you make that precious curry! Oh yes, I would use an entire heaped teaspoon of coconut sugar. You will never taste the sugar but it just balances out all the flavours and brings them together.
I am a student who isn't allowed to have cooking setup at my place. But not being in a position to cook doesn't deter me from watching these amazing cooking videos just for how satisfying it is.

WINNER!!! This is just dynamite. Even though I’ve made it now 5 times in the past month, I have to return to comment how divine this is. If you’re an experienced cook of Indian cuisine you know how perfect the symmetry of the flavours are here. Once I also added some kasturi methi leaves (dried fenugreek), very nice!
I was making similar stuff, but with red lentils. When paired with rice it creates a wonderful dynamic of very flavorful, spicy stew and somewhat bland rice that helps cooling the tongue if the dish is too hot or large amounts of chili are used

I am French but I lived in London for a while and some of my favorite food was Indian. Even the Indian take away were so good ! I love your recipes and you sell them so nicely. I will definitely try most of them, I love spicy food and those are the kind of meals I love, healthy and tasty.

This is amazing. I have cooked various Indian dishes for 40+ years, but this is a blast of flavor and freshness that really shines. Since I have chronic kidney disease, I have to leave the salt pretty much out of the recipe, but it doesn't matter, it is terrific as a low sodium meal, and that's hard to find in restaurants or prepared food. I pressure cooked my own chickpeas, and used cherry tomatoes right out of garden. Wonderful!

I just made this today for dinner, and it was aboslutely delicious!
I normally go for the classic Chana Masala with the ready-made spice powder, but this was an interesting take on the classic, especially with the creamy coconut milk. It was a perfect, wholesome and comforting meal on a cold, winter evening. Hubby loved it!

I absolutely LOVEEEEEEEEEEEEEEE the smell of curry! I worked in homecare for a period and I helped a family that made (they were Pakistani) food from scratch EVERY DAY. All vegan. Roti, dal, you name it. It opened my eyes and my taste buds to a world I never knew existed!!!!!! I have to say it is a cuisine like no other. It goes to your soul!

@@yoginc I also cook with a Paki friend and since I'm vegan, he cooks vegan. The only surprise for me was the time the dish needed to be ready. As an Italian, I can cook pasta in no time. It took him 4 hours to prepare Pakistani food but of course it was great.
I ordered whole spices and the curry leaves for this, for the first time. Just made it, it's so good Nisha!!!! I don't think I've ever made a dish with so much flavour depth. Thank you for the extensive recipe with all the notes, that really helps a person like me!

I've finally gotten around to making this today and it was fantastic. I made it an instant pot meal by following the recipe up until the "simmer for 15 - 20 minutes" part and instead of doing that, I turned my instant pot on for zero minutes on low pressure and it was ready in about 5 minutes. It was absolutely delicious. I'm going to make it again next week and double the recipe so that I've got some saved in my freezer to just defrost and eat whenever I want.

I made this by substituting white beans, and pea milk. I also added in Thai chili peppers, and half a habanero for extra spice. It was the first time I had ever had curry, and I fell in love with it. Thank you so much for sharing!

I just made this for meal prep for the week. I just found your channel. You are an absolute joy to watch. I'm so glad you mentioned tinned tomatos. They are awful over here fresh (Aussie tomatos are flavourless) I love that you talk about the layering of Indian cooking. I wouldn't have thought to add mint... will add that to my next dish
this was great! i couldn't get a hold of curry leaves unfortunately but it was still very tasty. it took me roughly an hour from starting to finishing gobbling it up. i used cherry tomatoes cause they tend to taste alright in winter and i used kale, which was tender after around 8-9 minutes. can definitely recommend to use both mint and cilantro cause yum yum that stuff tasty :) thanks for sharing accessible indian inspired vegan cuisine, i've cooked many of your recipes!

Just made this tonight and it came out awesome. It looks kind of complicated but it really isn't and it took me maybe 45 minutes. I've never had this many ingredients in anything I've cooked before and the flavor is fantastic. I especially like how the mint adds to it all. Thanks very, very much!
I did this recipe today and ended up totally pleased with the outcome, it felt right from the beginning and in the end the taste was just what i expected, what a connection 🙃. Although i didn't have curry leaves.

Ever since this one popped up in my feed I have been wanting to try it. Made this late-night, didn't have the chilli or the fresh green. Used homemade masala from previous meals and small cauliflower florets.
It's very similar to a spicy chickpea recipe my wife uses, so she kinda kept me right.
Definitely getting chilli and chard/ kale to make next time.
