1 Elephant Foot Yam ( peeled & cut into Batons)
1 cup Drum Sticks
1 Carrot (cut into Batons)
1 cup Hot Water
Salt (as per taste)
Coconut Paste For Avial
1 cup Coconut (grated)
1 tsp Cumin Seeds
3 Green Chillies
1/2 tsp Turmeric Powder
How To Boil Vegetables For Avial
1 cup Raw Banana ( peeled & cut into Batons)
1/2 cup French Beans (put into Batons)
1 cup Ash Gourd ( peeled & cut into Batons)
1 cup Mangalore cucumber ( peeled & cut into Batons)
Hot Water
How To Make Avial
Salt ( as required)
1 cup Curd (beaten)
2 tbsp Coconut Oil
12-15 Curry Leaves

About Aviyal
Avial (Malayalam: wikt:അവിയല്, pronounced [aʋijal]) is an Indian dish with origins in the Kerala region, although it is equally popular in Tamil Nadu and Udupi. It is a thick mixture of 13 vegetables commonly found in the western ghats and coconut, seasoned with coconut oil and curry leaves. Avial is considered an essential part of the Main meal (Oonu in Malayalam).
Central Travancore has a slightly different variety of avial with its thin gravy whereas the classical avial is thick.
Generally, only crisp vegetables are used in avial. Vegetables commonly used in avial are elephant foot yam, plantain, ash pumpkin, carrots, beans, egg plants, cucumber, drum stick pods, snake gourd and Broad Bean, etc. are the recent introduction, while the north Kerala Avial includes bitter gourd also and in the Kollam region of Kerala tomato is added among other vegetables. Some people prefer to skip curd or substitute it with raw mango or tamarind pulp. This dish can be made into a gravy or be made into a semi-solid side dish. It is generally eaten with rice. The word "avial" is also used to denote 'boiled' or 'cooked in water' - this sense being derived from the way the dish is made. |

we make several times Aviyal in TN style, where turmeric would not be a part, rest all your receipie is same... drumstick, long beans (thattakai), avarakai, snake guard, suran, white pumpkin, red pumpkin, green banana, beans, carrot, raw mango, chow chow.... normally aviyal is a receipe with minimum 7 and max 11 vegetables and mostly potato or cauliflower also people do ask for doubts but it would not be used... karanataka style aviyal would be with red chillies instead of green one... and in kerala mixing of curd woudl be lesser in TN mixing of curd would me more

No. Not capsicum.
Actually I am not sure about name ,may be big chilli. It is light green in colour and not very spicy.
Chilies called jalapeno or you can say chillies that are used when making chili pakoda
I'm from udupi.. Avial is a staple dish for us too.. There's one more version we follow.. We add byadagi chillies, cumin seeds, and tamarind instead of curds.. Try it tastes yumm
We coarsely grind the coconut and also add shallots while grinding.
Also, we use tamarind instead of curd.

I made my Avial with 13 vegetables including carrots, Green Mango, potatoes, capsicum, beans, peas, pumpkin, kaccha tomatoes (red), bitter gourd, bottle gourd, Yam, egg plant … I live in states and don’t get good drumsticks so did not use it
I watch all your receipes and try everything.. My favourite is Garlic chicken.. Am a keralite i recommend everyone to try these receipe its really tasty, if your kid is a vegetable hater this is the recipe
Hii brother🙏....we make avial once in a week as it's like a one pot meal..very healthy and anyone can have it for weight loss as well as with health issues ...goes well with rice, curd and pickle ...boil yam and raw banana in a little water first, then add cucumber, cluster beans, white brinjal, snake guard, drumstick, curry leaves etc ...can add tamarind paste or tomatoes or raw mangoes etc according to ur taste..then add coconut paste, mix and switch off the flame. If planning to add curd then at the last only ..dont allow curd to curdle... finally add coconut oil and curry leaves ..yum yum avial is ready 🥰

I use all 6 rooted veggies.
Carrot beans tindora, red pumpkin, white pumpkin, green plantain. I do add ginger slices and cook it with banana leaf

Can anyone tell me what kind of utensil is used in this video. I liked it and want to buy one.
Your recipe for avial is terrific. However one absolutely vital ingredient you have ignored....that is whole black pepper corns...at least a teaspoon full. Pepper is a defining taste in avial....very vital. Also coconut oil is to be added...just a dash for that authentic kerala flavour.

I Just had a query, why are curry leaves not tempered in hot oil but added straight to the curry?
For aviyal . We add curry leaves this way .. no seasoning.

I make exactly the same. But i add tadka over it in last. We generally eat with steamed rice. I add tindli & papdi too.

You missed the bringle, tomato, Madras onions, lady finger ...... You can add any number of veggies except leaf veggies.

I would say take your pick from the 13 and make do. Probably should have yam, brinjal, drumstick, carrot, some sort of gourd (pumpkin, bottle gourd, etc.), and broad beans. That is six. I would drop drumstick if trying to keep it to five, and drumstick is not always easy to get in USA. If easy to find where you are, then by all means use it.

Consistency not watery,it's has be dry .vegetables cook with less water.make sure that coconut mix grind without or least amount of water not paste .

@@rajshrifood I don't think I have seen it in UK, although I am not a vegetarian, but I love all your dishes, I make some of them often, hubby loves his vegetables, so I need to make often. I will try this n Sunday, I dont know about 13 vegetables, but thanks for the list in the description, we have some pumpkins and other autumn vegetables that have started to arrive, i will eat it as a thick soup, hubby I know will want it either with chapati r boiled rice. Just avoid grinding coconut into a fine paste...just roughen it up
Yam, Drumstick, carrot first layer, cook 3/4th
Add Raw Banana, mix well..allow to cook for few minutes.
Raw Mango and yellow or red pumpkin to be added..
Then add beans, white pumpkin, mangalore cucumber
Finally grated fresh coconut, chilly, jeera, turmeric powder grinded coarsely not paste.. add, just a minute let it boil..
switch off, add a tsp of fresh coconut oil, and curry leaf.. and pepper..
